本发明一种橘子凤爪经过焯水、加入材料搅拌、冷藏而成,其由下列重量份的原料制成:凤爪250~350份,橘子50~100份,盐2~3份,姜1~2份,八角2~3份,花椒3~5份,白糖10~18份,青椒2~5份,料酒适量,芝麻油适量。本发明由于原料中添加橘子,使凤爪酸甜适口,别有一番风味,且橘子含有维生素、苹果酸、柠檬酸、蛋白质、脂肪、食物纤维以及多种矿物质等,有益于人的健康。

本发明涉及食品的制作方法,尤指一种橘子凤爪及其制作方法。

凤爪是一种营养丰富的食品,凤爪中含有丰富的胶原蛋白,凤爪的食用方法较多,但是一般的凤爪有这样的缺点,就是一般的凤爪食用起来口感不够丰富,味道不够香甜。
【发明内容】
本发明的目的在于提供一种橘子凤爪及其制作方法,添加橘子,使凤爪酸甜适口,别有一番风味,且橘子含有维生素、苹果酸、柠檬酸、蛋白质、脂肪、食物纤维以及多种矿物质等,有益于人的健康。
本发明一种橘子凤爪及其制作方法采用如下技术方案:
一种橘子凤爪的制作方法,其特征在于:具体步骤如下:
步骤1:取下列重量份原料:凤爪250~350份,橘子50~100份,盐2~3份,姜1~2份,八角2~3份,花椒3~5份,白糖10~18份,青椒2~5份,料酒适量,芝麻油适量;
步骤2:将青椒、姜切成丝,花椒和部分姜丝用开水泡发,待用;
步骤3:将凤爪洗干净去指甲,冷水入锅焯水;
步骤4:焯好的凤爪立即用冷水冲洗,再用刀将凤爪剁开;
步骤5:另起锅,加入适量水,放入凤爪、适量盐、八角、料酒和余下的姜丝、,大火烧开后,转中火煮6~8分钟,然后捞起凤爪放入冰水中冰镇至凉;
步骤6:将橘子分成2等份,1份掰成片,另1份挤成橘子汁;
步骤7:准备干净的容器,放入冰好的凤爪,再将青椒丝、花椒连同水及姜丝一起倒入去,并加入白糖、适量盐、橘子汁,铺上橘子片;
步骤8:加入芝麻油一起搅拌均匀,盖上盖子放入冰箱中冷藏。
