本发明涉及一种葡萄果酱,所述果酱由以下配方比组成:鲜葡萄600-800份、葡萄干30-50份、白糖15-20份、蜂蜜5-10份、橙子20-30份、陈皮1-3份、枸杞2-5份、酸梅粉5-10份、水200-300份。葡萄去皮、去籽,葡萄皮保留,将水和葡萄皮放入锅中,开火煮,煮到水变成紫色的,关火;捞出葡萄皮,挤干水分,放入葡萄,再加入其他原料熬制而成。本发明配方制作的葡萄果酱酱汁浓稠,香味清新,酸甜适口,含有丰富的维生素C、氨基酸等,并且有生津、润肺、开胃之功效,深受人们的欢迎。

一种葡萄果酱
技术领域
本发明属于葡萄深加工领域,尤其涉及一种葡萄果酱。
背景技术
葡萄:葡萄不仅味美可口,而且营养价值很高,成熟的浆果中含糖量高达10%~30%,以葡萄糖为主,可被人体直接吸收。还含有矿物质钙、钾、磷、铁以及多种维生素,多种人体必需氨基酸。从中医的角度来说,葡萄性平,味甘酸,无毒,中医认为,葡萄可以“补血强智利筋骨,健胃生津除烦渴,益气逐水利小便,滋肾宜肝好脸色。同时葡萄还有抗贫血、抗毒杀菌、利尿消肿、美容养颜等作用。
果酱:果酱是把水果、糖及酸度调节剂混合后,用超过100℃温度熬制而成的凝胶物质,也叫果子酱。制作果酱是长时间保存水果的一种方法。主要用来涂抹于面包或吐司上食用。目前市场上还没有葡萄果酱。
发明内容
本发明的目的是解决上述技术不足,而提供一种葡萄果酱,为葡萄提供一种新的消费途径。
为了达到上述目的采用以下技术方案:一种葡萄果酱,由以下重量份的原料制成:鲜葡萄600-800份、葡萄干30-50份、白糖15-20份、蜂蜜5-10份、橙子20-30份、陈皮1-3份、枸杞2-5份、酸梅粉5-10份、水200-300份。
本发明的制作方法是:
选取成熟新鲜的葡萄,将葡萄在清水中充分洗涤干净,去皮,去籽,葡萄皮保留;
葡萄干、陈皮、枸杞打成小粒,橙子榨汁;
将水和葡萄皮放入锅中,开火煮,煮到水变成紫色的,关火;
捞出葡萄皮,挤干水分,放入葡萄和榨好的橙子汁,开中火,煮开,转小火,加入白糖,用木勺不停搅拌至糖完全溶化;
待汤汁快要变浓稠时加入葡萄干、陈皮、枸杞小粒和酸梅粉,不断搅拌直至汤汁浓稠;
待温度降至60℃以下,放入蜂蜜,搅拌均匀,冷却后装瓶即可。
本发明配方制作的葡萄果酱酱汁浓稠,香味清新,酸甜适口,含有丰富的维生素C、氨基酸等,并且有生津、润肺、开胃之功效,深受人们的欢迎。
具体实施方式
实施例1
本实例所述的一种葡萄果酱,由以下重量份的原料制成:鲜巨峰葡萄800份、葡萄干40份、白糖20份、蜂蜜10份、橙子25份、陈皮3份、枸杞4份、酸梅粉6份、水300份。
制作方法如下:
选取成熟新鲜的葡萄,将葡萄在清水中充分洗涤干净,去皮,去籽,葡萄皮保留;
葡萄干、陈皮、枸杞打成小粒,橙子榨汁;
将水和葡萄皮放入锅中,开火煮,煮到水变成紫色的,关火;
捞出葡萄皮,挤干水分,放入葡萄和榨好的橙子汁,开中火,煮开,转小火,加入白糖,用木勺不停搅拌至糖完全溶化;
待汤汁快要变浓稠时加入葡萄干、陈皮、枸杞小粒和酸梅粉,不断搅拌直至汤汁浓稠;
待温度降至60℃以下,放入蜂蜜,搅拌均匀,冷却后装瓶即可。

1.一种葡萄果酱,其特征是由以下重量份的原料制成:鲜葡萄600-800份、葡萄干30-50份、白糖15-20份、蜂蜜5-10份、橙子20-30份、陈皮1-3份、枸杞2-5份、酸梅粉5-10份、水200-300份。
2.根据权利要求1所述的一种葡萄果酱,其特征是所述鲜葡萄采用巨峰葡萄。
