    本发明主要涉及香肠及其制备方法技术领域,尤其涉及一种黑木耳粒鸡肉香肠。
背景技术
    香肠是一种利用非常古老的食物生产和肉食保存技术,将动物的肉绞碎成泥状,再灌入肠衣制成的长圆柱体管状食品。中国的香肠有着悠久的历史,香肠的类型也有很多,但是随着人们的生活水平的提高,人们不再只注重食品的口感,还有食品的健康及保健作用也越来越受到人们的重视。
发明内容
本发明为了弥补已有技术的缺陷,提供一种黑木耳粒鸡肉香肠的制备方法。
本发明是通过以下技术方案实现的:一种黑木耳粒鸡肉香肠,由以下重量份原料组成:鸡肉400-430、猪皮70-80、桔皮蜜饯30-40、黑木耳35-40、紫薯20-30、番茄30-40、纳豆10-15、合欢皮6-7、石榴皮4-5、薰衣草5-6、金樱子5-6、罗布麻叶5-6、百合6-7、莲子心6-7、兰草3-4、食品添加剂10-12、黄酒40-50、食盐适量、蜂蜜适量、味精适量、肠衣适量、水适量。
食品添加剂由以下重量份原料,合并混匀制成:螺旋藻粉10-15、胡椒粉20-25、当归油0.02-0.03、果胶2-3、小麦胚芽粉10-15、苦荞花粉5-6、海参粉10-15。
一种黑木耳粒鸡肉香肠的制备方法,包括以下步骤:
(1)将鸡肉、猪皮洗净,放入绞肉机中,切碎备用;
(2)将桔皮蜜饯、黑木耳洗净,切成碎粒备用;
(3)将紫薯、番茄洗净,去皮后,切成块,与纳豆一起至于锅中,加入黄酒,加热30-40分钟,将锅中所有物料做成番茄酱备用;
(4)将合欢皮、石榴皮、薰衣草、金樱子、罗布麻叶、边和、莲子心、兰草用5-10倍量的水提取,将提取液喷雾干燥,得到中药粉;
(5)将鸡肉、猪皮、番茄酱、中药粉、食品添加剂、食盐、蜂蜜、味精合并,混匀后,取肠衣灌肠,烤熟晒干即得成品。
本发明的优点是:本发明的一种黑木耳粒鸡肉香肠,制作工艺简单,添加猪皮,增加了本发明香肠的胶原蛋白的含量,能够有效补充胶原蛋白,同时添加黑木耳等食材,具有丰富的膳食纤维,以及合欢皮、石榴皮、薰衣草中药材提取物的添加,赋予了本发明香肠的特殊的保健功能,有益于人体健康。

一种黑木耳粒鸡肉香肠,由以下重量份(Kg)原料组成:鸡肉400、猪皮70、桔皮蜜饯30、黑木耳35、紫薯20、番茄30、纳豆10、合欢皮6、石榴皮4、薰衣草5、金樱子5、罗布麻叶5、百合6、莲子心6、兰草3、食品添加剂10、黄酒40、食盐适量、蜂蜜适量、味精适量、肠衣适量、水适量。

1.一种黑木耳粒鸡肉香肠,其特征在于,由以下重量份原料组成:鸡肉400-430、猪皮70-80、桔皮蜜饯30-40、黑木耳35-40、紫薯20-30、番茄30-40、纳豆10-15、合欢皮6-7、石榴皮4-5、薰衣草5-6、金樱子5-6、罗布麻叶5-6、百合6-7、莲子心6-7、兰草3-4、食品添加剂10-12、黄酒40-50、食盐适量、蜂蜜适量、味精适量、肠衣适量、水适量;
所述食品添加剂由以下重量份原料,合并混匀制成:螺旋藻粉10-15、胡椒粉20-25、当归油0.02-0.03、果胶2-3、小麦胚芽粉10-15、苦荞花粉5-6、海参粉10-15。
