Abstract
本发明涉及一种含铁皮石斛提取物的料酒及制备方法。这种铁皮石斛料酒由铁皮石斛、黄酒、白酒、白砂糖、味精、香料、食盐、其它辅料和水组成。提取物的制备方法是先制取铁皮石斛流浸膏,流浸膏经乙醇沉淀,上清液回收乙醇,沉淀物干燥、细粉碎,即得铁皮石斛提取物。将铁皮石斛提取物加入到用香料浸泡好的黄酒和白酒中,再经过调配、灌装、杀菌,最后制得含铁皮石斛提取物的料酒。本发明选用铁皮石斛枝叶或果实为原材料,将铁皮石斛中的有效成分应用到烹调调味品,可以充分发挥铁皮石斛滋阴清热、补益脾胃的功效。

背景技术
随着现代烹饪技术的发展和调味品生产加工技术的发展,料酒在调味方面的发展已相当成熟,烹调菜肴时加入适当的调料可以增加味道,烹调肉类荤菜时一般都要加入料酒以祛腥膻、解油腻。
中国专利公开号CN102366074A,公开日2012年3月7,公开了一种烹调料酒,它是由食用酒精、食盐、焦糖色素、味精、葡萄糖、香辛料和纯净水制成。该烹饪料酒,具有去除鱼、肉类的腥膻作用。料酒中含有丰富的氨基酸、糖、有机酸和多种维生素,营养丰富,加热后使食物香气更加浓郁、味美,并且不会破坏食物中的营养成分。不足之处是:该料酒在滋阴清热、补益脾胃方面的作用甚微。
铁皮石斛是我国最珍贵的中药材之一,被尊列为“中华九大仙草”(铁皮石斛、天山雪莲、三两重人参,百二十年首乌、花甲之茯苓、苁蓉、深山灵芝、海底珍珠、冬虫夏草)之首,素有“药中黄金”之美称。铁皮石斛的应用,早在东汉末年的《神农本草经》中就有记载,《本草纲目》、《中药大词典》等我国古代多部医学著作中都记载了铁皮石斛的药用功能。《中国药学大词典》称铁皮石斛“专滋肺胃之气液,气液冲旺,肾水自生”,善于养阴生津,治疗阴虚津亏诸症。另外,铁皮石斛是益胃生津药。《神农本草经》、《本草再新》中均有记载,称谓“肠胃药”,是治疗胃脘痛、上腹涨痛的常用药物。现代医学实验证实:铁皮石斛对脾胃病中常见的致病菌幽门螺杆菌有较好的抑制作用,有助于治疗萎缩性胃炎、浅表性胃炎、十二指肠溃疡等幽门螺杆菌阳性的病症。
本发明将铁皮石斛加入到料酒中,不仅保持了料酒在调味方面的特性,还使铁皮石斛的药性通过烹调进入食物中,从而到达人体发挥药效。
发明内容
本发明所要解决的技术问题是:提供一种由铁皮石斛制成的料酒及其制作方法,该料酒具有滋阴清热、补益脾胃的保健作用。
本发明所采取的技术方案是:一种含铁皮石斛提取物的料酒,其特征在于:由以下重量配比的成分组成:铁皮石斛提取物1.5~5%、黄酒30~45%、白酒3~7%、白砂糖5~10%、香料5~10%、食盐2~6%,余量为纯净水;所述铁皮石斛提取物由铁皮石斛干燥茎进行粗粉碎,水浸提,提取液浓缩为流浸膏;用流浸膏3倍重量的90%的食用乙醇沉淀,上清液回收乙醇,沉淀物烘干、细粉碎得到。
优选的,所述水浸提是指用铁皮石斛重量8-10倍的水浸提2次,浸提时间为50min,浸提温度为80~90℃;浓缩温度为95~100℃,流浸膏40℃热测比重为1.2~1.25。
优选的,所述乙醇沉淀时静置24小时,重复两次,干燥温度为70-80℃,细粉过200目筛。
优选的,所述香料包括桂皮、小茴香、陈皮、豆蔻、肉桂、白芷、香叶、干姜和八角。
一种权利要求1所述的含铁皮石斛提取物的料酒的制备方法,其特征在于:包括以下步骤:
第一步:将所述香料加入黄酒和白酒中浸泡,每天搅拌1次,每次搅拌20分钟,连续搅拌7-10天,浸泡30天,分离得原液;
第二步:将所述铁皮石斛提取物加入上一步所述原液中,常温下搅拌溶解完全,并加入食盐和白糖,纯净水补足余量,搅拌30min后过滤,即得散成品铁皮石斛料酒;
第三步:散成品铁皮石斛料酒经过灌装压盖、巴氏杀菌、贴标即得铁皮石斛料酒。
本发明的有益效果是:本发明铁皮石斛提取物经乙醇提取制得,从而使提取物易溶于黄酒和白酒中,在烹调时,提取物中的有效成分随料酒进入食物,既克服了铁皮石斛煎煮过程繁琐、味道苦涩的不足,又赋予料酒滋阴清热、补益脾胃的保健功能,符合中医基础和药食同补理论。
同时,与中国专利公开号CN102366074A中公开的料酒相比,本发明以桂皮、小茴香、陈皮、豆蔻、肉桂、白芷、香叶、干姜和八角这九种天然香料代替化学合成调味品味精,避免了味精中的鲜味剂谷氨酸钠在高温下转变为对人体有致癌性的焦谷氨酸钠,对人体更安全。

配方:铁皮石斛提取物1.5kg、黄酒30 kg、白酒3 kg、白砂糖5 kg、香料5 kg、食盐2kg,水53.5 kg。
铁皮石斛提取物制备方法:铁皮干燥茎进行粗粉碎,用纯净水浸提2次,每次加水量为铁皮石斛重量的8倍,浸提时间50min,浸提温度为80℃,浸提液在95℃下浓缩,得热测比重为1.2(40℃)的流浸膏,然后加流浸膏3倍重量的90%的食用乙醇沉淀,搅拌20min,沉淀静置24小时,重复两次,合并上清液,回收乙醇得沉淀物,沉淀物在70℃下干燥、细粉碎,细粉过200目筛。
含铁皮石斛提取物的料酒的制备方法:将上述香料加入黄酒和白酒中浸泡,每天搅拌1次,每次搅拌20分钟,连续搅拌7天,浸泡30天,分离得原液;将所述铁皮石斛提取物加入上一步所述原液中,常温下搅拌溶解完全,并加入2kg食用精盐,5kg白砂糖,水53.5 kg,搅拌30min后过滤,即得散成品铁皮石斛料酒;散成品铁皮石斛料酒经过灌装压盖、巴氏杀菌、贴标即得铁皮石斛料酒。

配方:铁皮石斛提取物5kg、黄酒45 kg、白酒7 kg、白砂糖10 kg、香料10kg、食盐6kg,水17 kg。
铁皮石斛提取物制备方法:铁皮石斛干燥茎进行粗粉碎,用纯净水浸提2次,每次加水量为铁皮石斛重量的10倍,浸提时间50min,浸提温度为90℃,浸提液在100℃下浓缩,得热测比重为1.25(40℃)的流浸膏,然后加流浸膏3倍重量的90%的食用乙醇沉淀,搅拌20min,沉淀静置24小时,重复两次,合并上清液,回收乙醇得沉淀物,沉淀物在80℃下干燥、细粉碎,细粉过200目筛。

实施例4
配方:铁皮石斛提取物3kg、黄酒37kg、白酒5kg、白砂糖7kg、香料9kg、食盐5 kg,水34kg。
铁皮石斛提取物制备方法:铁皮石斛干燥茎进行粗粉碎,用纯净水浸提2次,每次加水量为铁皮石斛重量的8倍,浸提时间50min,浸提温度为90℃,浸提液在98℃下浓缩,得热测比重为1.22(40℃)的流浸膏,然后加流浸膏3倍重量的90%的食用乙醇沉淀,搅拌20min,沉淀静置24小时,重复两次,合并上清液,回收乙醇得沉淀物,沉淀物在75℃下干燥、细粉碎,细粉过200目筛。
含铁皮石斛提取物的料酒的制备方法:将上述香料加入黄酒和白酒中浸泡,每天搅拌1次,每次搅拌20分钟,连续搅拌9天,浸泡30天,分离得原液;将所述铁皮石斛提取物加入上一步所述原液中,常温下搅拌溶解完全,食盐5 kg,白砂糖7kg,水34kg,搅拌30min后过滤,即得散成品铁皮石斛料酒;散成品铁皮石斛料酒经过灌装压盖、巴氏杀菌、贴标即得铁皮石斛料酒。
实施例5
含铁皮石斛提取物的料酒与普通料酒在补益脾胃方面效果比较:
1、基本情况
选取200例脾胃失调患者,随机分为两组每组100例,A组每日烹调使用实施例1所述料酒,B组每日烹饪食用普通料酒。连续食用3个月,期间不服用任何其他调理脾胃的药物。
2、诊断标准
反复发作的连续性暧气,咽部异物感,两肋和胃脘部的胀闷、串痛,及胃内无以言状的不适感,无饥饿感或时而食欲旺盛,时而无食欲、胃内上冲上逆,打嗝、口干、口苦、胸闷、喜欢出长气、反酸、嗳气、厌食、恶心、呕吐、剑突下灼热感、食后饱胀、上腹不适或疼痛,每遇情绪变化则症状加重。
3、疗效评定标准
显效 :症状消失,体质恢复正常,观察一年无复发者 ;
好转 :症状明显好转,体质逐渐恢复;
无效 :达不到好转标准者。
4、疗效结果(相同的,实施例2-4也具有同样效果)
由以上数据可以看出,A组食用者总有效率达95%,其中75%的患者疗效明显,而B组显效率只有2%。由此可见,经常食用含铁皮石斛提取物的料酒可以起到很好的调理脾胃的作用。
实施例6
含铁皮石斛提取物的料酒的滋阴清热作用试验结果:
1、基本情况
选取200名于阴虚潮热,盗汗,或热盛伤津者,甲组每日烹调使用实施例1所述料酒,B组每日烹饪食用普通料酒。连续食用3个月,期间不服用任何其他药物。
2、诊断标准
阴虚潮热,盗汗,或热盛伤津而见舌红、口燥、头晕耳鸣、唇赤颧红、虚烦失眠、潮热盗汗、喘咳咯血、遗精、舌红少苔,脉细数。
3、疗效评定标准
显效 :症状消失,体质恢复正常,观察一年无复发者 ;
好转 :症状明显好转,体质逐渐恢复;
无效 :达不到好转标准者。
4、疗效结果(相同的,实施例2-4也具有同样效果)
由以上数据可以看出,A组食用者总有效率达80%以上,其中66%的患者疗效明显,而B组显效率只有3%,好转率仅为23%。由此可见,经常食用含铁皮石斛提取物的料酒达到滋阴清热的功效。
Claims (1)
1.一种含铁皮石斛提取物的料酒的制备方法,其特征在于:由以下重量配比的成分制成:铁皮石斛提取物1.5~5%、黄酒30~45%、白酒3~7%、白砂糖5~10%、香料5~10%、食盐2~6%,余量为纯净水;所述香料包括桂皮、小茴香、陈皮、豆蔻、肉桂、白芷、香叶、干姜和八角;
包括以下步骤:
第一步:将所述香料加入黄酒和白酒中浸泡,每天搅拌1次,每次搅拌20分钟,连续搅拌7-10天,浸泡30天,分离得原液;
第二步:将所述铁皮石斛提取物加入上一步所述原液中,常温下搅拌溶解完全,并加入食盐和白砂糖,纯净水补足余量,搅拌30min后过滤,即得散成品铁皮石斛料酒;
第三步:散成品铁皮石斛料酒经过灌装压盖、巴氏杀菌、贴标即得铁皮石斛料酒;所述铁皮石斛提取物由铁皮石斛干燥茎进行粗粉碎,用铁皮石斛重量8-10倍的水浸提2次,浸提时间为50min,浸提温度为80~90℃;提取液浓缩为流浸膏;浓缩温度为95~100℃,流浸膏40℃热测比重为1.2~1.25,用流浸膏3倍重量的90%的食用乙醇沉淀,所述乙醇沉淀时静置24小时,重复两次,上清液回收乙醇,沉淀物烘干、细粉碎得到,干燥温度为70-80℃,细粉过200目筛。
