Abstract
Se relaciona con un extracto de cacao de bajo contenido graso que posee un alto nivel de saborizantes de cacao y precursores del sabor a cacao y un alto nivel de antioxidantes. También se relaciona con un concentrado con sabor a cacao, un concentrado antioxidante y al producto alimenticio que los contiene. También se refiere al uso de granos fermentados in vitro como granos naturalmente fermentados. El proceso empleado para obtener tales extractos comprende las etapas de colocar las semillas de cacao en una solución de ácido acético, calentar la mezcla y concentrar los sólidos de la mezcla después de haber removido las semillas.
