Abstract
"MéTODO PARA PREPARAR UM PRODUTO ALIMENTìCIO GELEIFICADO". Um produto alimentício geleificado é preparado pela abertura de um recipiente fechado de gel termorreversível (A) que é baseado em um agente geleificante de polissacarídeo, aquecimento do gel (A) para uma temperatura de pelo menos 60<198>C, combinação de gel (A) com pelo menos um componente alimentício proporcionador de gosto ou de flavor antes, durante ou após o aquecimento, para proporcionar uma composição de gel combinada (B) que compreende pelo menos 1% em peso de proteína, de tal modo que o gel (A) constitua 50-98% em peso da composição (B), e permissão de que a composição de gel combinada (B) se endureça dentro de um molde.
