Abstract
Un producto alimenticio que comprende 50 a 90% en peso de almidón, 1 a 50% en peso de proteína, una cantidad efectiva de un agente que agrega proteína y 10% en peso o menos de trigo, y en donde además se gelatiniza entre 2 y 35% de la cantidad de almidón en el producto. También se provee un procedimiento para elaborar los productos. Los productos tienen una buena calidad de proteína y buena resistencia a la pérdida de nutrientes durante la cocción. Son especialmente adecuados para productos alimenticios de países en desarrollo en donde es vital la buena nutrición.
