Abstract
A vegan powder composition suitable for preparing a beverage, wherein the vegan powder composition comprises pea protein hydrolysate, rice protein hydrolysate, cold-soluble hydrocolloids in particular selected from xanthan gum and guar gum, and high-intensity sweeteners, in particular selected from steviol glycosides, stevia extracts, and sucralose. The beverage is preferably a sports beverage for amateur or professional athletes or body builders.

PLANT-BASED PROTEIN POWDERS FOR BEVERAGES

FIELD OF THE INVENTION
[0002] The invention relates to vegan powder compositions suitable for preparing beverages, in particular sports beverages suitable for athletes looking to build muscle after an intense training session or for quick energy intake before or during intense training sessions.
BACKGROUND OF THE INVENTION
[0003] One of the current focus areas of the sports beverage market is on protein-rich powders that allow the consumers to prepare beverages and shakes themselves. A predominantly protein-based beverage or shake is preferred by the athlete and body builder compared to beverages that are predominantly carbohydrate-based, because of the role the amino acids in the protein play in the building and repair of muscle tissue that breaks down during strenuous exercise. For a body builder in particular, a higher protein intake is required to achieve a net positive gain in muscle mass.
[0004] Without being bound by theory, a prominent theoretical basis for rate-limitation in muscle anabolism is the "depletion theory." According to this theory, the extent and rate of muscle build-up is limited by whichever nutrient is depleted first in the nutrient supply to the growing muscle tissue. Hence weight trainers and other athletes who seek muscle growth and repair commonly take protein dietary supplements. These protein dietary supplements commonly include concentrated or isolated whey or soy proteins as their main component. The whey and soy proteins are usually obtained as byproducts of cheese or of soybean oil manufacture, respectively. [0005] A problem in the current art is that the number of vegetarian and vegan consumers is increasing while most high quality protein sources are derived from animal ingredients, specifically whey proteins, milk proteins, and egg proteins. Although animal proteins have a high protein efficiency ratio (PER) compared to plant proteins, it is widely believed by consumers that these animal proteins can also impose more stress on the kidneys than the plant proteins. Thus, the current trend among both regular and professional athletes is a preference for plant-based vegan alternatives. However, vegan protein sources are often highly deficient in multiple amino
acids. Moreover, dependence on a single source of protein supply, such as whey or soy protein isolate or concentrate, is considered undesirable in the art for multiple reasons, including commercial ones.
[0006] Furthermore, for the specific purpose of muscle anabolism, it would be desirable and would attain better results to have a dietary supplement of a composition that, as far as amino acids are concerned, most closely matches the composition of human muscle. In accordance with the depletion theory of anabolism and practical considerations also, the lack or mismatch in percentage of certain amino acids between the respective protein supplement and human muscle is likely to limit the rate at which human muscle anabolism could be obtained. Branch chained amino acids also play an important role in muscle growth. So to get to the right amino acid profile, producers were adding expensive individual amino acids as ingredients to their vegan products, as the plant protein on its own does not provide the necessary dosage.
[0007] An additional problem when using only plant-based proteins is the taste and mouthfeel. Most plant proteins are less soluble than whey proteins, so these have a negative impact on the mouthfeel (graininess, grittiness). This lack in solubility is an additional problem. Hydrolyzing plant proteins may generally increase their solubility. However, plant protein hydrolysates are known to generally suffer from very bitter and unacceptable taste profiles. This means that masking agents are generally required in any composition comprising hydrolyzed plant proteins as well.
[0008] As a third point many of these sports powders don't contain added sugars. The use of high intensity sweeteners is therefore needed and often artificial ones are used.
[0009] There is therefore an unmet need in the art for a high-protein powder composition suitable for preparing beverages that closely matches the amino acid composition of human muscle tissue, is not deficient in any amino acids, is completely vegetarian, does not depend on a single protein source, does not contain added sugars, has a good taste and mouthfeel, and easily soluble in an aqueous medium (such as water, fruit juices or plant-based milks). The composition of the present invention meets at least one of these needs.
SUMMARY OF THE INVENTION
[0010] The present invention relates to predominantly protein-based sports powder compositions suitable for preparing beverages that use vegan ingredients devoid of animal protein and added sugar.
[0011] The inventors have found that the combination of hydrolyzed pea protein and hydrolyzed rice protein offers the ability to get to the required amount of proteins per serving, whilst having the right amino acid profile needed for athletes to rebuild and maintain muscles mass. Hydrolyzed pea protein and hydrolyzed rice protein in combination provide both branch chained amino acids (BCAA) and leucine, which play an important role in muscle growth.
[0012] Furthermore the combination of hydrolyzed pea protein and hydrolyzed rice protein results in a more soluble powder composition, which can be more easily dissolved in an aqueous medium (e.g. water, fruit juice, plant-based milks/beverages and the like).
[0013] Although plant protein hydrolysate often have an undesired bitter after-taste, the inventors have found that by blending with steviol glycosides and sucralose as sweeteners and a blend of galactomannans for stability, the product achieves a taste improvement that stands out from current solutions on the market, without requiring any specific taste masking agents.
DETAILED DESCRIPTION OF THE INVENTION
4,1, Definitions
[0014] As used herein, the terms below have the following meanings:
The term “powder composition suitable for preparing beverages” as used herein refers to a powder or granulate-form composition to be reconstituted, dissolved, suspended in or mixed with a liquid, i.e., an aqueous medium such as (flavored) water, fruit juice, or plant-based milks, before consumption. Such products are sometimes also referred to as a drink mix, powdered drink mix, instant drink mix, powdered beverage or drink, ready -to-mix beverage, dry beverage formulations. [0015] The term "beverage" as used herein refers to a composition to be consumed orally in liquid form.
[0016] A "non-dairy beverage" refers to a beverage that does not contain any dairy milk proteins. The term drink and beverage and shake may be used interchangeably herein.
The beverage according to the invention can be any kind of drink, beverage, shake or the like, including but not limited to:
- a sports beverage for amateur or professional athletes and body builders;
- a nutritional beverage for the sick (whether due to chronic or acute illness), the elderly, or persons with a disability;
- a preoperative and postoperative nutritional beverage, which refers to a beverage to be consumed before and/or after surgery to improve chances of healing more quickly;
- an infant formula-based beverage, which refers to a liquid food as a breast milk replacement for babies under the age of 12 months;
- a "follow-up formula" (or also known as "follow-on formula") beverage, which refers to a liquid food for use in a weaning diet for young children from the age of 12 months;
- "growing-up drink", which is generally anutritional drink intended for children generally aged 1-8 years.
[0017] The beverage can also be a hypoallergenic beverage, the term "hypoallergenic" means herein that such a beverage is unlikely to cause allergic reactions.
[0018] By cold-soluble hydrocolloids it is meant a hydrocolloid soluble in water below 30°C.

4,2, Vegan powder composition
[0023] In accordance with the following considerations a vegan powder composition is provided in accordance with the present invention that comprises the following combination of ingredients:
20 to 80wt% pea protein hydrolysate,
1 to 20wt% rice protein hydrolysate,
0.1 to 5wt% of one or more cold-soluble hydrocolloids, in particular selected from galactomannans (e.g., selected from xanthan gum and/or guar gum), CMC (carboxymethyl cellulose), alginate, and pectin LM (low-methoxyl pectin),
0.05 to 5wt% of one or more high intensity sweeteners, in particular selected from steviol glycosides, stevia extracts, and sucralose,
Optionally, 1 to 50wt% of a complex carbohydrate, such as maltodextrin,
Optionally, 1 to 10wt% of one or more mono- or disaccharides, such as fructose, glucose, or sucrose,
Optionally, 1 to 25wt% of cocoa powder,
Optionally, 0.1 to 5wt% of a flavoring agent, such as artificial or natural vanilla flavor, and
Optionally, 0.01 to 2wt% of salt.
Pea protein hydrolysate and rice protein hydrolysate
[0024] Mixing together hydrolyzed pea proteins and hydrolyzed rice proteins is beneficial, because pea proteins and rice proteins have complementary amino acids profiles. Pea is typically rich in lysine, whereas the amounts of methionine and cysteine in pea are rather low. On the other hand, rice is rich in methionine and cysteine, but have lower amounts of lysine. Thus, hydrolyzed pea and hydrolyzed rice proteins together can be mixed together to optimize the amino acid content of the overall protein component. Thus, it is not required to add any free amino acids to the powder composition, which are undesirable due to their often bitter and astringent taste, as well as being rather expensive for manufacturers.
[0025] Furthermore, the powder composition is advantageously hypoallergenic, since both pea and rice proteins, including their hydrolyzed forms, are characterized by a low allergenicity.
[0026] However, both hydrolyzed pea and hydrolyzed rice proteins often impart a significant bitter, burnt, and astringent taste arising from the hydrolysis of the proteins. However, the inventors have surprisingly discovered that by using the powder composition according to the invention in combination with the other ingredients as mentioned, no further masking agents are required. Furthermore, by using pea and rice proteins in their hydrolyzed forms, the powder composition has an improved mouthfeel, less graininess and grittiness, and it can be more easily solubilized when reconstituted with a liquid to prepare the beverage.
[0027] The pea protein hydrolysate preferably has a protein content of at least 70wt%, preferably at least 75 wt%, most preferably at least 79wt% percent, most preferably about 80wt% percent based on the total weight of the pea protein hydrolysate.
[0028] The rice protein hydrolysate preferably has a protein content of at least 70wt%, preferably at least 75 wt%, most preferably at least 79wt% percent, most preferably about 80wt% percent based on the total weight of the rice protein hydrolysate.
[0029] Protein content can be measured according to the DUMAS method.
[0030] The hydrolyzed proteins may be partially or extensively hydrolyzed. The degree of hydrolysis (DH) is defined as the proportion of cleaved peptide bonds in the hydrolysate. This can be measured using the O-Phthaldialdehyde (OP A) method.
[0031] The pea protein hydrolysate preferably has a degree of hydrolysis of 3 to 25%, 4 to 25%, 5 to 25%, 5 to 20%, 5 to 15%, or 5 to 10%. These values are combinable to make any ranges. A preferred pea protein hydrolysate is Radipure® E8001G commercially available from Cargill.
[0032] The rice protein hydrolysate preferably has a degree of hydrolysis of 2 to 25%, 3 to 25%, 4 to 25%, yet 5 to 20%, 5 to 15%, or 5 to 10%. These values are combinable to make any ranges. A preferred rice protein hydrolysate is Hyprol™ rice protein commercially available from Kerry.
[0033] The vegan powder composition according to the invention comprises from 20, 25, 30, 35, 40, 45, 48 or 50wt% and up to 80, 75, 70, 65, 60, 55 or 52wt% pea protein hydrolysate. These values are combinable to make any ranges e.g., from 20 to 80wt%, from 20 to 52wt%, from 40 to 80wt%, from 45 to 75wt% etc.
[0034] The vegan powder composition according to the invention comprises from 1, 2, 3, 4, 5, 6 or 7wt% and up to 20, 19, 18, 17, 16, 15, 14, 13, 12, 11, 10 or 9wt% rice protein hydrolysate. These values are combinable to make any ranges e.g., from 1 to 20wt%, from 1 to 15wt%, from 3 to 12wt%, from 4 to 9wt% etc.
[0035] The vegan powder composition according to the invention preferably has a weight ratio of rice protein hydrolysate to pea protein hydrolysate of 0.1:20, preferably 0.5:15, more preferably 0.5:10, most preferably 1:10.
[0036] The vegan powder composition according to invention preferably has a protein content coming only from the rice protein hydrolysate and pea protein hydrolysate. No other plant proteins are added.
Cold-soluble hydrocolloids
[0037] The vegan powder composition according to the invention comprises one or more cold-soluble hydrocolloids (i.e., hydrocolloids soluble in water below 30°C). These can be
galactomannans selected from xanthan gum and guar gum and combinations thereof. Other known cold-soluble hydrocolloids that can be used in this invention are carboxymethyl cellulose (CMC), alginate, and pectin LM (low-methoxyl pectin).
[0038] The vegan powder composition according to the invention preferably comprises both xanthan gum and guar gum as the cold-soluble hydrocolloids. Preferably no other hydrocolloids are included in the composition.
[0039] The vegan powder composition according to the invention comprises from 0.1 , 0.2 or 0.5wt% and up to 5, 4, 3, 2 or lwt% cold-soluble hydrocolloids. These values are combinable to make any ranges e.g., from 0. 1 to 5wt%, from 0. 1 to 3wt%, from 0.2 to 5wt%, from 0.5 to 4wt% etc. These are preferably xanthan gum and guar gum in combination. The weight ratio of xanthan gum to guar gum is preferably around 1: 1 but can vary according to needs.
[0040] Lygomme™ KCT 58 is a commercially available blend of xanthan gum and guar gum from Cargill that can be used in the present invention.
High-intensity sweeteners
[0041] The powder composition of the present invention comprises one or more high- intensity sweeteners.
[0042] These can be selected from any known high-intensity sweeteners that have zero calories. Examples include in particular selected from steviol glycosides, stevia extracts, and sucralose. Preferably, the invention uses a combination of steviol glycosides and sucralose.
[0043] The vegan powder composition according to the invention comprises from 0.05, 0.07, 0.08, 0.09 or 0.1wt% and up to 0.4, 0.5, 0.6, 0.7, 1, 1.5, or 2wt% high-intensity sweeteners, preferably steviol glycosides and sucralose in combination. These values are combinable to make any ranges e.g., from 0.05 to 1.5wt%, from 0.09 to lwt%, from 0.07 to 1.5wt%, from 0.09 to 0.5wt% etc.

The vegan powder composition may comprise from 1, 2, 5, 10, 15, 20wt% and up to 50, 45, 40, 35wt% of a complex carbohydrate, such as maltodextrin. These values are combinable to make any ranges.
Other atributes
[0048] The vegan powder composition according to the invention preferably does not comprise any added fat.

Uses
[0052] Use of the combination of pea protein hydrolysates and rice protein hydrolysates improves the sensory properties (e.g., improved mouthfeel, reduced gritiness, reduced graininess) of a powdered beverage composition when reconstituted in a liquid, in comparison to a powdered beverage composition comprising non-hydrolyzed pea protein and/or non-hydrolyzed rice protein. [0053] The weight ratio of rice protein hydrolysate to pea protein hydrolysate is 0.1:20, preferably 0.5:15, more preferably 0.5:10, most preferably 1:10.

Example 1
[0190] Sensory evaluation of sports powder beverage using hydrolyzed pea proteins and hydrolyzed rice proteins.
[0191] Two powder beverage compositions were prepared by blending the following ingredients:
[0192] These were compared to commercially available vegan powder beverages including the products “My Protein™” and “My Vegan™” available from the HUTT Group.
A sensory panel of 20 people blind tasted the Rapid Recovery and Muscle Rebuild beverages in comparison with the commercially available references. Both scored better than the market references. Even without the masking agents, the inventors have created a composition with a better performance in taste profile than the plant-based commercial products.
Claims
1. A vegan powder composition suitable for preparing a beverage, wherein the vegan powder composition comprises:
- 20 to 80wt% pea protein hydrolysate,
- 1 to 20wt% rice protein hydrolysate,
- 0.1 to 5wt% of one or more cold-soluble hydrocolloids, and
- 0.05 to 2wt% of one or more high-intensity sweeteners, in particular selected from steviol glycosides, stevia extracts, and sucralose.
2. The vegan powder composition according to claim 1 comprising 30 to 80wt% pea protein hydrolysate, preferably 40 to 75wt% pea protein hydrolysate.
3. The vegan powder composition according any one of the previous claims comprising 1 to 15wt% rice protein hydrolysate, preferably 3 to 10wt% rice protein hydrolysate.
4. The vegan powder composition according any one of the previous claims wherein the one or more cold-soluble hydrocolloids are selected from galactomannans, CMC (carboxymethyl cellulose), alginate, and pectin LM (low-methoxyl pectin).
5. The vegan powder composition according to claim 4 wherein the galactomannans are selected from one or more of xanthan gum and guar gum.
6. The vegan powder composition according to claim 4 or 5 wherein the cold-soluble hydrocolloids in the composition are xanthan gum and guar gum.
7. The vegan powder composition according to any one of the previous claims comprising 0.2 to 2wt% cold-soluble hydrocolloids, preferably xanthan gum and guar gum.
8. The vegan powder composition according to any one of the previous claims wherein the high-intensity sweeteners are steviol glycosides and sucralose.
9. The vegan powder composition according to any one of the previous claims comprising 0.07 to lwt% high-intensity sweeteners, preferably steviol glycosides and sucralose.
10. The vegan powder composition according to any one of the previous claims comprising a complex carbohydrate, preferably maltodextrin.
11. The vegan powder composition according to claim 10 comprising 1 to 50wt% of a complex carbohydrate, preferably maltodextrin.
12. The vegan powder composition according to any one of the preceding claims comprising one or more of cocoa powder, flavoring agents, and salt.
13. The vegan powder composition according to any one of the preceding claims, wherein the pea protein hydrolysate has a degree of hydrolysis of about 3 to 25%.
14. The vegan powder composition according to any one of the preceding claims, wherein the rice protein hydrolysate has a degree of hydrolysis of about 2 to 25%.
15. The vegan powder composition according to any one of the preceding claims, wherein the composition does not comprise any
- added fat, and/or
- added mono- or disaccharides, and/or
- added free amino acids, and/or
- added starch.
