一种串珠蜜饯的制作方法
本发明涉及一种蜜饯制品的加工方法,具体地说是用萝卜为原料制作蜜饯方便食品。
萝卜,自古人们常食的一种根菜类蔬菜。其肉质根富含碳水化合物,维生素和磷、铁、硫等矿质营养元素。中医认为:萝卜能消食和中,去痰癖、利关节、养容颜,出五脏恶气。常食萝卜,可促进新陈代谢,有助消化,增进健康。
目前,市场上常有用萝卜为原料制作的方便食品萝卜脯、萝卜条、萝卜膨化片等。因萝卜含水量高,质地柔软,用常规制作蜜饯糖煮的方法难以实现规则的外观。
为解决上述问题,本发明提出以下技术方案,工艺为:
1、选料:选用Φ1.5-2.5CM,圆或扁圆无畸形,无沟痕的小萝卜,最适宜品种为红皮扬花萝卜,去除根叶,洗净。
2、整形:用定向切片机将单个萝卜切去头脐和根茎,厚1-1.2CM。
3、煮漂:把环面带皮整形好的原料入锅水煮,水沸腾后5-10分钟停火,捞出放进0.1%的CaCl冷水浸泡5-8小时,以硬化原料,泡出果皮的辛辣味.
4、腌蒸:将煮熟后漂过的原料沥水后放置屉或盒里,按每百公斤原料用蔗白糖70-80公斤的比例一层原料上撒一层糖,如此一层原料一层糖重复3-4层。腌制20-30分钟后,连屉或盒放进蒸笼或蒸汽箱中蒸,温升100℃后续蒸40-50分钟,出笼散热,待3-5小时后入烘房。在60-80摄氏度下烘烤3-4小时即为成品。
制出的成品颜色紫红,油润光亮,晶莹透剔。可用竹签5个一连串,也可用盒包装。
实施例:
选料整形。选用Φ2CM左右,圆正,无畸形的扬花萝卜,洗净切去头脐和根茎,取中间带皮萝卜,厚1-1.2CM,如通用型算盘珠大小。
煮漂。把整理好的原料入锅水煮,用水量以压没原料为宜,沸水煮5-8分钟后停火。速放于盛有0.1%的CaCl溶液的冷水中浸泡5-8小时,以硬化原料,去辛辣味。
糖腌。将煮熟经冷水漂过的原料沥水,置屉式晒筐或盆里,按每百公斤原料用蔗白糖75公斤的比例在一层原料上撒放一层糖,如此重复3-4层,腌料20-30分钟,将原料稍拌。
汽蒸。糖腌制后,将半成品果坯,连盛载物屉筐或盆一同置蒸笼或蒸汽箱中,加热至100摄氏度后蒸40-50分钟,出笼散热。
烘炕。将经3-5小时散去热蒸汽的原料入烘房,置65-80摄氏度下烘烤3.5-4小时即为成品。

Claims (4)

1、一种串珠蜜饯的制作方法,其特征是以萝卜为原料,精制出蜜饯食品,该方法包括下列步骤:
(1)选料:选用个体小,Φ1.5-2CM,圆正,无畸形,无沟痕的鲜萝卜头,洗净;
(2)整形,用切片机将单个萝卜去除头脐、根茎、制成厚1-1.2CM,形如常规的算盘珠大小;
(3)煮漂;
(4)腌蒸;
(5)烘炕。
2、根据权利要求1所述的一种串珠蜜饯的制作方法,其特征是将整形后的原料入沸水中煮沸5-8分钟,出锅后速置于0.1%的CaCl的冷水中浸泡5-8小时,硬化原料,去除辛、辣味。
3、根据权利要求1所述的一种串珠蜜饯的制作方法,其特征是将硬化处理后的原料沥水,按每公斤原料加75公斤蔗白糖拌匀腌制20-30分钟。
4、根据权利要求1所述的一种串珠蜜饯的制作方法,其特征是腌制的原料入蒸屉,在100摄氏常压汽中蒸40-50分钟,然后经3-5小时散热入烘房,在65-70摄氏温度下烘烤3.5-4小时。冷却后用竹签串连或盒装即为成品。
