Abstract
a presente invenção refere-se a um doce congelado não lácteo compreendendo de 30 a 60%, em peso, de creme de coco com base no peso total do doce congelado, em que 20 a 30%, em peso, do creme de coco, é gordura e o creme de coco tem um teor de sólidos total de 25 a 40%, em peso, 15 a 40%, em peso, de sólidos isentos de gordura e água, e sendo isento de estabilizantes ou compreendendo como o único estabilizante um estabilizante à base de fruta ou vegetal ou uma combinação dos mesmos. a invenção refere-se também a um processo para preparação de um doce congelado não lácteo.
