Abstract

Se define un chocolate aglomerado con un contenido reducido de grasa que tiene un tamano de partícula promedio de hasta 5 mm y que contiene desde 18 hasta24% en peso de grasa en base en el peso total del chocolate. Entre las aplicaciones del productose caracteriza una barra de chocolate con leche, con uncontendio reducido de grasa, que comprende una mezcla desde 60 hasta 90% de un chocolate con un contenido reducido de grasa, que contiene menos de 27% de grasay desde 40 hasta 10% de un chocolate aglomerado con un contenido reducido de grasa, que tiene un tamano de partícula promedio de hasta 5 mm y que contienedesde 18 hasta 24% en peso de grasa, en base en el peso total de chocolate. Los productos tienen una textura crujiente unica, se funden fácilmente y tienen unatextura suave en la boca.
