a presente invenção se refere a uma formulação nutricional do tipo iogurte, nata, nata para sobremesa, sobremesa congelada ou sorvete industrial e queijo, e contendo um isolado de proteína de ervilha, caracterizada por o isolado de proteína de ervilha: o apresentar entre 0,5 e 2% de aminoácidos livres, o apresentar uma viscosidade: ¿ de 13 a 16,10-3 pa.s. a uma taxa de cisalhamento de 10 s-1, ¿ de 10 a 14,10-3 pa.s. a uma taxa de cisalhamento de 40 s-1, e ¿ de 9,8 a 14,10-3 pa.s. a uma taxa de cisalhamento de 600 s-1. o apresentar uma solubilidade: ¿ de 30 a 40% em zonas de ph de 4 a 5 ¿ de 40 a 70% em zonas de ph de 6 a 8. ela se refere igualmente à utilização desta formulação nutricional como fon-te protéica única ou como suplemento dietético destinado aos lactentes, crianças e/ou adultos.
