Abstract

Un producto alimenticio gelificado es preparado al calentar gel cortado termo-reversible que se basa en agente gelificante de polisacarido no de almidon y que comprende al menos 1% en peso de proteina globular, a una temperatura de 60-95 degree C y que permite que el gel cuaje en un molde bajo condiciones quiescentes. Tambien se proporciona un producto semi-terminado que comprende un recipiente cerrado que contiene gel cortado termo-reversible, dicho gel cortado se basa en un agente gelificante de polisacarido no de almidon y comprende al menos 1% en peso de proteina globular, dicho recipiente es provisto con instrucciones al usuario para calentar el gel cortado a una temperatura de 60-95 degree C y permitir que el gel cuaje.
