本発明の穀類混合ひき肉の製造方法は、
脱皮及び搗精された穀類を蒸煮する工程(A)と、
前記工程において蒸煮された穀類を圧偏する工程(B)と、
前記工程において圧偏された穀類を乾燥又は焙焼することで穀類加工物を得る工程(C)と、
前記工程において得られた穀類加工物をひき肉に混合することで穀類混合ひき肉を得る工程(D)と、
を含む。
本発明の穀類加工物は、ひき肉に混合するためのものであり、蒸煮及び圧偏された穀類加工物である。穀類、ひき肉、蒸煮及び圧偏の詳細については、前述同様である。
本発明の穀類混合ひき肉は、上述の本発明の穀類加工物を含み、より詳細には、本発明の穀類加工物とひき肉を混合したものである。ひき肉の詳細については前述同様であり、穀類混合ひき肉は、ブロック状、厚切り肉状、薄切り肉状、ミンチ状等、目的の食品形態に応じた形状に加工することができ、また、食肉と同様に、焼く、煮る、炒める、揚げる、蒸す等、加熱調理することができる。

オーツ麦を、脱皮機に投入して外皮を取り除き(脱皮)、その後、搗精機により搗精した。搗精したオーツ麦を蒸気(100℃)にて数十分煮沸した後、加熱された圧偏ローラーで厚さ0.9mmに圧偏した。その後、熱風乾燥により水分値14%以下まで乾燥させ、裁断機を用いて4片に裁断することで、オーツ麦加工物を得た。

各種の穀類由来の穀類加工物を調製し、サイズを計測し、外観を写真撮影した。
オーツ麦(ホールオーツ)を、脱皮機に投入して外皮を取り除き(脱皮)、その後、搗精機により搗精した。搗精したオーツ麦を蒸気(100℃)にて数十分煮沸した後、加熱された圧偏ローラーで厚さ1.2mmに圧偏した。その後、熱風乾燥により水分値14%以下まで乾燥させ、裁断機を用いて2片、4片又は6片に各々裁断することで、オーツ麦加工物を得た。

加工されたトウモロコシ(コーングリッツ)を高圧窯に投入し130℃で100分蒸煮した。蒸煮したトウモロコシを冷却し、所定の水分及び温度に調整後、圧偏ローラーで厚さ0.5mmに圧偏した。圧偏したトウモロコシを、焙焼機で250℃、5秒焙焼(膨化が生じる)して水分値を7%以下にし、その後、9US Mesh(目開き寸法で2mm)に裁断してトウモロコシ加工物を得た。
