Abstract
一种香甜保健虾饼及其制备方法,其特征在于由下列重量份的原料制成:虾仁120-130、淫羊藿2-3、白茅根1-2、罗汉果3-4、岗梅根2-3、吐烟花1-2、五味草1-2、罗汉果叶3-4、生菜2-3、蓝莓5-6、海带13-15、鹌鹑蛋10-11、香油2-3、色拉酱1-2、马蹄粉18-20、生姜7-8、红糖5-6、排骨汤12-13、营养添加剂7-8。本发明的虾饼口感好,香甜可口,营养丰富,其中添加的红糖含维生素和微量元素等营养成分,而马蹄粉中含丰富的维生素、植物蛋白、磷质,具有抗癌抗菌的功效,此外,本发明还含有多种中草药成分,经常食用可达到清肺补肾、清热解毒、清肝明目的功效。

本发明属于食品加工技术领域,涉及一种虾饼,尤其涉及一种香甜保健虾饼及其制备方法。
背景技术
虾饼是由生虾肉制成,因其营养丰富,且味道鲜美而广受消费者喜爱。目前市场上销售的虾饼口味单一,且多不具有保健功能,已不能满足消费者日益增长的需求。
发明内容
本发明的目的是提供一种香甜保健虾饼及其制备方法,本发明具有口感好,营养健康的特点。
本发明所采用的技术方案是:
一种香甜保健虾饼,其特征在于由下列重量份的原料制成:
虾仁120-130、淫羊藿2-3、白茅根1-2、罗汉果3-4、岗梅根2-3、吐烟花1-2、五味草1-2、罗汉果叶3-4、生菜2-3、蓝莓5-6、海带13-15、鹌鹑蛋10-11、香油2-3、色拉酱1-2、马蹄粉18-20、生姜7-8、红糖5-6、排骨汤12-13、营养添加剂7-8;
所述营养添加剂由下列重量份的原料制成:金银花1-2、当归1.3-1.4、桑椹子0.8-1、三七花1.1-1.4、牛奶12-14、虾皮25-27、龙眼肉2-3、菠菜2-3、莲子35-40;
制备方法为:(1)将金银花、当归、桑椹子、三七花加牛奶大火煮沸,过滤除渣,得保健奶;
(2)将龙眼肉、菠菜加一倍的水打浆,过滤除渣,得果蔬汁;将虾皮与果蔬汁混合拌匀,隔水大火蒸15-20分钟,然后将虾皮取出,烘干后粉碎;
(3)将莲子入锅,小火炒香后加入保健奶,在65-70℃下焖制20-25分钟,然后将莲子取出,烘干后研成粉末,与步骤(2)所得物料混合拌匀,即得。
所述的香甜保健虾饼的制备方法,其特征在于包括以下步骤:
(1)将淫羊藿、白茅根、罗汉果、岗梅根、吐烟花、五味草、罗汉果叶加5-6倍的水文火煎煮40-50分钟,过滤除渣,得药液;
(2)将生姜加药液打浆,过滤除渣,在所得滤液中加入红糖,充分搅拌,得保健姜糖水;
(3)取蓝莓果肉,与生菜混合打浆,过滤除渣,所得滤液与海带混合拌匀,烘干后粉碎;
(4)将鹌鹑蛋送入锅中,加水大火煮熟后出锅,取蛋黄打成泥,加入色拉酱拌匀,在60-70℃下焖制10-12分钟;
(5)在锅中倒入香油,大火加热30-40秒后倒入马蹄粉,小火翻炒15-20分钟后出锅;
(6)将虾仁加保健姜糖水腌渍2-3小时后取出打成泥,然后与步骤(3)、(4)、(5)所得物料及剩余物料混合,顺单方向搅拌10-15分钟后挤成直径为4-4.5cm的虾球,压成饼状,送入烤箱烤制5-6分钟,即得。
本发明中的吐烟花为荨麻科植物吐烟花的全草,五味草为罂粟科植物五味草的全草。
本发明的有益效果为:
本发明的虾饼口感好,由于添加了红糖与香油,使得本发明香甜可口,其中红糖的营养丰富,含维生素和微量元素等营养成分,同时本发明添加的马蹄粉中含丰富的维生素、植物蛋白、磷质,具有抗癌抗菌的功效,此外,本发明还含有多种中草药成分,经常食用可达到清肺补肾、清热解毒、清肝明目的功效。
具体实施方式
一种香甜保健虾饼,其特征在于由下列重量份(公斤)的原料制成:
虾仁120、淫羊藿3、白茅根2、罗汉果4、岗梅根2、吐烟花2、五味草1、罗汉果叶3、生菜3、蓝莓5、海带15、鹌鹑蛋11、香油3、色拉酱2、马蹄粉18、生姜8、红糖6、排骨汤12、营养添加剂8;
所述营养添加剂由下列重量份(公斤)的原料制成:金银花2、当归1.4、桑椹子0.8、三七花1.4、牛奶14、虾皮27、龙眼肉2、菠菜3、莲子35;
制备方法为:(1)将金银花、当归、桑椹子、三七花加牛奶大火煮沸,过滤除渣,得保健奶;
(2)将龙眼肉、菠菜加一倍的水打浆,过滤除渣,得果蔬汁;将虾皮与果蔬汁混合拌匀,隔水大火蒸15-20分钟,然后将虾皮取出,烘干后粉碎;
(3)将莲子入锅,小火炒香后加入保健奶,在65-70℃下焖制20-25分钟,然后将莲子取出,烘干后研成粉末,与步骤(2)所得物料混合拌匀,即得。

(6)将虾仁加保健姜糖水腌渍2-3小时后取出打成泥,然后与步骤(3)、(4)、(5)所得物料及剩余物料混合,顺单方向搅拌10-15分钟后挤成直径为4-4.5cm的虾球,压成饼状,送入烤箱烤制5-6分钟,即得。

1.一种香甜保健虾饼,其特征在于由下列重量份的原料制成:
虾仁120-130、淫羊藿2-3、白茅根1-2、罗汉果3-4、岗梅根2-3、吐烟花1-2、五味草1-2、罗汉果叶3-4、生菜2-3、蓝莓5-6、海带13-15、鹌鹑蛋10-11、香油2-3、色拉酱1-2、马蹄粉18-20、生姜7-8、红糖5-6、排骨汤12-13、营养添加剂7-8;
所述营养添加剂由下列重量份的原料制成:金银花1-2、当归1.3-1.4、桑椹子0.8-1、三七花1.1-1.4、牛奶12-14、虾皮25-27、龙眼肉2-3、菠菜2-3、莲子35-40;
制备方法为:(1)将金银花、当归、桑椹子、三七花加牛奶大火煮沸,过滤除渣,得保健奶;
