一种香甜即食脱水藕片,其特征在于由以下重量份的原料制成:
莲藕70-80、牛皮糖7-8、茉莉花3-4、玫瑰花2-3、桑叶1-2、夏枯草4-6、绿茶3-4、厚朴花5-7、丰花草2-3、王不留行1-2、丁葵草3-4、可乐85-90、玉米油5-7。
所述的香甜即食脱水藕片的制备方法,其特征在于包括以下步骤:
(1)选择成熟、完整、无病害的莲藕,洗净切片,置于可乐中浸泡3-4小时,捞出晾干;
(2)将茉莉花、玫瑰花、桑叶、夏枯草、绿茶、厚朴花、丰花草、王不留行、丁葵草加4-5倍的水煎煮,过滤除渣后得提取液;
(3)在锅中倒入玉米油,将步骤(1)所得物料送入锅中翻炒,同时喷洒提取液,炒至干燥时起锅,将所得物料热风干燥至含水量降为7-8%时出料;
(4)将牛皮糖加两倍的水,加热搅拌至溶解完全后将其均匀刷在步骤(3)所得物料表面,然后送入烘箱,烘至表面干燥时出料。
