Abstract
"AROMA DE CAFé ESTABILIZADO ISENTO DE ESTABILIZADOR". A presente invenção refere-se a um processo para a estabilização de um componente fornecedor de aroma de café contra a perda ou a degradação de seu sabor ou de características sensoriais por associação do componente fornecedor do aroma de café com um agente estabilizador em uma quantidade eficaz para reduzir ou evitar a perda ou a degradação das características do sabor ou sensoriais do componente e formar um componente fornecedor de aroma de café estabilizado seguido pela remoção do agente estabilizador do aroma de café estabilizado antes da embalagem para a armazenagem ou antes da adição do aroma de café estabilizado a um produto alimentício ou a uma bebida. O componente fornecedor de aroma de café estabilizado resultante é essencialmente isento do agente estabilizador e pode ser incorporado a um produto alimentício ou a uma bebida com as características do sabor ou sensoriais iniciais do componente estabilizado sendo mantidas durante um período de tempo de pelo menos dois meses durante de armazenagem do produto alimentício ou da bebida.
