Abstract
一种马铃薯干片的加工方法,由原料挑选、清洗去皮、切片浸泡、低温烘干、装袋灭菌五道工序完成,其有益效果是将马铃薯切片后立即放入浸泡液中,可以有效防止马铃薯干片氧化变色,同时还可吸收浸泡液中各中草药的有效成分,可使马铃薯干片在具有草药风味的同时在不添加化学添加剂的前提下延长马铃薯干片的保质时间,在常温下能存放半年以上时间;食用时可采取蒸煮食用、油炸、煲汤等方法,口感醇香,方便卫生,营养成份不会流失;此加工方法简单,易于操作,可实现自动化流水作业大规模产业化,满足人们日益增长的生活质量需求与对食物多样化的需要。

—种马铃薯干片的加工方法
技术领域
[0001] 本发明属于农产品加工技术领域,特别是一种马铃薯干片的加工方法。
背景技术
[0002] 马铃薯,别名叫土豆,也叫洋芋,是现今人类社会的四大粮食作物之一,也是人们餐桌上的常客。马铃薯具有很高的营养价值和药用价值,是抗衰老的食物。其营养成分非常全面,营养结构也较合理,富含有大量的碳水化合物、蛋白质、矿物质、维生素、膳食纤维等,可做主食也可以作为蔬菜食用,或做辅助食品如薯条、薯片等,也可用来制作淀粉、粉丝等,还可以酿造酒或作为牲畜的饲料。常食用马铃薯可以起到搞衰老、减肥的作用,其汁液还有护肤美容的功效,还具有和胃健中、健脾利湿、解毒消炎、降糖降脂、宽肠通便的食疗保健作用。
[0003]马铃薯由于其营养丰富,可供烧煮作粮食或蔬菜,长期以来深受消费者喜欢和食品加工业者的高度重视。中国是世界上最大的马铃薯生产国,约占全世界产量的20%,但我国出产的大量马铃薯都是以鲜食为主,加工产品较少,而在美国,超过80%出产的马铃薯被加工成食品,从而提高了马铃薯的利用率和附加值,也方便了消费者的食用;因此,加强与扩大我国马铃薯的深加工技术水平、延长马铃薯产业链、促进马铃薯产业的升级显得非常迫切与必要。
[0004] 我国消费者对于马铃薯一般都是以鲜切即食为主,但随着鲜切蔬菜加工业的发展兴起,也有不少鲜切蔬菜加工企业对马铃薯进行鲜切生产、加工与销售,因鲜切蔬菜具有新鲜、自然、营养、卫生与方便等特点,加之现代生活节奏的加快和人们对自身健康、生活水平的不断提高及休闲消费的快速发展,鲜切蔬菜正以其自身的众多优势日益受到广大城市消费者的欢迎;但鲜切蔬菜特别是马铃薯经过鲜切加工后,表层细胞组织受损,原有的保护系统受到破坏,其质量比原料更易发生变化,通常的贮藏或货架寿命仅为一星期左右,而且马铃薯切割后因淀粉含量高极易导致生理衰老,组织褐变、质地软化,微生物生长和风味下降等,在鲜切生产、流通与贮藏中难以满足相应的长时间保鲜保质的要求,因此,寻求一种更宜长期贮藏且保持马铃薯原有的风味,满足人们日益增长的饮食要求的马铃薯生产加工方法成为了各蔬菜、食品加工企业的当务之急。
发明内容
[0005] 本发明所要解决的技术问题是:针对现有技术的不足,提供一种通过浸泡再进行烘烤干燥的马铃薯干片的加工方法,以得到一种贮存时间长,品质不变,没有化学添加剂,食用安全卫生、方便的马铃薯切片,以满足人们对食物多样化的需求。
[0006] 为解决上述技术问题,本发明所采用的技术方案是一种马铃薯干片的加工方法,由原料挑选、清洗去皮、切片浸泡、低温烘干、装袋灭菌五道工序完成,其特征在于具体加工方法如下:
(O原料挑选:选择薯块大于300g,表面光滑,色泽正常,无发芽变绿,无病虫,无人为、机械损伤的新鲜马铃薯;
(2)清洗去皮:将选好的马铃薯放入清水中浸泡,然后洗去表面泥污,再去掉马铃薯表面的表皮;
(3)切片浸泡:将去皮后的马铃薯切成2-4mm厚的薄片,再放入浸泡液中浸泡2_4小
时;
(4)低温烘干:将浸泡好的马铃薯薄片放在烘烤架板上,依次层叠放入烘烤炉中,设置温度为55-65°C,烘烤2-4小时,然后让其自然冷却,即成马铃薯干片;
(5)装袋灭菌:将烘干成片的马铃薯干片按规格计量装袋,然后抽真空封口,在紫外线下照射30-50分钟,最后将检验合格的产品装箱入库。
[0007] 所述的浸泡液是按照重量份将金银花300_500g,鱼腥草200_300g,三七100-300g,黄芪100-200g,百合200_300g,丹参200_300g,食盐100_300g混和后放入布袋内包扎封口,再放入80-100kg清水中浸泡一天,即得浸泡液。
[0008] 本发明所述的浸泡液中,加入了食盐,可以有效防止马铃薯中所含的多酚氧化酶氧化,避免变色;金银花、鱼腥草、三七、百合、黄芪、丹参的浸泡液可使马铃薯长期不变质;其中金银花为清热解毒的良药,其性甘寒气芳香,甘寒清热而不伤胃,芳香透达又可祛邪;鱼腥草性寒,味辛,具有清热解毒、消痈排毒、利尿通淋功能;三七别名人参三七、田七,味甘、微苦,性温,用有散瘀止血、消肿定痛之功能,其所含的酮类化合物能促进血液循环,扩张冠状动脉,降低心脏耗氧量,减轻心肌工作负担;百合又名白花百合,药食兼优,有养阴润肺、清心安神之功能;黄苗性温,味甘,补气固表,拨毒排脓,利尿,生肌;丹参味苦、性微寒,有活血去淤、消肿止痛、养血安神功能,对心血管系统、消化系统有调节和保护作用,还能增强人体免疫力;根据中医理论“药食同源”的原理,这六种具有不同功效的药用植物通过浸泡出的药液再浸泡马铃薯干片,也能让马铃薯干片带有其功效。

具体实施方式
[0010] 下面结合实施例对本发明作进一步说明 实施例1
首先取金银花300g,鱼腥草200g,三七100g,黄芪100g,百合200g,丹参200g,食盐IOOg混和后放入布 袋内包扎封口,再放入80kg清水中浸泡一天,得浸泡液。
[0011 ] 再挑选70kg薯块大于300g,表面光滑,色泽正常,无发芽变绿,无病虫,无人为、机械损伤的新鲜马铃薯;将选好的马铃薯放入清水中浸泡,清洗去表面泥污,去掉马铃薯表面的表皮。
[0012] 然后将去皮后的马铃薯切成2_4mm厚的薄片,再放入浸泡液中浸泡2小时。
[0013] 将浸泡好的马铃薯薄片放在烘烤架板上,依次层叠放入烘烤炉中,设置温度为55-65°C,烘烤2小时,然后让其自然冷却,即成马铃薯干片。
[0014] 然后将烘干成片的马铃薯干片按规格计量装袋,抽真空封口,在紫外线下照射30分钟,最后将检验合格的广品装箱入库。
[0015] 食用时把马铃薯干片装入容器中,放入锅中蒸煮30分钟,取出加入相应的调料搅拌即可食用。

首先取金银花400g,鱼腥草250g,三七200g,黄芪150g,百合250g,丹参250g,食盐200g混和后放入布袋内包扎封口,再放入90kg清水中浸泡一天,即得浸泡液。
[0017] 再挑选85kg薯块大于300g,表面光滑,色泽正常,无发芽变绿,无病虫,无人为、机械损伤的新鲜马铃薯;将选好的马铃薯放入清水中浸泡,清洗去表面泥污,去掉马铃薯表面的表皮。
[0018] 然后将去皮后的马铃薯切成2_4mm厚的薄片,再放入浸泡液中浸泡3小时。
[0019] 将浸泡好的马铃薯薄片放在烘烤架板上,依次层叠放入烘烤炉中,设置温度为55-650C,烘烤3小时,然后让其自然冷却,即成马铃薯干片。
[0020] 然后将烘干成片的马铃薯干片按规格计量装袋,抽真空封口,在紫外线下照射40分钟,最后将检验合格的广品装箱入库。
[0021] 食用时把马铃薯干片放入油锅中煎炸,油炸至金黄色时取出,浙油冷却后即可食用。

首先取金银花500g,鱼腥草300g,三七300g,黄芪200g,百合300g,丹参300g,食盐300g混和后放入布袋内包扎封口,再放入IOOkg清水中浸泡一天,即得浸泡液。
[0023] 再挑选IOOkg薯块大于300g,表面光滑,色泽正常,无发芽变绿,无病虫,无人为、机械损伤的新鲜马铃薯;将选好的马铃薯放入清水中浸泡,清洗去表面泥污,去掉马铃薯表面的表皮。
[0024] 然后将去皮后的马铃薯切成2_4mm厚的薄片,再放入浸泡液中浸泡4小时。
[0025] 将浸泡好的马铃薯薄片放在烘烤架板上,依次层叠放入烘烤炉中,设置温度为55-650C,烘烤4小时,然后让其自然冷却,即成马铃薯干片。
[0026] 然后将烘干成片的马铃薯干片按规格计量装袋,抽真空封口,在紫外线下照射50分钟,最后将检验合格的广品装箱入库。
[0027] 食用时把马铃薯干片放入煲汤的瓦罐中,再放入其它需要的煲汤材料,熬制30分钟即可食用。
Claims (2)
1.一种马铃薯干片的加工方法,由原料挑选、清洗去皮、切片浸泡、低温烘干、装袋灭菌五道工序完成,其特征在于具体加工方法如下: (O原料挑选:选择薯块大于300g,表面光滑,色泽正常,无发芽变绿,无病虫,无人为、机械损伤的新鲜马铃薯; (2)清洗去皮:将选好的马铃薯放入清水中浸泡,然后洗去表面泥污,再去掉马铃薯表面的表皮; (3)切片浸泡:将去皮后的马铃薯切成2-4mm厚的薄片,再放入浸泡液中浸泡2_4小时; (4)低温烘干:将浸泡好的马铃薯薄片放在烘烤架板上,依次层叠放入烘烤炉中,设置温度为55-65°C,烘烤2-4小时,然后让其自然冷却,即成马铃薯干片; (5)装袋灭菌:将烘干成片的马铃薯干片按规格计量装袋,然后抽真空封口,在紫外线下照射30-50分钟,最后将检验合格的产品装箱入库。
2.根据权利要求1所述的浸泡液是按照重量份将金银花300-500g,鱼腥草200-300g,三七100-300g,黄芪100-200g,百合200_300g,丹参200_300g,食盐100_300g混和后放入布袋内包扎封口,再放入SO-1OOkg清水中浸 泡一天,即得浸泡液。
