Abstract

La presente invención se relaciona con un proceso para la producción de un fideo instantáneo frito en aceite. El aceite usado para freír el fideo instantáneo comprende los ácidos grasos C16:0 en el rango de 1 a 25% en peso (basado en el peso de grasa total) y C18:1 en el rango de 60 a 90% en peso (basado en el peso de grasa total) y C18:2 en el rango de 0,1 a 20% en peso (basado en el peso de grasa total).
