本发明属于食品加工技术领域,涉及一种面条,尤其涉及一种黄油奶香护肝挂面及其制备方法。
背景技术
面条是中国的传统食物,因其制作简单、食用方便,而广受人们喜爱。现在市场上面条种类繁多,但存在着营养成分单一、可供选择的口味种类少的问题。
发明内容
本发明的目的是提供一种黄油奶香护肝挂面及其制备方法,本发明具有口感细腻,爽滑劲道,营养丰富,无化学添加剂的特点。
本发明所采用的技术方案是:
一种黄油奶香护肝挂面,其特征在于由以下重量份的原料制成:
小麦粉90-100、莜麦粉30-40、黄油3-5、酸奶10-12、五味子2-3、蒲公英1-2、地丁2-3、西洋参0.8-1、桑椹3-5、放杖草2-3、凤尾草1-2、珍珠草3-4、榆白皮2-3。
所述的黄油奶香护肝挂面的制备方法,其特征在于包括以下步骤:
(1)将五味子、蒲公英、地丁、西洋参、桑椹、放杖草、凤尾草、珍珠草、榆白皮加水煎煮2-3小时,过滤除渣后所得提取液经喷雾干燥制成粉末;
(2)在锅中加入黄油,小火熬化后倒入莜麦粉,炒出香味,加入4-5倍的水和酸奶,小火加热搅拌至粘稠糊状,再经冷冻干燥,研成粉末;
(3)将步骤(1)、(2)所得物料与小麦粉混合,加入适量水,揉成面团;
(4)面团经熟化、压片、切条、干燥、切断、包装,即得。
本发明的有益效果为:
本发明添加的黄油和酸奶营养丰富,可为人体补充维生素与钙质,在小麦粉中混入经黄油炒制并添加了酸奶的莜麦粉使得生产出来的挂面奶香浓郁、口感细腻爽滑、风味独特;且加工过程中添的五味子、蒲公英、地丁、西洋参具有护肝功效,辅以桑葚、放杖草等其它中草药,还可达到清热解毒、补血健脾、利水消肿的功效,是一种具有食疗保健功能的挂面。
具体实施方式
一种黄油奶香护肝挂面,其特征在于由以下重量份(公斤)的原料制成:
小麦粉100、莜麦粉30、黄油5、酸奶10、五味子3、蒲公英2、地丁3、西洋参1、桑椹5、放杖草3、凤尾草2、珍珠草4、榆白皮3。
所述的黄油奶香护肝挂面的制备方法,包括以下步骤:
(1)将五味子、蒲公英、地丁、西洋参、桑椹、放杖草、凤尾草、珍珠草、榆白皮加水煎煮2-3小时,过滤除渣后所得提取液经喷雾干燥制成粉末;
(2)在锅中加入黄油,小火熬化后倒入莜麦粉,炒出香味,加入4-5倍的水和酸奶,小火加热搅拌至粘稠糊状,再经冷冻干燥,研成粉末;
(3)将步骤(1)、(2)所得物料与小麦粉混合,加入适量水,揉成面团;
(4)面团经熟化、压片、切条、干燥、切断、包装,即得。

1.一种黄油奶香护肝挂面,其特征在于由以下重量份的原料制成:
小麦粉90-100、莜麦粉30-40、黄油3-5、酸奶10-12、五味子2-3、蒲公英1-2、地丁2-3、西洋参0.8-1、桑椹3-5、放杖草2-3、凤尾草1-2、珍珠草3-4、榆白皮2-3。
2.根据权利要求1所述的黄油奶香护肝挂面的制备方法,其特征在于包括以下步骤:
(1)将五味子、蒲公英、地丁、西洋参、桑椹、放杖草、凤尾草、珍珠草、榆白皮加水煎煮2-3小时,过滤除渣后所得提取液经喷雾干燥制成粉末;
(2)在锅中加入黄油,小火熬化后倒入莜麦粉,炒出香味,加入4-5倍的水和酸奶,小火加热搅拌至粘稠糊状,再经冷冻干燥,研成粉末;
(3)将步骤(1)、(2)所得物料与小麦粉混合,加入适量水,揉成面团;
(4)面团经熟化、压片、切条、干燥、切断、包装,即得。
