Abstract
a presente invenção se refere a um produto de confeitaria congelado que não precisa incluir os ingredientes de origem animal, tais como os ingredientes do leite, e ainda que fornece a experiência sensorial indulgente do sorvete. a experiência é refletida em excelente textura, sensação de boca e perfil de derretimento. as composições da presente invenção incluem um óleo saturado, tal como o óleo de coco, uma proteína vegetal, tal como a proteína de ervilha, sólidos de noz, tais como os sólidos de amêndoa, sólidos de açúcar e, opcionalmente, um emulsionante e/ou um estabilizante. mais especificamente, o produto de confeitaria congelado da presente invenção compreende de 6 a 10% em peso de óleo saturado, de 0,5 a 4% em peso de proteína vegetal, de 1 a 8% em peso de sólidos de nozes, de 10 a 25% em peso de sólidos de açúcar e, de 0 a 1% em peso de emulsionante e, de 0 a 1% de estabilizante.
