Reivindicación 1: Una D-psicosa 3-epimerasa que consiste en la secuencia de aminoácidos de SEQ ID Nº 1. Reivindicación 3: Un polinucleótido que codifica la D-psicosa 3-epimerasa de la reivindicación 1. Reivindicación 5: Un microorganismo en el que se introduce el vector recombinante de la reivindicación 4. Reivindicación 6: Una composición para preparar D-psicosa que comprende: la D-psicosa 3-epimerasa de la reivindicación 1, un microorganismo que expresa la D-psicosa 3-epimerasa, o un cultivo del microorganismo. Reivindicación 8: Un método para preparar D-psicosa que comprende: contactar la D-psicosa 3-epimerasa de la reivindicación 1, un microorganismo que expresa la D-psicosa 3-epimerasa, o un cultivo del microorganismo con D-fructosa.
