Description
La présente invention a pour objet l'utilisation d'un époxyde dicétonique, la 3,5,5-triméthyl-2,3-époxycyclohexane-1,4-dione, comme agent aromatisant pour renforcer, améliorer ou modifier les propriétés organoleptiques d'aliments solides ou liquides pour l'homme et les animaux, de boissons non nutritives et du tabac. Il est bien connu, par exemple, que le tabac utilisé pour la fabrication des cigarettes est essentiellement composé d'un mélange de différents types de tabacs qui donnent ainsi à la fumée l'arôme particulier que l'on désire obtenir. Ainsi, les cigarettes ordinaires contiennent des mélanges de tabacs de Virginie, Maryland ou du Kentucky et de tabacs orientaux ou turcs, les proportions respectives variant selon l'arôme particulier recherché. Il est également courant d'utiliser des substances aromatisantes et des humectants, afin d'améliorer l'arôme desdits mélanges de tabac. L'utilisation, objet de la présente invention, apporte une solution nouvelle et originale à l'aromatisation du tabac en particulier. Une mise en oeuvre particulière de l'invention consiste en l'addition à une base (constituée par un tabac naturel ou un produit de remplacement du tabac, d'origine naturelle ou synthétique) d'une composition comprenant la 3,5,5-triméthyl-2,3-époxycyclohexane-1,4-dione, ou dudit composé à l'état pur. Le composé en question confère au tabac ainsi aromatisé un caractère doux particulièrement recherché et lui confère une note de type flueçu- red . Nous avons en outre trouvé, d'une manière inattendue, que lorsque ledit composé est incorporé à des aliments ou des boissons ou à des compositions aromatisantes contenant du phénol ou des dérivés phénoliques. I'âpreté et la note phénolique en sont réduites. voire supprimées. Une telle utilisation présente un très grand intérêt pour l'industrie des arômes, particulièrement pour modifier le caractère grillé de certaines boissons telles que thé ou café. De plus. I'emploi dudit composé est particulièrement intéressant pour l'aromatisation de la viande, plus précisément de viande fumée, ainsi que de céréales et noix rôties. Lorsqu'il est pris séparément, ledit composé peut donner aux produits auxquels il est incorporé une note caramel ou paille et trouve ainsi une application utile pour l'aromatisation d'infusions ou décoctions, et de certaines boissons fermentées. Le terme aliment utilisé dans la présente description est employé dans son sens le plus large et définit également des produits tels que café, thé et cacao. Les compositions ou l'agent aromatisant pur peuvent être employés sous diverses formes. La nature, la solubilité et la stabilité du produit et. le cas échéant, les propriétés chimico-physiques des cc-ingrédients dans une composition déterminée détermineront la forme sous laquelle l'agent aromatisant ou la composition doit être utilisé. II est cependant préférable d'utiliser le produit ou les compositions sous forme de solutions. Une méthode appropriée pour l'aromatisation du tabac consiste en l'aspersion du tabac à l'aide d'une solution alcoolique du produit ou de la composition aromatisante. On peut également utiliser comme solvant des mélanges d'alcool et de propyléneglycol. Les proportions pour l'emploi du composé dont l'utilisation constitue l'objet de la présente invention peuvent varier dans de larges limites. Ces proportions varient selon l'effet organoleptique recherché et selon la provenance du tabac auquel l'ingrédient aro- matisant susmentionné est ajouté. Par exemple, des effets aromatisants intéressants peuvent être obtenus avec des quantités de l'ordre de 1 à 1000 ppm, quantités basées sur le poids de la ma tiére aromatisée. Des effets plus particuliers cependant peuvent être obtenus avec des proportions de 5 et même 10%. On utilise de préférence des quantités comprises entre 10 et 200 ppm. Dans tous les cas, les limites données ci-dessus peuvent bien entendu varier selon l'effet aromatisant recherché. La 3.5.5-triméthyl-2,3-époxycyclohexane- I ,4-dione est un composé nouveau et peut être préparée selon la méthode donnée ci-après: 2 ml d'une solution aqueuse de NaOH 6N ont été ajoutés durant 15 mn, à 15"C, à un mélange de 3,7 g de 3,5,5-triméthylcy clohex-2-ène-1,4-ione et 8,3 ml d'une solution de peroxyde d'hy drogéne à 30% dans 27 ml de méthanol. Le mélange réactionnel a ensuite été agité durant 3 heures à 20-25 C, puis traité avec de l'eau et extrait à l'éther. Les extraits organiques réunis ont été lavés à l'eau jusqu'à neutralité, séchés sur MgSO4 et évaporés à sec. On obtient ainsi 3,33 g (82%) du produit désiré, éb. 40 C/0,001 Torr. IR: 1715cm-1; RMN (CCI4): 1,05 (3H, s); 1,25 (3H, s); 1,50 (3H, s); 2,08 (1H, d, 5=13 cps); 3,09(1H, d, J=13 cps); 3,47 (1H, s) ppm; SM: M+ = 168;mle:56. La 3,5,5-triméthylcyclohex-2-ène-1,4-dione, utilisée comme produit de départ dans la préparation ci-dessus, peut être obtenue selon le procédé décrit dans Tetrahedron, Suppl. 8/1, p. 1(1966). La présente invention sera mieux illustrée par les exemples suivants. Exemple I 7 g d'une solution à 1% de 3,5,5-triméthyl-2,3-époxycyclohexane-1,4-dione dans l'alcool éthylique à 95% ont été dispersés sur 100 g d'un mélange de tabacs du type american blend . Le tabac ainsi aromatisé a ensuite été utilisé pour la manufacture de cigarettes test dont la fumée a été soumise à une évaluation organoleptique, après comparaison de celle-ci avec la fumée de cigarettes témoin , non aromatisées, dont le tabac avait été préalablement traité par de l'alcool éthylique à 95%. Le groupe d'experts requis a été unanime à déclarer que la fumée des cigarettes test possédait un caractère plus doux et présentait une note herbeuse rappelant le goût de la fumée de cigare. D'autres échantillons ayant une concentration variée, comprise entre I et 10 g de solution alcoolique à 1%, ont été également évalués selon le procédé de l'exemple ci-dessus. Des effets analogues ont été observés. Exemple 2 On a préparé diverses compositions aromatiques en mélangeant les produits suivants (parties en poids): A (témoin) B (test) C (test) p-éthylguaïacol 1%* 10 10 20 Guaïacol 1% * 15 15 30 3,5,5-triméthyl-2,3-époxy cyclohexane-l ,4dione 10% * 30 30 30 Alcool éthylique 95% 975 945 920 1000 1000 1000 * Dans l'alcool éthylique à 95%. Les compositions A, B et C ont ensuite été comparées entre elles sous forme d'une solution de 0,06 g d'arôme dans 60 ml d'un sirop de sucre (préparé par dissolution de 650 g de sucrose dans 1350 ml d'eau). Les sirops ainsi aromatisés ont ensuite été soumis à l'évaluation organoleptique d'un groupe d'experts. Ceux-ci ont été unanimes à déclarer que le sirop contenant la composition B possédait une note plus diffuse que celui contenant A; de plus le caractère typiquement phénolique de ce dernier sirop était parfaitement masqué. En utilisant la composition C, on a obtenu un effet identique, quoique moins prononcé. Les arômes A, B et C ont encore été comparés entre eux sous forme d'une solution de 0,06 g d'arôme dans 60 ml de solution saline (préparée par dissolution de 0,5 g de NaCI dans 100 ml d'eau). Dans ce cas également, les experts ont unanimement déclaré que les breuvages aromatisés avec B et C ne présentaient pas le caractére phénolique montré par le breuvage contenant A. Exemple 3 On a préparé plusieurs compositions aromatisantes en mélangeant les composés suivants (parties en poids): A (témoin) B (test) C (test) P-éthylgualacol 1%* 10 10 20 Gualcol 1%* 15 15 30 3,5,5-triméthyl-2,3-époxycyclo hexane-1P-dione 10%* - 30 30 Alcool éthylique 95% 975 945 920 1000 1000 1000 *dans ralcool éthylique à 95% Les arômes ci-dessus ont ensuite été comparés entre eux dans des sirops et des solutions salines comme décrit précédemment à l'exemple 2. L'examen organoleptique a également montré que les boissons aromatisées avec B et C ne possédaient plus la note phénolique caractérisant les boissons contenant A. Ces boissons présentaient de plus une note mieux arrondie et un arôme plus harmonieux.

- REVENDICATIONUtilisation de la 3,5,5-triméthyl-2,3-époxycyclohexane-1,4- dione d'origine synthétique comme agent aromatisant pour la préparation de compositions aromatisantes et pour l'aromatisation d'aliments solides et liquides pour l'homme et les animaux, de boissons non nutritives et du tabac.SOUS-REVENDICATION Utilisation suivant la revendication, caractérisée en ce que les compositions, les aliments, les boissons ou le tabac contiennent des quantités organoleptiquement appréciables de dérivés phénoliques.
