Abstract
"INGREDIENTE ALIMENTAR FUNCIONAL COMPREENDENDO MATERIAL DE PROTEìNA VEGETAL NãO REFINADO". é fornecido um ingrediente alimentar funcional inovador. O ingrediente alimentar funcional contém um material de proteina vegetal não refinado. Em uma realização, o material de proteína vegetal não refinado do ingrediente alimentar funcional possui indice de solubilidade em nitrogênio de cerca de 30% a cerca de 80% e pelo menos uma das seguintes propriedades: índice de tolerância de sal de cerca de 30% a cerca de 80%; capacidade de hidratação em água de pelo menos quatro vezes o peso do material de proteina vegetal não refinado; ou viscosidade de pelo menos 500 centipoise sob temperatura de 15<198>C a 25<198>C. Em outra realização, o material de proteina vegetal não refinado do ingrediente alimentar funcional possui pelo menos uma das seguintes propriedades: peso de gel de pelo menos 30 gramas sob temperatura de cerca de 15<198>C a cerca de 25<198>C em 148 ml de calda aquosa contendo cinco partes de água por parte de material de proteina vegetal não refinado, em peso; ou resistência de gel refrigerado de pelo menos 50 gramas, quando combinado com cinco partes de água por parte de material de soja, em peso. O ingrediente alimentar funcional inovador pode ser obtido através da hidratação de um material de proteina vegetal não refinado particulado ou em flocos com pelo menos duas partes de água por parte de material de proteína vegetal não refinado, em peso, desnaturação parcial do material de proteína vegetal não refinado hidratado e secagem do material de proteína vegetal não refinado, parcialmente desnaturado e hidratado. Em realização particularmente preferida, o material de proteina vegetal não refinado é um material de proteína de soja não refinado, de maior preferência farinha de soja, farelo de soja, massa de soja ou flocos de soja.
