背景技术
面条是中国传统饮食中的一种,传统挂面是以小麦面粉,食盐为主要原料加工制成,其存在着品种单一、营养单调、花样较少等问题,很难达到人们对营养和健康饮食的需求。
富硒黑小麦是其蛋白质、氨基酸、钙、磷及硒的含量比普通小麦分别高60%、40%、300%、70%和500%,其它微量元素铁、锌、锗的含量也远高于普通小麦,因此是目前世界上难得的高营养优质黑小麦,营养专家称其为“营养麦之王”,“健康麦新秀”。
富硒黑小麦产量虽不及普通小麦高,但营养保健价值非常高。
1.蛋白质含量高,高达20.5%,比对照白小麦高58.91%,在小麦品质优劣衡量的最主要指标中独占鳌头; 2.含钙量高,公斤含钙量为0.56mg,较对照白小麦高3倍,是人们一日三餐“饮食补钙”的新来源; 3.含硒量高,公斤含晒量为0.594mg,较对照白小麦高5倍,补硒可以调节免疫功能和抗氧化功能,硒能提高与改善性功能,帮助有阳痿、早泄、性功能低下的人逐渐回复正常。

一种富硒保健强身面,由下列重量份的原料制成:
石磨富硒黑小麦粉90-100、覆盆子粉3-5、核桃粉3-5、芹菜2-3、秤杆草1-2、菱角茎3-4、洋葱1-2、沙苑子0.3-1、蒲草根0.5-1、杜仲1-2、菠萝1-2、枸杞粉2-3、淫羊藿1-2、槐花蜜0.5-1、精盐1-2,食碱0.2-0.4。
一种富硒黑小麦黄金面的制备方法,包括以下步骤:
(1)将上述淫羊藿、秤杆草、蒲草根、沙苑子、杜仲混合水提3-4次,合并滤液,加入核桃粉、枸杞粉,搅拌均匀;
(2)将芹菜、菱角茎、洋葱混合加水打浆,加入槐花蜜,加热至沸,保持沸腾至水干;
(3)将菠萝绞碎后与覆盆子粉混合搅拌均匀;
(4)将上述处理后的各原料混合,搅拌均匀,得营养液,放入和面机内,加入石磨富硒黑小麦粉,混合搅拌15-20分钟,使之形成面团,所述的营养液与石磨富硒黑小麦粉的质量比为1:1.5-2;
(5)将面团和好后,取出放入熟化机内,熟化机转速为8-10 r/min,保持面团温度20-30℃,静置20-30分钟;
(6)把经过和面、熟化的面料辊轧成二块面带,再通过一组轧辊将其合压成一块面带,连续通过2-3次轧辊,逐步压薄到0.8-1.0毫米厚,切成宽1.8-2.0毫米的面条;

具体实施方式
实施例1
一种富硒保健强身面,它由下列重量份(公斤)的原料制成:
石磨富硒黑小麦粉100、覆盆子粉3、核桃粉5、芹菜2、秤杆草2、菱角茎3、洋葱2、沙苑子0.3、蒲草根0.5、杜仲1、菠萝2、枸杞粉2、淫羊藿2、槐花蜜0.5、精盐1,食碱0.4。
一种富硒黑小麦黄金面的制备方法,包括以下步骤:
(1)将上述淫羊藿、秤杆草、蒲草根、沙苑子、杜仲混合水提3-4次,合并滤液,加入核桃粉、枸杞粉,搅拌均匀;
(2)将芹菜、菱角茎、洋葱混合加水打浆,加入槐花蜜,加热至沸,保持沸腾至水干;
(3)将菠萝绞碎后与覆盆子粉混合搅拌均匀;
(4)将上述处理后的各原料混合,搅拌均匀,得营养液,放入和面机内,加入石磨富硒黑小麦粉,混合搅拌20分钟,使之形成面团,所述的营养液与石磨富硒黑小麦粉的质量比为1:1.5;
(5)将面团和好后,取出放入熟化机内,熟化机转速为8-10 r/min,保持面团温度20-30℃,静置20-30分钟;
(6)把经过和面、熟化的面料辊轧成二块面带,再通过一组轧辊将其合压成一块面带,连续通过2-3次轧辊,逐步压薄到0.8-1.0毫米厚,切成宽1.8-2.0毫米的面条;
(7)采用多排隧道式烘干后切成长200-220毫米的面条,烘干切断后,凉至室温包装即可。
本实施例制备出来的黑小麦黄金面不整齐度为2.4%,自然断条率为2.55%,熟断条率为5%,呈色淡紫色,有香味浓郁,风味独特,蛋白质含量优于普通挂面,具有营养和食疗功能。
Claims (2)
1.一种富硒保健强身面,其特征在于,它由下列重量份的原料制成:
石磨富硒黑小麦粉90-100、覆盆子粉3-5、核桃粉3-5、芹菜2-3、秤杆草1-2、菱角茎3-4、洋葱1-2、沙苑子0.3-1、蒲草根0.5-1、杜仲1-2、菠萝1-2、枸杞粉2-3、淫羊藿1-2、槐花蜜0.5-1、精盐1-2,食碱0.2-0.4。
2.一种如权利所述的富硒黑小麦黄金面的制备方法,其特征在于,包括以下步骤:
(1)将上述淫羊藿、秤杆草、蒲草根、沙苑子、杜仲混合水提3-4次,合并滤液,加入核桃粉、枸杞粉,搅拌均匀;
(2)将芹菜、菱角茎、洋葱混合加水打浆,加入槐花蜜,加热至沸,保持沸腾至水干;
