Abstract
本发明公开了一种供三高人群食用的绞股蓝辣木叶黑豆糕,由以下重量份的原料组成:黑豆170-190、食用明胶粉13-15、阿斯巴甜3-4、橄榄油5-7、绞股蓝8-12、辣木叶10-14、竹炭粉2-4、玉米粉20-30、南瓜粉6-8、苦瓜粉5-7、紫菜粉4-5、葡萄干粉6-7、玄参3-5、牛蒡根4-6、水适量。本发明通过先对黑豆进行炒熟再浸泡磨粉,可以激发黑豆本身的香味,减少营养元素的流失,通过将明胶和黑豆粉混合膨化,食用起来更加爽口,不会有普通粗粮产品粗糙的口感,而且黑豆粉的外侧有明胶的包裹,可以防止黑豆粉中的蛋白质进入胃后因胃酸作用而引起的凝聚作用,有利于食物消化。

本发明属于食品加工领域,具体是一种供三高人群食用的绞股蓝辣木叶黑豆糕及其制备方法。
背景技术
黑豆为豆科植物大豆的黑色种子,是我国传统种植的农作物具有悠久的药用和食用历史,自古以来民间就有用黑大豆补血活血和乌发养颜的记载。据报道黑豆有解毒利尿、明目益精、养血疏风之功效,可治疗阴虚烦热、盗汗、眩晕、头痛、风痹等症。此外黑豆提取物还具有很强的抗氧化活性、抑制诱变、抗炎预防癌症等功效。与其他同类食品相比,黑豆在营养成分的数量与质量上均具有明显的优势,黑豆有“东方黑珍珠”和“植物蛋白之王”之美誉,含有高蛋白、低热量、多种人体所需的氨基酸、不饱和脂肪酸、膳食纤维及微量元素,是一种物美价廉的营养食品。
目前市场上的糕点产品主要为绿豆糕、米糕等,还没有出现一种以黑豆为原料的糕点,而且虽然黑豆的营养价值和保健功效比较好,但是由于其不易烹饪,不被人们所接受。因此开发一种营养丰富、具有保健功能、并且食用方便的的健康黑豆糕,具有广阔的市场前景。
发明内容
为解决上述技术问题,本发明的目的是提供一种供三高人群食用的绞股蓝辣木叶黑豆糕及其制备方法。
为达到上述目的,本发明采用的技术方案如下:
一种供三高人群食用的绞股蓝辣木叶黑豆糕,其特征在于,由以下重量份的原料组成:黑豆170-190、食用明胶粉13-15、阿斯巴甜3-4、橄榄油5-7、绞股蓝8-12、辣木叶10-14、竹炭粉2-4、玉米粉20-30、南瓜粉6-8、苦瓜粉5-7、紫菜粉4-5、葡萄干粉6-7、玄参3-5、牛蒡根4-6、水适量。
一种供三高人群食用的绞股蓝辣木叶黑豆糕的制备方法,其特征在于,包括以下步骤:
(1)选取颗粒饱满、无霉变、无虫蛀的黑豆,将黑豆放入装有铁砂的锅中炒熟,筛净砂粒后使用清水洗净后放入水中浸泡2-3h后晒干,然后碾壳去皮后磨成细粉,得到黑豆粉;
(2)将黑豆粉与食用明胶粉混合均匀后加入适量的水搅拌成糊状,然后放入膨化罐中,调节膨化压力为0.4-0.6MPa、温度20-25℃,30-40min后开启泄压阀,冷却干燥后通过粉碎机粉碎,过60-80目筛,得到明胶黑豆粉;
(3)将绞股蓝、辣木叶、玄参、牛蒡根洗净后脱水干燥,然后放入超微粉碎机中粉碎成80-100目,得到中药粉,备用;
(4)将明胶黑豆粉、中药粉、竹炭粉、玉米粉、南瓜粉、苦瓜粉、紫菜粉、葡萄干粉混合均匀,然后加入阿斯巴甜、橄榄油和适量的水,继续搅拌使物料混合充分;
(5)将调好的黑豆糕原料放入模具,按实后压平,然后将模具放在沸水锅中蒸制15-20min,蒸熟后取出,即得所述供三高人群食用的绞股蓝辣木叶黑豆糕。
本发明的有益效果:

本发明所述的一种供三高人群食用的绞股蓝辣木叶黑豆糕,其特征在于,由以下重量份(kg)的原料组成:黑豆170、食用明胶粉13、阿斯巴甜3、橄榄油5、绞股蓝8、辣木叶10、竹炭粉2、玉米粉20、南瓜粉6、苦瓜粉5、紫菜粉4、葡萄干粉6、玄参3、牛蒡根4、水适量。

1.一种供三高人群食用的绞股蓝辣木叶黑豆糕,其特征在于,由以下重量份的原料组成:黑豆170-190、食用明胶粉13-15、阿斯巴甜3-4、橄榄油5-7、绞股蓝8-12、辣木叶10-14、竹炭粉2-4、玉米粉20-30、南瓜粉6-8、苦瓜粉5-7、紫菜粉4-5、葡萄干粉6-7、玄参3-5、牛蒡根4-6、水适量。
2.根据权利要求1所述的一种供三高人群食用的绞股蓝辣木叶黑豆糕的制备方法,其特征在于,包括以下步骤:
