Abstract

一种鸡肉香辣酱及其制备方法,其特征在于由下列重量份的原料制成:决明子3-4、枳具子4-5、覆盆子2-3、枇杷叶2.5-3.5、黄瓜叶4-4.5、风铃花1-1.5、黄竹参1-2、红辣椒200-210、葡萄籽油8-10、竹盐20-23、生姜20-25、饼干15-18、鸡骨14-15、鸡肉40-45、鸡蛋液10-11、樱桃10-11、火龙果10-12、木瓜15-17、啤酒12-15、米醋20-22、营养添加剂8-9。本发明香辣爽口,风味独特,配方合理,其中添加的鸡骨提高了本发明的钙含量,而添加的鸡肉经炸制后口感好、味道鲜美,与鸡蛋液相配合,使得本发明含有丰富的蛋白质,此外,本发明还含有多种中草药成分,具有补肝益肾、养血活血、滋阴清热、健脾和胃的功效。

一种鸡肉香辣酱及其制备方法
技术领域
本发明属于食品加工技术领域,尤其涉及一种鸡肉香辣酱及其制备方法。
背景技术
人们在日常生活中常使用调味品来增加菜肴的色、香、味,促进食欲。目前,市场上销售的调味品种类繁多,但其大多只具备调味功能,营养单一,已不能满足消费者日益增长的需求。
发明内容
本发明的目的是提供一种鸡肉香辣酱及其制备方法,本发明具有香味浓郁,营养健康的特点。
本发明所采用的技术方案是:
    一种鸡肉香辣酱,其特征在于由以下重量份的原料制成:
决明子3-4、枳具子4-5、覆盆子2-3、枇杷叶2.5-3.5、黄瓜叶4-4.5、风铃花1-1.5、黄竹参1-2、红辣椒200-210、葡萄籽油8-10、竹盐20-23、生姜20-25、饼干15-18、鸡骨14-15、鸡肉40-45、鸡蛋液10-11、樱桃10-11、火龙果10-12、木瓜15-17、啤酒12-15、米醋20-22、营养添加剂8-9;
所述营养添加剂由下列重量份原料制成:山乌珠叶1-1.2、茉莉花1.3-1.4、木瓜籽0.9-1、丝瓜络1.1-1.3、苦瓜7-8、豆渣50-55、松花蛋20-22;
制备方法为:(1)将苦瓜去皮,加3-4倍的水打浆,在所得浆液中加入山乌珠叶、茉莉花、木瓜籽、丝瓜络,文火煎煮30-35分钟,过滤除渣,得保健苦瓜汁;
(2)取松花蛋蛋黄,碾成泥,与豆渣、保健苦瓜汁混合拌匀,烘干后进行超微粉碎,即得。
    所述的鸡肉香辣酱的制备方法,其特征在于包括以下步骤:
    (1)将决明子、枳具子、覆盆子、枇杷叶、黄瓜叶、风铃花、黄竹参加5-6倍的水文火煎煮40-50分钟,过滤除渣,得药液;
    (2)将鸡骨加5-6倍的水小火熬煮30-35分钟,过滤除渣,得鸡骨汤;将葡萄籽油倒入锅中,待油烧至五成熟时倒入红辣椒,大火翻炒1-2分钟后加入鸡骨汤,小火焖制8-10分钟,然后将红辣椒取出,晾干;
    (3)取樱桃、火龙果、木瓜果肉,加40-50%的水打浆,过滤除渣,所得滤液与啤酒、米醋混合入锅,大火煮沸;
    (4)将生姜去皮、切片,与步骤(2)所得物料、竹盐混合拌匀,倒入坛子中压实,然后加入步骤(3)所得物料,于阴凉处密封放置20-24小时后将红辣椒取出,剁碎;
    (5)将饼干放置于药液中浸泡15-20秒后取出,烘干后碾碎,得保健饼干屑;将鸡肉切块,在表面挂上鸡蛋液,然后再均匀裹上保健饼干屑,送入油锅小火炸至熟透,然后与步骤(4)所得物料及剩余物料混合拌匀,即得。
    本发明中的风铃花为锦葵科植物风铃花的全花,黄竹参为鸭跖草科植物细竹蒿草的根。
本发明的有益效果为:
    本发明香辣爽口,风味独特,配方合理科学,其中添加的鸡骨提高了本发明的钙含量,而添加的鸡肉经炸制后口感好、味道鲜美,与鸡蛋液相配合,使得本发明含有丰富的蛋白质,此外,本发明还含有多种中草药成分,经常食用可达到补肝益肾、养血活血、滋阴清热、健脾和胃的功效。
具体实施方式
    一种鸡肉香辣酱,其特征在于由以下重量份(公斤)的原料制成:
决明子3、枳具子4、覆盆子3、枇杷叶3.5、黄瓜叶4.5、风铃花1.5、黄竹参1、红辣椒210、葡萄籽油10、竹盐23、生姜25、饼干18、鸡骨14、鸡肉45、鸡蛋液10、樱桃11、火龙果12、木瓜15、啤酒15、米醋22、营养添加剂9;
所述营养添加剂由下列重量份(公斤)原料制成:山乌珠叶1.2、茉莉花1.4、木瓜籽0.9、丝瓜络1.3、苦瓜7、豆渣50、松花蛋22;
制备方法为:(1)将苦瓜去皮,加3-4倍的水打浆,在所得浆液中加入山乌珠叶、茉莉花、木瓜籽、丝瓜络,文火煎煮30-35分钟,过滤除渣,得保健苦瓜汁;
(2)取松花蛋蛋黄,碾成泥,与豆渣、保健苦瓜汁混合拌匀,烘干后进行超微粉碎,即得。
    所述的鸡肉香辣酱的制备方法,包括以下步骤:
    (1)将决明子、枳具子、覆盆子、枇杷叶、黄瓜叶、风铃花、黄竹参加5-6倍的水文火煎煮40-50分钟,过滤除渣,得药液;
    (2)将鸡骨加5-6倍的水小火熬煮30-35分钟,过滤除渣,得鸡骨汤;将葡萄籽油倒入锅中,待油烧至五成熟时倒入红辣椒,大火翻炒1-2分钟后加入鸡骨汤,小火焖制8-10分钟,然后将红辣椒取出,晾干;
    (3)取樱桃、火龙果、木瓜果肉,加40-50%的水打浆,过滤除渣,所得滤液与啤酒、米醋混合入锅,大火煮沸;
    (4)将生姜去皮、切片,与步骤(2)所得物料、竹盐混合拌匀,倒入坛子中压实,然后加入步骤(3)所得物料,于阴凉处密封放置20-24小时后将红辣椒取出,剁碎;
    (5)将饼干放置于药液中浸泡15-20秒后取出,烘干后碾碎,得保健饼干屑;将鸡肉切块,在表面挂上鸡蛋液,然后再均匀裹上保健饼干屑,送入油锅小火炸至熟透,然后与步骤(4)所得物料及剩余物料混合拌匀,即得。

1.一种鸡肉香辣酱,其特征在于由以下重量份的原料制成:
决明子3-4、枳具子4-5、覆盆子2-3、枇杷叶2.5-3.5、黄瓜叶4-4.5、风铃花1-1.5、黄竹参1-2、红辣椒200-210、葡萄籽油8-10、竹盐20-23、生姜20-25、饼干15-18、鸡骨14-15、鸡肉40-45、鸡蛋液10-11、樱桃10-11、火龙果10-12、木瓜15-17、啤酒12-15、米醋20-22、营养添加剂8-9;
所述营养添加剂由下列重量份原料制成:山乌珠叶1-1.2、茉莉花1.3-1.4、木瓜籽0.9-1、丝瓜络1.1-1.3、苦瓜7-8、豆渣50-55、松花蛋20-22;
制备方法为:(1)将苦瓜去皮,加3-4倍的水打浆,在所得浆液中加入山乌珠叶、茉莉花、木瓜籽、丝瓜络,文火煎煮30-35分钟,过滤除渣,得保健苦瓜汁;
(2)取松花蛋蛋黄,碾成泥,与豆渣、保健苦瓜汁混合拌匀,烘干后进行超微粉碎,即得。
2.根据权利要求1所述的鸡肉香辣酱的制备方法,其特征在于包括以下步骤:
(1)将决明子、枳具子、覆盆子、枇杷叶、黄瓜叶、风铃花、黄竹参加5-6倍的水文火煎煮40-50分钟,过滤除渣,得药液;
(2)将鸡骨加5-6倍的水小火熬煮30-35分钟,过滤除渣,得鸡骨汤;将葡萄籽油倒入锅中,待油烧至五成熟时倒入红辣椒,大火翻炒1-2分钟后加入鸡骨汤,小火焖制8-10分钟,然后将红辣椒取出,晾干;
(3)取樱桃、火龙果、木瓜果肉,加40-50%的水打浆,过滤除渣,所得滤液与啤酒、米醋混合入锅,大火煮沸;
(4)将生姜去皮、切片,与步骤(2)所得物料、竹盐混合拌匀,倒入坛子中压实,然后加入步骤(3)所得物料,于阴凉处密封放置20-24小时后将红辣椒取出,剁碎;
(5)将饼干放置于药液中浸泡15-20秒后取出,烘干后碾碎,得保健饼干屑;将鸡肉切块,在表面挂上鸡蛋液,然后再均匀裹上保健饼干屑,送入油锅小火炸至熟透,然后与步骤(4)所得物料及剩余物料混合拌匀,即得。
