Abstract

a presente invenção se refere a uma formulação nutricional que contém um isolado de proteína de ervilha caracterizado por o isolado de proteína de ervi-lha: o ter entre 0,5 e 2% de aminoácidos livres, o ter uma viscosidade: ¿ de 13 a 16×10-3 pa.s. a uma taxa de cisalhamento de 10 s-1, ¿ de 10 a 14×10-3 pa.s. em taxa de cisalhamento de 40 s-1, e ¿ de 9,8 a 14×10-3 pa.s. a uma taxa de cisalhamento de 600 s-1, o ter uma solubilidade: ¿ de 30 a 40% em zonas de ph de 4 a 5 ¿ de 40 a 70% em zonas de ph de 6 a 8. a invenção também se refere ao uso dessa formulação nutricional como uma fonte de proteína única ou como um suplemento alimentar, destinado a bebês, crianças e/ou adultos.
