Abstract

Método y aparato para fabricar artículos de confitería congelados por moldeo que comprenden una cáscara o cubierta de chocolate y un relleno de unacomposición congelada. El método comprende moldear las cáscaras con paredes delgadas de chocolate dosificando chocolate líquido dentro de los alveólos demoldes previamente enfriados, y luego succionar el chocolate todavía líquido que esté en el centro. El aparato comprende un dispositivo de succión queacompana a los moldes en un movimiento contínuo de traslación durante la fase de succión existiendo un movimiento combinado tanto recíproco como de arribahacia abajo.
