Abstract

La presente se relaciona con un agente de batido que comprende por lo menos una grasa, por lo menos una proteína y por lo menos un emulsionante en donde la cantidad de todos los emulsionantes presentes en el agente de batido es de por lo menos 0,1% en peso del agente de batido y en donde la cantidad de porciones presentes de ácido graso no saturado en la grasa es de por lo menos 10% en peso de todas las porciones presentes de ácido graso en la grasa. Además, la presente se relaciona con un polvo instantáneo para elaborar un postre en polvo instantáneo que comprende el agente de batido, un alimento que comprende una espuma que se obtiene por batido, en donde la espuma comprende el agente de batido, un proceso para elaborar el agente de batido y el uso del agente de batido para elaborar un alimento que comprende una espuma que se obtiene por medio de batido.
