Abstract
La presente invención se refiere a una formulación nutricional de tipo yogur, nata, natillas, postre helado o sorbete y queso y que contiene un aislado de proteínas de guisante, caracterizada por que el aislado de proteínas de guisante: o presenta entre el 0.5 y el 2 % de aminoácidos libres, o presenta una viscosidad: o de 13 a 16.10-3 Pa.s. a una tasa de cizallamiento de 10 s-1, o de 10 a 14.10-3 Pa.s. a una tasa de cizallamiento de 40 s-1, y o de 9.8 a 14.10-3 Pa.s. a una tasa de cizallamiento de 600 s-1; o presenta una solubilidad: o del 30 al 40 % en zonas de pH de 4 a 5 o del 40 al 70 % en zonas de pH de 6 a 8; también se refiere a la utilización de esta formulación nutricional como fuente proteica única o como complemento alimenticio, para lactantes, niños y/o adultos.
