Abstract
La invencion se refiere a un método para preparar productos alimenticios por co-extrusion, que comrpende producir el producto alimenticio a partir de una masa de relleno y una masa de envoltura la cual es líquida con anterioridad a la co-extrusion, donde la masa de envoltura comprende al menos colágeno y alginato. La invencion también se refiere a un producto alimenticio obtenido por co-extrusion, que comprende una masa de carne y una envoltura, donde la envoltura comprende al menos colágeno y alginato.
