Description
本发明涉及茶叶制备技术领域,尤其涉及一种红茶及其制备方法。
红茶在加工过程中发生以茶多酚酶促氧化为中心的化学反应,鲜叶成分变化较大,茶多酚减少90%以上,产生了茶黄素、茶红素等新成分和香气物质,具有红茶、红汤、红叶、香甜味醇的特征。
红茶属全发酵茶,是以适宜的茶树新牙叶为原料,经萎凋、揉捻、发酵、干燥等一系列工艺过程精制而成的茶。萎凋是红茶初制的重要工艺,红茶在初制时称为“乌茶”。
而通常我们品尝红茶就是为了舒缓心情,缓解疲劳,而现有的红茶对去除疲劳的作用并不佳,而且其抗衰老的能力也有待改善。因此,我们提出了一种红茶及其制备方法用于解决上述问题。
发明内容
本发明的目的是为了解决现有技术中存在的缺点,而提出的一种红茶及其制备方法。
一种红茶,按质量份计包括以下原料:甘草2~3份、罗望子胶2~4份、酒石酸1~3份、刺梨叶1~3份、枸橼酸钠2~4份、桑白皮2~5份、银杏叶1~3份、人参叶4~6份、淡竹叶4~6份、绞股蓝3~7份、抗疲劳提取液3~9份以及抗衰老添加液3~9份;
其中,抗疲劳提取液由五味子、石斛和树莓多糖为原料混合制备 而成,抗衰老添加液由维生素E和苦瓜提取物为原料混合制备而成。
优选的,所述五味子、石斛和树莓多糖的混合质量比为1:1:2。
优选的,所述树莓多糖的制备方法为:取干燥树莓,经乙醚脱脂后,用浓度75%~95%v/v乙醇提取,过滤,滤渣加水提取,取水提液浓缩后,加乙醇至含醇量达到75%~85%,冷却、静置,最后取得固形物即为树莓多糖。
优选的,所述抗疲劳提取液的提取方法为:按量称取五味子、石斛和树莓多糖,并将其烘干粉碎,并分别用95%酒精常温下萃取3~5天,获得3份提取液,将3份提取液混合离心后,于45℃~55℃减压蒸馏,将提取液中的酒精蒸发,然后用蒸馏水定容到质量浓度为1g/mL,即得抗疲劳提取液。

S2、揉捻:将S1摊凉结束的原料叶进行混合并置于搅拌机中,并倒入酒石酸搅拌均匀,在搅拌时,先采用搅拌速度为250~350r/min搅拌20~40min后,随后采用输送带输送至揉捻机中,采用顺时针方向揉捻混合料,揉捻1.5~1.9h后,揉捻完成,待用;
S3、发酵:将罗望子胶与枸缘酸钠混合,添加其总量4%的清水搅拌成液体,再同杀青完成后的茶叶一起置于发酵机中,摊放成厚度为10~15cm,先用氮气将发酵机内空气排出,再令其在氮气的气氛下进行发酵,发酵时添加茶叶总量4%的浓度为1%的葡萄糖和茶叶总量3%的茶氨酸溶液,发酵温度为45℃~65℃,发酵2~3h后,翻抛1~5min,继续整理成10~15cm厚,调整发酵温度为50℃~70℃,发酵4~6h后,结束发酵;
S4、烘干:将发酵结束的茶叶置于烘干机中,采用茶叶从左至右移动式烘干,烘干机中的温度从左至右呈2℃~5℃递增,烘干时,调整茶叶在烘干机中的移动速度,使得从烘干机出口出来的茶叶的水分含量为2~3%即可;
S5、回湿:向烘干后获得的茶叶喷洒喷洒抗疲劳提取液和抗衰老添加液,喷洒速度为0.1~0.3份/min,直至全部喷洒完为止,随后继续搅拌10~20min,再将其置于常温空气中回湿至含水量为5~6%时,在240~280nm的波长范围内用紫外线照射30~60min灭菌并对其进行包装,即获得成品红茶。

相比于现有技术,本发明的有益效果是:
1、在红茶的制备过程中加入由五味子、石斛和树莓多糖为原料制备的抗疲劳提取液,能够有效地改善服用茶水后的疲劳感,使疲劳后的肌肉能够尽快恢复。
2、在红茶的制备过程中加入由维生素E和苦瓜提取物为原料制备的抗衰老添加液,能够有效地抑制单胺氯化酶,增加儿茶酚胺的含量,从而进一步的提高抗衰老氧化效果。
综上所述,本发明不仅能够改善服用者的疲劳感,而且还能有效地改善该茶叶对服用者的抗衰老能力。
下面结合具体实施例对本发明作进一步解说。

其中,抗疲劳提取液由五味子、石斛和树莓多糖为原料混合制备而成,五味子、石斛和树莓多糖的混合质量比为1:1:2,抗衰老添加液由维生素E和苦瓜提取物为原料混合制备而成,维生素E和苦瓜提取物的混合质量比为2:1;
苦瓜提取物的制备方法如下:
①粉碎:将新鲜苦瓜切成均匀薄片,在90-100℃下干燥1-2h去除水分,再粉碎成粒径0-0.5mm的颗粒;
②提纯:将步骤①得到的颗粒放入旋转蒸发仪的蒸发瓶中,按0.3-0.4g/mL的固液比加入无水乙醇,加热2-2.5h至蒸发瓶中酒精的高度与蒸发瓶中物料的高度一致时,取下蒸发瓶,再加入第一次加入量1/3的无水乙醇加热1-1.2h,冷却,取上清液,冷藏,即得苦瓜提取物。
上述树莓多糖的制备方法为:取干燥树莓,经乙醚脱脂后,用浓度75%v/v乙醇提取,过滤,滤渣加水提取,取水提液浓缩后,加乙醇至含醇量达到80%,冷却、静置,最后取得固形物即为树莓多糖。

S4、烘干:将发酵结束的茶叶置于烘干机中,采用茶叶从左至右移动式烘干,烘干机进口温度为30℃~40℃,烘干机出口温度为80℃~90℃,烘干机中的温度从左至右呈2℃~5℃递增,烘干时,调整茶叶在烘干机中的移动速度,使得从烘干机出口出来的茶叶的水分含量为2~3%即可;
S5、回湿:向烘干后获得的茶叶喷洒喷洒抗疲劳提取液和抗衰老添加液,喷洒速度为0.1~0.3份/min,直至全部喷洒完为止,随后继续搅拌10~20min,再将其置于常温空气中回湿至含水量为5~6% 时,在240~280nm的波长范围内用紫外线照射30~60min灭菌并对其进行包装,即获得成品红茶。

上述实施例1~3中,均通过下述步骤进行制备成品红茶,具体过程如下:
S1、萎凋:按配比份取新鲜的甘草、银杏叶、人参叶、淡竹叶、绞股蓝、刺梨叶、桑白皮分别摊放在竹制簸箕上,置于恒温箱中摊凉萎凋至水分含量为35~38%后,摊凉温度控制在32℃;
S2、揉捻:将S1摊凉结束的原料叶进行混合并置于搅拌机中,并倒入酒石酸搅拌均匀,在搅拌时,先采用搅拌速度为300r/min搅拌30min后,随后采用输送带输送至揉捻机中,采用顺时针方向揉捻混合料,揉捻温度控制在55℃,且揉捻时采用的压力为4.0kg/m

S3、发酵:将罗望子胶与枸缘酸钠混合,添加其总量4%的清水搅拌成液体,再同杀青完成后的茶叶一起置于发酵机中,摊放成厚度为10~15cm,先用氮气将发酵机内空气排出,再令其在氮气的气氛下进行发酵,发酵时添加茶叶总量4%的浓度为1%的葡萄糖和茶叶总量3%的茶氨酸溶液,发酵温度为50℃,发酵3h后,翻抛2min,继续整理成10~15cm厚,调整发酵温度为65℃,发酵5h后,结束发酵;
S4、烘干:将发酵结束的茶叶置于烘干机中,采用茶叶从左至右移动式烘干,烘干机进口温度为35℃,烘干机出口温度为85℃,烘干机中的温度从左至右呈3℃递增,烘干时,调整茶叶在烘干机中的移动速度,使得从烘干机出口出来的茶叶的水分含量为2~3%即可;
S5、回湿:向烘干后获得的茶叶喷洒喷洒抗疲劳提取液和抗衰老添加液,喷洒速度为0.1份/min,直至全部喷洒完为止,随后继续搅拌15min,再将其置于常温空气中回湿至含水量为5~6%时,在240~ 280nm的波长范围内用紫外线照射60min灭菌并对其进行包装,即获得成品红茶。
试验一:对该红茶的抗疲劳效果进行实验
对比例1:
一种红茶,按质量份计包括以下原料:甘草2份、罗望子胶2份、酒石酸1份、刺梨叶1份、枸橼酸钠2份、桑白皮2份、银杏叶1份、人参叶4份、淡竹叶4份、绞股蓝3份、抗衰老添加液3份,抗衰老添加液含维生素E和苦瓜提取物。
对比例2:
一种红茶,按质量份计包括以下原料:甘草2.5份、罗望子胶3份、酒石酸2份、刺梨叶2份、枸橼酸钠3份、桑白皮4份、银杏叶2份、人参叶5份、淡竹叶5份、绞股蓝5份、抗衰老添加液6份,抗衰老添加液含维生素E和苦瓜提取物。
对比例3:
一种红茶,按质量份计包括以下原料:甘草3份、罗望子胶4份、酒石酸3份、刺梨叶3份、枸橼酸钠4份、桑白皮5份、银杏叶3份、人参叶6份、淡竹叶6份、绞股蓝7份、抗衰老添加液9份,抗衰老添加液含维生素E和苦瓜提取物。
上述对比例1~3中,均无添加抗疲劳提取液,且通过下述步骤进行制备成品红茶,具体过程如下:
S1、萎凋:按配比份取新鲜的甘草、银杏叶、人参叶、淡竹叶、绞股蓝、刺梨叶、桑白皮分别摊放在竹制簸箕上,置于恒温箱中摊凉 萎凋至水分含量为35~38%后,摊凉温度控制在32℃;
S2、揉捻:将S1摊凉结束的原料叶进行混合并置于搅拌机中,并倒入酒石酸搅拌均匀,在搅拌时,先采用搅拌速度为300r/min搅拌30min后,随后采用输送带输送至揉捻机中,采用顺时针方向揉捻混合料,揉捻温度控制在55℃,且揉捻时采用的压力为4.0kg/m
3,揉捻1.6h后,揉捻完成,待用;
S3、将罗望子胶与枸缘酸钠混合,添加其总量4%的清水搅拌成液体,再同杀青完成后的茶叶一起置于发酵机中,摊放成厚度为10~15cm,先用氮气将发酵机内空气排出,再令其在氮气的气氛下进行发酵,发酵时添加茶叶总量4%的浓度为1%的葡萄糖和茶叶总量3%的茶氨酸溶液,发酵温度为50℃,发酵3h后,翻抛2min,继续整理成10~15cm厚,调整发酵温度为65℃,发酵5h后,结束发酵;
S4、烘干:将发酵结束的茶叶置于烘干机中,采用茶叶从左至右移动式烘干,烘干机进口温度为35℃,烘干机出口温度为85℃,烘干机中的温度从左至右呈3℃递增,烘干时,调整茶叶在烘干机中的移动速度,使得从烘干机出口出来的茶叶的水分含量为2~3%即可;
S5、回湿:向烘干后获得的茶叶喷洒喷洒抗衰老添加液,喷洒速度为0.2份/min,直至全部喷洒完为止,随后继续搅拌10~20min,再将其置于常温空气中回湿至含水量为5~6%时,在240~280nm的波长范围内用紫外线照射60min灭菌并对其进行包装,即获得成品红茶。
参照例1:
一种红茶,按质量份计包括以下原料:甘草2份、罗望子胶2份、酒石酸1份、刺梨叶1份、枸橼酸钠2份、桑白皮2份、银杏叶1份、人参叶4份、淡竹叶4份、绞股蓝3份、抗疲劳提取液3份以及抗衰老添加液3份,抗疲劳提取液中仅含五味子和石斛,抗衰老添加液含维生素E和苦瓜提取物。
参照例2:
一种红茶,按质量份计包括以下原料:甘草2.5份、罗望子胶3份、酒石酸2份、刺梨叶2份、枸橼酸钠3份、桑白皮4份、银杏叶2份、人参叶5份、淡竹叶5份、绞股蓝5份、抗疲劳提取液6份以及抗衰老添加液6份,抗疲劳提取液中仅含五味子和石斛,抗衰老添加液含维生素E和苦瓜提取物。
参照例3:
一种红茶,按质量份计包括以下原料:甘草3份、罗望子胶4份、酒石酸3份、刺梨叶3份、枸橼酸钠4份、桑白皮5份、银杏叶3份、人参叶6份、淡竹叶6份、绞股蓝7份、抗疲劳提取液9份以及抗衰老添加液9份,抗疲劳提取液中仅含五味子和石斛,抗衰老添加液含维生素E和苦瓜提取物。
上述参照例1~3中,抗疲劳提取液仅由五味子和石斛进行制备,且均通过与实施例相同的步骤进行制备成品红茶。
取上述实施例1~3、对比例1~3以及参照例1~3中的成品红茶,并取90只小白鼠分九组分别服用由上述红茶所泡制的茶水,并令其进行爬杆(杆长1.5m,记录其爬至杆顶的时间)、游泳(游泳 距离3m,记录其游至终点的时间)及负荷游泳测试(负荷6g铁片,游泳距离3m,记录其游至终点的时间),记录其各个测试的时间并求其平均值,记录于下表并进行比较:

由上表数据可知,实施例中的小白鼠在爬杆、游泳以及负荷游泳的三项测试中,耗时都是最短的,其次耗时较短的是参照例中的小白鼠,而对比例中的小白鼠在三项测试中均耗时最长,由此可见,实施例和参照例中的小白鼠在服用含抗疲劳提取液的茶水后,能够较快地降低其疲劳感,且由此还另外可知,在抗疲劳提取液中加入适量的树莓多糖能够进一步的提高抗疲劳效果。
试验二:对该红茶的抗衰老效果进行实验
对比例4:
一种红茶,按质量份计包括以下原料:甘草2份、罗望子胶2份、 酒石酸1份、刺梨叶1份、枸橼酸钠2份、桑白皮2份、银杏叶1份、人参叶4份、淡竹叶4份、绞股蓝3份、抗疲劳提取液3份,抗疲劳提取液中含五味子、石斛和树莓多糖。
对比例5:
一种红茶,按质量份计包括以下原料:甘草2.5份、罗望子胶3份、酒石酸2份、刺梨叶2份、枸橼酸钠3份、桑白皮4份、银杏叶2份、人参叶5份、淡竹叶5份、绞股蓝5份、抗疲劳提取液6份,抗疲劳提取液中含五味子、石斛和树莓多糖。
对比例6:
一种红茶,按质量份计包括以下原料:甘草3份、罗望子胶4份、酒石酸3份、刺梨叶3份、枸橼酸钠4份、桑白皮5份、银杏叶3份、人参叶6份、淡竹叶6份、绞股蓝7份、抗疲劳提取液9份,抗疲劳提取液中含五味子、石斛和树莓多糖。
上述对比例4~6中,均无添加任何抗衰老添加液,且通过下述步骤进行制备成品红茶,具体过程如下:
S1、萎凋:按配比份取新鲜的甘草、银杏叶、人参叶、淡竹叶、绞股蓝、刺梨叶、桑白皮分别摊放在竹制簸箕上,置于恒温箱中摊凉萎凋至水分含量为35~38%后,摊凉温度控制在32℃;
S2、揉捻:将S1摊凉结束的原料叶进行混合并置于搅拌机中,并倒入酒石酸搅拌均匀,在搅拌时,先采用搅拌速度为300r/min搅拌30min后,随后采用输送带输送至揉捻机中,采用顺时针方向揉捻混合料,揉捻温度控制在55℃,且揉捻时采用的压力为4.0kg/m
3, 揉捻1.6h后,揉捻完成,待用;
S3、发酵:罗望子胶与枸缘酸钠混合,添加其总量4%的清水搅拌成液体,再同杀青完成后的茶叶一起置于发酵机中,摊放成厚度为10~15cm,先用氮气将发酵机内空气排出,再令其在氮气的气氛下进行发酵,发酵时添加茶叶总量4%的浓度为1%的葡萄糖和茶叶总量3%的茶氨酸溶液,发酵温度为50℃,发酵3h后,翻抛2min,继续整理成10~15cm厚,调整发酵温度为65℃,发酵5h后,结束发酵;
S4、烘干:将发酵结束的茶叶置于烘干机中,采用茶叶从左至右移动式烘干,烘干机进口温度为35℃,烘干机出口温度为85℃,烘干机中的温度从左至右呈3℃递增,烘干时,调整茶叶在烘干机中的移动速度,使得从烘干机出口出来的茶叶的水分含量为2~3%即可;
S5、回湿:向烘干后获得的茶叶喷洒喷洒抗疲劳提取液和抗衰老添加液,喷洒速度为0.1份/min,直至全部喷洒完为止,随后继续搅拌15min,再将其置于常温空气中回湿至含水量为5~6%时,在240~280nm的波长范围内用紫外线照射60min灭菌并对其进行包装,即获得成品红茶。
参照例4:
一种红茶,按质量份计包括以下原料:甘草2份、罗望子胶2份、酒石酸1份、刺梨叶1份、枸橼酸钠2份、桑白皮2份、银杏叶1份、人参叶4份、淡竹叶4份、绞股蓝3份、抗疲劳提取液3份以及抗衰老添加液3份,抗疲劳提取液中含五味子、石斛和树莓多糖,抗衰老添加液仅含维生素E。
参照例5:
一种红茶,按质量份计包括以下原料:甘草2.5份、罗望子胶3份、酒石酸2份、刺梨叶2份、枸橼酸钠3份、桑白皮4份、银杏叶2份、人参叶5份、淡竹叶5份、绞股蓝5份、抗疲劳提取液6份以及抗衰老添加液6份,抗疲劳提取液中含五味子、石斛和树莓多糖,抗衰老添加液仅含维生素E。
参照例6:
一种红茶,按质量份计包括以下原料:甘草3份、罗望子胶4份、酒石酸3份、刺梨叶3份、枸橼酸钠4份、桑白皮5份、银杏叶3份、人参叶6份、淡竹叶6份、绞股蓝7份、抗疲劳提取液9份以及抗衰老添加液9份,抗疲劳提取液中含五味子、石斛和树莓多糖,抗衰老添加液仅含维生素E。
上述参照例4~6中,抗疲劳提取液仅由五味子和石斛进行制备,且均通过与实施例相同的步骤进行制备成品红茶。
取上述实施例1~3、对比例4~6以及参照例4~6中的成品红茶,对其氧化抑制率进行试验,用沸腾的开水分别将上述茶叶其泡开,再向茶水中滴加3mL的DPPH甲醇溶液(其质量分数为0.004%),搅拌均匀,静置30分钟后,于波长517nm处测定吸光值,计算其抑制率并记录于下表中:
由上表数据可知,实施例、对比例以及参照例中红茶的抗氧化能力由强到弱依次是实施例>参照例>对比例,即对比例中制得的红茶最易被氧化,由此可见,将维生素E制成抗衰老添加液可以起到一定的抗衰老效果,而向其中另外加入苦瓜提取物混合制备,可以进一步提高红茶的抗衰老效果。
以上所述,仅为本发明较佳的具体实施方式,但本发明的保护范围并不局限于此,任何熟悉本技术领域的技术人员在本发明揭露的技术范围内,根据本发明的技术方案及其发明构思加以等同替换或改变,都应涵盖在本发明的保护范围之内。
Claims (9)
- 一种红茶,其特征在于,按质量份计包括以下原料:甘草2~3份、罗望子胶2~4份、酒石酸1~3份、刺梨叶1~3份、枸橼酸钠2~4份、桑白皮2~5份、银杏叶1~3份、人参叶4~6份、淡竹叶4~6份、绞股蓝3~7份、抗疲劳提取液3~9份以及抗衰老添加液3~9份;其中,抗疲劳提取液由五味子、石斛和树莓多糖为原料混合制备而成,抗衰老添加液由维生素E和苦瓜提取物为原料混合制备而成。
- 根据权利要求1所述的一种红茶,其特征在于,所述五味子、石斛和树莓多糖的混合质量比为1:1:2。
- 根据权利要求1所述的一种红茶,其特征在于,所述树莓多糖的制备方法为:取干燥树莓,经乙醚脱脂后,用浓度75%~95%v/v乙醇提取,过滤,滤渣加水提取,取水提液浓缩后,加乙醇至含醇量达到75%~85%,冷却、静置,最后取得固形物即为树莓多糖。
- 根据权利要求1所述的一种红茶,其特征在于,所述抗疲劳提取液的提取方法为:按量称取五味子、石斛和树莓多糖,并将其烘干粉碎,并分别用95%酒精常温下萃取3~5天,获得3份提取液,将3份提取液混合离心后,于45℃~55℃减压蒸馏,将提取液中的酒精蒸发,然后用蒸馏水定容到质量浓度为1g/mL,即得抗疲劳提取液。
- 根据权利要求1所述的一种红茶,其特征在于,所述维生素E和苦瓜提取物的混合质量比为2:1。
- 根据权利要求1所述的一种红茶,其特征在于,所述抗衰老 添加液的制备方法为:称取苦瓜提取物,干燥并破碎成粗粉,与维生素E混合,加入6~10倍重量的水,浸泡3~12小时,加热煮沸,并保持0.5~1.5小时,滤出汁液,滤渣加6~10倍重量的水,再次加热煮沸0.5~1.5小时,滤出汁液,合并两次汁液,保持温度在50℃~70℃,将滤液浓缩至初始原料重量的5~7倍,过滤即得抗衰老添加液。
- 一种红茶的制备方法,其特征在于,包括以下步骤:S1、萎凋:按配比份取新鲜的甘草、银杏叶、人参叶、淡竹叶、绞股蓝、刺梨叶、桑白皮分别摊放在竹制簸箕上,置于恒温箱中摊凉萎凋至水分含量为35~38%后,摊凉温度控制在25℃~35℃;S2、揉捻:将S1摊凉结束的原料叶进行混合并置于搅拌机中,并倒入酒石酸搅拌均匀,在搅拌时,先采用搅拌速度为250~350r/min搅拌20~40min后,随后采用输送带输送至揉捻机中,采用顺时针方向揉捻混合料,揉捻1.5~1.9h后,揉捻完成,待用;S3、发酵:将罗望子胶与枸缘酸钠混合,添加其总量4%的清水搅拌成液体,再同杀青完成后的茶叶一起置于发酵机中,摊放成厚度为10~15cm,先用氮气将发酵机内空气排出,再令其在氮气的气氛下进行发酵,发酵时添加茶叶总量4%的浓度为1%的葡萄糖和茶叶总量3%的茶氨酸溶液,发酵温度为45℃~65℃,发酵2~3h后,翻抛1~5min,继续整理成10~15cm厚,调整发酵温度为50℃~70℃,发酵4~6h后,结束发酵;S4、烘干:将发酵结束的茶叶置于烘干机中,采用茶叶从左至右 移动式烘干,烘干机中的温度从左至右呈2℃~5℃递增,烘干时,调整茶叶在烘干机中的移动速度,使得从烘干机出口出来的茶叶的水分含量为2~3%即可;S5、回湿:向烘干后获得的茶叶喷洒喷洒抗疲劳提取液和抗衰老添加液,喷洒速度为0.1~0.3份/min,直至全部喷洒完为止,随后继续搅拌10~20min,再将其置于常温空气中回湿至含水量为5~6%时,在240~280nm的波长范围内用紫外线照射30~60min灭菌并对其进行包装,即获得成品红茶。
- 根据权利要求7所述的一种红茶的制备方法,其特征在于,所述S2中揉捻温度控制在45℃~75℃,且揉捻时采用的压力为3.2~4.0kg/m 3。
- 根据权利要求7所述的一种红茶的制备方法,其特征在于,所述S4中烘干机进口温度为30℃~40℃,烘干机出口温度为80℃~90℃。
