Abstract

Se trata de un sustituto de la crema que comprende de 5% a 40% en peso de manteca, de alrededor de 0.05% a alrededor de 2% en peso de un ácido aceptablepara alimentos, de alrededor de 0.25% a alrededor de 5% en peso de un agente espesante yalrededor de 4% de una proteína alimenticia, con respecto al pesototal del sustituto de crema, junto con una cantidad suficiente de agua para completar el total de 100% en peso. También se propone la preparacion de dichosustituto en reemplazo totalo parcial de la crema. Se reivindican además los productos alimenticios que incluyen dicho producto.
