Abstract

Formulación de chocolate con algarroba, con bajo contenido de cafeína y teobromina, sin leche de origen animal, con o sin agregado de azúcares, sin gluten, sin soja y con y sin fibras. Producto a base de cacao y de algarroba complementado alternativamente con grasa de coco, derivados de arroz, harina de batata y azúcares con bajo índice glucémico, obteniendo un alimento con las características nutricionales especiales para satisfacer a un segmento de consumidores con restricciones alimenticias debido a problemas de salud o a su filosofía de vida (light, naturistas, fisicoculturistas, etc.) obteniendo atributos de color, aroma y sabor característicos de los productos a base de cacao y algarroba.
