本发明涉及一种食品加工方法。
背景技术
豆腐营养丰富,含有铁、钙、磷、镁等人体必需的多种微量元素,还含有糖类、植物油和丰富的优质蛋白,素有“植物肉”之美称。豆腐的消化吸收率达95%以上。两小块豆腐,即可满足一个人一天钙的需要量。
豆腐为补益清热养生食品,常食之,可补中益气、清热润燥、生津止渴、清洁肠胃。更适于热性体质、口臭口渴、肠胃不清、热病后调养者食用。现代医学证实,豆腐除有增加营养、帮助消化、增进食欲的功能外,对齿、骨骼的生长发育也颇为有益,在造血功能中可增加血液中铁的含量;豆腐不含胆固醇,为高血压、高血脂、高胆固醇症及动脉硬化、冠心病患者的药膳佳肴。也是儿童、病弱者及老年人补充营养的食疗佳品。豆腐含有丰富的植物雌激素,对防治骨质疏松症有良好的作用。还有抑制乳腺癌、前列腺癌及血癌的功能,豆腐中的甾固醇、豆甾醇,均是抑癌的有效成分。
豆腐干是豆腐的再加工制品,咸香爽口,硬中带韧,久放不坏。豆腐干营养丰富,含有大量蛋白质、脂肪、碳水化合物,还含有钙、磷、铁等多种人体所需的矿物质。豆腐干在制作过程中会添加食盐、茴香、花椒、大料、干姜等调料,既香又鲜,久吃不厌,被誉为“素火腿”。
但是现有的豆腐干都为油炸或水煮,水煮的韧性不好,油炸的不利于健康,也不爽口。
发明内容
本发明的目的是提供一种豆腐干的制作工艺,该种工艺得到的豆腐干外皮柔韧、内肉嫩滑,酸甜可口。
本发明采取的技术方案为:
一种豆腐干的制作工艺,包括如下步骤:
(1)将豆腐切成薄片,将薄片的上下两面均匀涂上食盐;
(2)涂上食盐1-2小时后待食盐渗进豆腐,将豆腐薄片放在番茄粉和辣椒粉以3-5∶1质量比混合的调料中颠簸;
(3)颠簸完后放在冷冻干燥机中干燥2-3天。
本发明得到的豆腐干外皮柔韧、内肉嫩滑,皮酥脆、肉嫩滑、尝之又脆又软,酸甜可口,同时内含丰富蛋白质、多种维他命及钙、锌、钠、硒等多种微量元素,营养丰富,利于健康。

(1)将豆腐切成薄片,将薄片的上下两面均匀涂上食盐;
(2)涂上食盐1小时后待食盐渗进豆腐,将豆腐薄片放在番茄粉和辣椒粉以3∶1质量比混合的调料中颠簸;
(3)颠簸完后放在冷冻干燥机中干燥2天。

(1)将豆腐切成薄片,将薄片的上下两面均匀涂上食盐;
(2)涂上食盐1-2小时后待食盐渗进豆腐,将豆腐薄片放在番茄粉和辣椒粉混合的调料中颠簸;
(3)颠簸完后放在冷冻干燥机中干燥2-3天。
