本发明主要涉及食品领域,尤其涉及一种板栗虾瓜蒌籽饼及其制备方法。
背景技术
瓜蒌籽含不饱和脂肪酸16.8%,蛋白质5.46%,并含17种氨基酸,三贴皂甙,多种维生素以及钙、铁、锌、硒等16种微量元素。尤其是维生素E含量丰富(100克瓜蒌籽含维生素E 249毫克),可以营养皮肤,消除皱纹,调理肌体,延缓衰老。食用瓜蒌籽,还能扩张心脏冠脉,增加冠脉流量作用。市场常见的大多是炒制带壳葵瓜子,虽味道独特,但是常嗑食瓜子会损伤牙釉质及味觉迟钝,单独食用瓜子仁又缺乏干脆口感,本发明以瓜蒌籽仁粉为原料,添加其他成分,营养丰富且方便食用,适应市场需求。

本发明目的就是提供一种板栗虾瓜蒌籽饼及其制备方法。
本发明是通过以下技术方案实现的:
一种板栗虾瓜蒌籽饼,其特征在于由下列重量份的原料制成:
面粉200-300、石榴皮1-3、玉米须4-5、桑叶3-4、菊花叶2-3、鬼针草3-4、玫瑰果10-15、虾籽15-25、藕20-30、菠萝25-30、大米20-30、板栗仁20-30、仙人掌5-10、羊奶10-20、营养瓜蒌籽粉20-30、奶酪、蜂蜜、淀粉、葡萄籽油、盐适量,
所述营养瓜蒌籽粉由下列重量份原料制成:
菠萝叶1-2、枣花1-2、枸杞叶2-3、瓜蒌子仁20-30、鲜小黄鱼0.5-1、葡萄干2-3、香菇3-5、去皮西瓜2-3、话梅肉2-3、奶粉2-4;
制备方法为:(1)将菠萝叶、枣花、枸杞叶混合,加10-15倍水中火煎煮20-30分钟,过滤除渣,得滤液;
(2)将奶粉加10-12倍水煮沸,加入去皮西瓜、话梅肉打浆,加入鲜小黄鱼,加盖,文火焖煮10-15分钟,捞出小黄鱼,加入香菇、葡萄干,研磨均质,
(3)将步骤(1)和(2)处理好的物料混合,搅拌均匀后加入剩余各原料,60-70℃下保温搅拌40-50分钟,出料,烘干,研碎成粉,即得。
2、一种如权利要求1所述的板栗虾瓜蒌籽饼的制备方法,其特征在于包括以下步骤:
(1)将石榴皮、玉米须、桑叶、菊花叶、鬼针草用3-5倍水,文火熬煮得滤液;
(2)将藕、菠萝、玫瑰果洗净切块一起磨浆,得果蔬汁;将食用仙人掌去刺去皮洗净后,与羊奶一起磨浆,得到仙人掌奶浆;
(3)将大米加2-3倍水浸泡10-15分钟,过滤得米汤备用;将板栗仁用葡萄籽油翻炒1-2分钟,加米汤与虾籽一起研磨匀质,然后加入奶酪、果蔬汁、仙人掌奶浆,小火熬稠;
(4)将步骤(3)所得物料与蜂蜜、淀粉、葡萄籽油、盐与面粉以及剩余原料混合搅拌均匀,然后用适量的步骤(1)所得滤液将面粉和成面团;
(5)将面团用模型刻出后,营养瓜蒌籽粉均匀撒到面团表面,再经过压平、倒油煎炸、喷油工序,即为成品。

面粉300、石榴皮1、玉米须4、桑叶4、菊花叶2、鬼针草3-、玫瑰果15、虾籽25、藕30、菠萝30、大米30、板栗仁30、仙人掌10、羊奶20、营养瓜蒌籽粉20、奶酪、蜂蜜、淀粉、葡萄籽油、盐适量,
所述营养瓜蒌籽粉由下列重量份原料制成:
菠萝叶2、枣花2、枸杞叶2、瓜蒌子仁30、鲜小黄鱼0.5、葡萄干2-3、香菇3、去皮西瓜3、话梅肉2、奶粉2;
制备方法为:(1)将菠萝叶、枣花、枸杞叶混合,加15倍水中火煎煮20-30分钟,过滤除渣,得滤液;
(2)将奶粉加12倍水煮沸,加入去皮西瓜、话梅肉打浆,加入鲜小黄鱼,加盖,文火焖煮15分钟,捞出小黄鱼,加入香菇、葡萄干,研磨均质,
(3)将步骤(1)和(2)处理好的物料混合,搅拌均匀后加入剩余各原料,60℃下保温搅拌50分钟,出料,烘干,研碎成粉,即得。
一种板栗虾瓜蒌籽饼的制备方法,包括以下步骤:
(1)将石榴皮、玉米须、桑叶、菊花叶、鬼针草用5倍水,文火熬煮得滤液;
(2)将藕、菠萝、玫瑰果洗净切块一起磨浆,得果蔬汁;将食用仙人掌去刺去皮洗净后,与羊奶一起磨浆,得到仙人掌奶浆;
(3)将大米加2倍水浸泡15分钟,过滤得米汤备用;将板栗仁用葡萄籽油翻炒2分钟,加米汤与虾籽一起研磨匀质,然后加入奶酪、果蔬汁、仙人掌奶浆,小火熬稠;
(4)将步骤(3)所得物料与蜂蜜、淀粉、葡萄籽油、盐与面粉以及剩余原料混合搅拌均匀,然后用适量的步骤(1)所得滤液将面粉和成面团;
(5)将面团用模型刻出后,营养瓜蒌籽粉均匀撒到面团表面,再经过压平、倒油煎炸、喷油工序,即为成品。
