Description
本発明はハンバーグやメンチカツなどの食肉加工食品の製造方法に関する。
ハンバーグやメンチカツなどの食肉加工食品は、噛んだ瞬間にじゅわっと肉汁があふれ出る肉特有のジューシー感が、美味しさと高級感をアップする上で重要な要素である。これまで、ゲル状物をチョッパーなどで細断し、ハンバーグの中種等に練りこむことで、ジューシーさを増強する方法が一般的に行われており、また、練り込むゲル状物をある程度大きくすることで、ジューシー感がさらに増強することも知られていた。しかし、練り込むゲル状物のサイズを大きくすると、一部のゲル状物が表面に露出し、外観が悪くなるという問題があった。また、包餡機などで中種等にゲル状物を充填することも可能であるが、大きなゲル状物を定量的に包餡することは機構的に難しく、製品の重量安定性を保つことができなかった。また、包餡機による充填では、ゲル状物が中種の中心(内層部)に偏り、中種内の狙った箇所に局在させるという制御は不可能であった。一方、インジェクター等による充填(注入)では、かかる制御は可能とはいえるが、ゲル状物の硬さや粘度の程度によっては、インジェクターに詰まったりエアを噛んだりする現象が発生し、製造時の作業性に問題があった。
これまでジューシーで良好な食感を得るためにゲル状物を食肉加工品に用いる方法として、例えば、特許文献1にはゼラチン及びジェランガムを含むゼリーを分散混入させる方法が報告されている。しかしながら、当該ゼリーは固形ゲルであって、1~10mmにカットして食肉加工品の原料に加えて混合しており、インジェクター等によって注入できるような流動性のあるゲルではない。また、特許文献2にはカードランと、グアーガム、ローカストビーンガム等の増粘多糖類を含有する食品改良剤が開示されており、当該食品改良剤の食肉原料への配合方法として、食肉原料に添加して混練する方法、インジェクション(打ち込む)する方法、タンブリングする方法が挙げられているが、いずれもカードランと増粘多糖類を水に溶解又は分散させて用いていることから、液状であって、流動性のあるゲルではない。
従って、本発明は、上述した実情に鑑み、ゲル状物が局在的かつ定量的に充填された食肉加工食品を提供することを課題とする。
本発明者らは上記課題を解決するために鋭意研究を重ねた結果、特定のゲル化剤を水に加えて加熱溶解したゲル化剤溶液を冷却することによって作製した流動性のあるゲル状物を用いることにより、充填位置と充填量をコントロールしながら食肉加工食品に充填できること、また、外観に違和感がなくジューシーな食感を有する食肉加工食品が得られることを見出し、本発明を完成させるに至った。

本願は、2018年3月30日に出願された日本国特許出願2018-70190号の優先権を主張するものであり、該特許出願の明細書に記載される内容を包含する。
本発明の方法によれば、ゲル状物が内部の所定の複数箇所に局在した食肉加工食品を製造することができる。本発明の方法においては、ジューシー感を付与するゲル状物をハンバーグ等の中種成形の際又は成形後にインジェクター等の装置を用いることにより注入することが可能であるため、作業性に優れ、工業的に同等の品質のものを量産することができる。また、当該方法によって製造された食肉加工食品は、喫食の際に十分なジューシー感があり、外観に違和感もない。
本発明の食肉加工食品の製造方法は、ゲル化剤を水に加えて加熱溶解したゲル化剤溶液を冷却して流動性のあるゲル状物を作製する工程と、該ゲル状物を食肉含有原料の内部の所定の複数箇所に充填する工程を含む。
本発明において「食肉加工食品」とは、牛肉、豚肉、鶏肉等の食肉を主原料とし、必要により所望の玉ねぎ等の副原料と混合して成形し、加熱調理することによって得られる加工食品を意味する。また、加熱調理後に冷凍した冷凍食品も本発明の食肉加工食品に包含するものとする。本発明の「食肉加工食品」としては、例えば、ハンバーグ、ミートボール、メンチカツ、つくね、ミートローフ、ソーセージ、ハム、ロールキャベツ、サラダチキン、照り焼きチキン、肉まん、肉餃子、肉焼売、チキンステーキ、ポークソテー、とんかつ、から揚げ等が挙げられる。
本発明の食肉加工食品の製造方法(以下、「本発明の製造方法」と記載する場合がある。)を具体的に説明する。
まず、ゲル化剤を水に加えて加熱溶解したゲル化剤溶液を冷却し、流動性のあるゲル状物を作製する。ここで使用する「ゲル化剤」とは、水に加えて加熱溶解した後、冷却することによってゲル化し、流動性のあるゲルを形成できるゲル化剤をいう。このようなゲル化剤としては、例えば、脱アシル型ジェランガム、寒天、カラギーナン、ペクチン、ローカストビーンガム、キサンタンガム、グアーガム、タラガム、グルコマンナン、アラビアガム、カラヤガム、トラガントガム、サイリウムシードガム、ファーセルラン、プルラン等の増粘多糖類が挙げられ、これらから選択される1種又は2種以上を使用することができる。上記ゲル化剤は、いずれも市販品を使用することができる。
上記ゲル化剤のなかでも、脱アシル型ジェランガムが好ましい。ジェランガムは、2個のグルコース、グルクロン酸、ラムノースの4つの糖の繰り返し単位から構成されている直鎖状のヘテロ多糖類であり、1-3結合したグルコースに存在するアシル基(アセチル基とグリセリル基)を有するネイティブ型ジェランガムに対し、脱アシル型ジェランガムは、これらのアシル基を除去したものである。脱アシル型ジェランガムは、固くて脆いゲルを形成し、カチオンとの反応性が大きく、そのゲルは耐熱性、耐酸性、フレーバーリリース、透明性に優れていることを特徴とする。
ゲル化剤溶液中のゲル化剤の濃度は、使用するゲル化剤によって異なるが、0.01~2.00重量%が好ましく、0.20~0.90重量%がより好ましく、0.30~0.50重量%がさらに好ましい。ゲル化剤の濃度が上記範囲であると、形成されるゲル状物が、食肉含有原料にインジェクター等を用いて注入するのに適した流動性を有し、食肉含有原料への充填適性に優れている。ゲル化剤の濃度が0.01重量%を下回ると、形成されるゲル状物の粘度が低すぎて食肉含有原料に染み込み、また、ゲル化剤の濃度が2.00重量%を上回ると形成されるゲル状物の粘度が高すぎて食肉含有原料にインジェクター等を用いて注入できないので好ましくない。
本発明においては、上記「ゲル化剤」に、ゲル化促進又は形成ゲルの固さの調節の目的で、ゲル化補助成分を併用してもよい。ゲル化補助成分は、使用するゲル化剤の種類によって異なるが、例えば、脱アシル型ジェランガムを使用する場合は、ゼラチン及び/又は金属塩を併用するのが好ましい。
ゼラチンを併用する場合、ゲル化剤溶液中のゼラチンの濃度は、0.10~2.50重量%が好ましく、0.20~1.50重量%がより好ましい。
金属塩を併用する場合、ゲル化剤溶液中の金属塩の濃度は、0.05~0.40重量%が好ましく、0.10~0.40重量%がより好ましい。併用する金属塩は、2価の金属塩であっても1価の金属塩であってもよく、カルシウム塩、マグネシウム塩、ナトリウム塩、カリウム塩等が挙げられるが、2価の金属塩が好ましく、カルシウム塩がより好ましい。金属塩としては、具体的には、塩化カルシウム、硫酸カルシウム、リン酸カルシウム、乳酸カルシウム、炭酸カルシウム、牛骨カルシウム、卵殻カルシウム、クエン酸カルシウム、リン酸カルシウム、硫酸マグネシウム、リン酸マグネシウム、塩化ナトリウム、乳酸ナトリウム、塩化カリウム等を使用することができる。
本発明において「ゲル状物」とは、上記ゲル化剤を水に加えて加熱溶解したゲル化剤溶液を冷却することによって得られる流動性のあるゲルをいう。よって、弾性と硬さをもってゼリー状に固化したいわゆるゲルと呼ばれる状態のものは含まない。熱溶解温度は、使用するゲル化剤の融点以上の温度であればよく、ゲル化剤の種類によって適宜変更できるが、60~95℃が好ましく、70~90℃がより好ましく、75~85℃がさらに好ましい。また、加熱時間は、通常1~60分間程度であり、加熱温度により適宜調整すればよい。また加熱溶解は撹拌しながら行うことが好ましい。冷却は、自然放冷してもよく、ゲル化剤溶液を入れた容器を氷水で冷却してもよく、冷蔵庫に入れて冷却してもよい。また、冷却は撹拌しながら行っても静置して行ってもよい。冷却温度は、使用するゲル化剤のゲル化点以下の温度であればよく、ゲル化剤の種類によって適宜変更できるが、1~35℃が好ましく、10~30℃がより好ましく、15~25℃がさらに好ましい。
上記ゲル状物は、粘度が1.0~17.0Pa・sであり、好ましくは2.0~10.0Pa・s、より好ましくは3.0~8.5Pa・sであることを特徴とする。粘度は、例えば、C型粘度計(東機産業株式会社)を用いて、付属のNo.3又はNo.4のローター(回転数200rpm)で測定することができる。ここで、粘度は、2~30℃において測定した値を意味する。ゲル状物の粘度が上記範囲であると、食肉含有原料にインジェクター等を用いて注入するのに適した流動性を有し、食肉含有原料への充填適性に優れている。ゲル状物の粘度が1.0Pa・sを下回ると、粘度が低すぎて食肉含有原料に染み込み、また、ゲル状物の粘度が17.0Pa・sを上回ると粘度が高すぎて食肉含有原料にインジェクター等を用いて注入できないので好ましくない。上記粘度は、使用する上記ゲル化剤の種類と組み合わせ、使用量により調整することができる。
食肉加工食品中のゲル状物の含有量は、1~15重量%が好ましく、2~8重量%がより好ましい。ゲル状物の含有量が、1重量%より少ないとジューシー感に乏しく、15重量%より多いと、形状の保持性や食感が悪くなる。
次に、得られたゲル状物を、食肉含有原料の内部の所定の複数箇所に充填する。
本発明において用いる食肉の種類としては、牛肉、豚肉、羊肉、馬肉、鹿肉、山羊肉、家兎肉などの畜肉、鶏肉、七面鳥肉、アヒル肉、ガチョウ肉などの家禽肉などが挙げられ、これらの1種を単独で用いてもよく、2種以上を混合して用いてもよい。食肉含有原料は、食肉を主原料として含有していればよく、食肉100%であってもよい。食肉は、挽肉の形状に加工されたものであっても、塊肉を適当な大きさと厚みに切断したものであってもよい。挽肉の形状への加工は、常法により行なうことができ、ブロック状やフレーク状のものを、例えばカッター、チョッパー等を用いて細かく挽くことによって調製できる。挽肉の粒径は、食肉加工食品の種類に応じて適宜選択することができる。例えば、ハンバーグやミートボール等の場合には、平均粒径1~12mmとなるように均一に加工することが望ましい。
また、主原料となる食肉以外の原料は、当該食肉加工食品の種類に応じて適宜選択され、食肉加工食品に通常用いられるものであれば特に限定はされない。例えば、副原料としては、野菜類(玉ねぎ、ねぎ、キャベツ、白菜、ニンジン、ピーマン、大根、レンコン、ゴボウ、シソ、セロリ、パセリ、なす、ジャガイモ、サツマイモ、カボチャ等)、種実類(アーモンド、ピーナッツ、クルミ、カシューナッツ等)、きのこ類(しめじ、しいたけ、マッシュルーム、エリンギ、マイタケ等)、豆類(大豆、えんどう豆、レンズ豆、ひよこ豆等)、豆腐、チーズなどの具材が挙げられる。その他の原料としては、パン粉、牛乳、卵(例、全卵、卵黄、卵白等)、穀粉類(小麦粉、大麦粉、米粉、そば粉、コーンフラワー等)、澱粉類(小麦澱粉、馬鈴薯澱粉、米粉澱粉、コーンスターチ等)、油脂類(大豆油、菜種油、パーム油、コーン油、ゴマ油、亜麻仁油、落花生油、紅花油、綿実油等)、調味料(食塩、砂糖、醤油、味噌、醸造酢、みりん、ウスターソース、カレー粉、トマトピユーレ、アミノ酸系調味料、核酸系調味料、有機酸系調味料、酒類、蛋白加水分解物、エキス類等)、香辛料(ブラックペッパー、ホワイトペッパー、ナツメグ、パプリカ、ニンニク、ショウガ、オールスパイス、クローブ、山椒等)、ハーブ類(バジル、オレガノ、ローズマリー、パセリ等)などが挙げられる。また、必要に応じて、結着剤、増量剤、発色剤、賦形剤、乳化剤、酸化防止剤、香料等の添加物を適宜混合してもよい。これらの食肉以外の他の原料は、1種を単独で使用してよく、又は2種以上を組み合わせて使用してもよい。
食肉が挽肉の形態である場合、中種を作製するのが一般的である。中種の作製は、食肉に食肉以外の他の原料を添加して混練することよって行うが、食肉加工食品の種類に応じて、適宜変更を加えてもよい。ここで、「中種」とは、上記の食肉と他の原料の混合物から成り、衣部分以外のいわゆる中身の部分を指すものとする。よって、メンチカツの場合は、衣を付着させない中身の部分で、ハンバーグの組成とほぼ共通する。
食肉を含む原料の混練は、原料の全てが均一に混合されればその方法は特に限定はされず、手作業で行ってもよく、食品分野において通常用いられるミキサーやニーダー等の混合機を用いて行ってもよい。混練速度や混練時間等の条件もまた、特に制限はされず、食肉加工食品の種類、使用原料の種類や量に応じて適宜設定すればよい。
本発明において、ゲル状物の食肉含有原料への充填は、例えば、インジェクション法で行うことができる。インジェクションは、流動性のあるゲル状物を食肉含有原料に局在させ、かつ、定量的に注入することができれば、いかなる手段でもよく、例えば、シリンジ等の注射器や、食肉加工分野においてピックル液や調味液等の液状物を食肉に注入するのに汎用されている、インジェクターを用いて行うことができる。インジェクターの針の太さ等の形状は、ゲル状物の性質や食肉含有原料に応じて適宜選択できる。ゲル状物の充填時の食肉含有原料の温度は、-5~20℃が好ましい。
また、食肉含有原料として上記の中種を用いる場合は、中種を所定の形状に成形すると同時に又は成形した後に、ゲル状物を該中種の内部の所定の複数箇所に充填する。中種の成形方法は特に制限されず、例えば、中種を所定の形状に手作業で整えてもよく、また、所定の形状するための型(例えば、ステンレス製の型抜き)に充填することによって行ってもよい。工業的には、例えば市販の自動成形機等を使用して行うことが好ましい。形状については、食肉加工食品の種類によるが、例えば、楕円形、円形、球形、棒状等が挙げられ、ハンバーグであれば、長径50~200mm、最大厚さ10~30mm程度の楕円形が一般的である。また、成形された中種の構造は、単層構造であっても、二層以上の多層構造であってもよい。
本発明において、ゲル状物の充填は、食肉含有原料の表面には出ないように内部に行う。また、ゲル状物の充填は、食肉含有原料の内部の所定の複数箇所に局在するように行い、該所定の複数箇所は略均一に分布することが好ましい。本発明において、「局在する」、「局在(的)」とは、ゲル状物質が食肉含有原料の内部の狙った部分(所定の複数箇所)に集中して存在する状態を意味し、ゲル状物が食肉含有原料の内部全体に不均一に分散若しくは点在する状態や、中心部のみや周辺部のみに偏って分布しない状態が望ましい。ゲル状物質を局在させる所定の箇所の位置や数は、食肉加工品の種類や大きさによって一義的に定められないが、所望する食感(ジューシー感の程度)に応じて適宜設定することができる。
また、本発明において、ゲル状物の充填は、食肉含有原料に対して定量的に行う。本発明において「定量的」とは、充填するゲル状物の量が、1箇所当たり略一定であることを意味し、各箇所のゲル状物の量は同量であっても、ある程度増減させてもよい。
このように、ゲル状物が食肉含有原料の内部の所定の複数箇所に局在的かつ定量的に充填されることにより、得られた食肉加工品は、喫食の際に十分かつ変化に富んだジューシー感が得られる。
上記のようにしてゲル状物が充填された食肉含有原料は喫食のために通常の方法にて加熱調理する。ここで、加熱調理には、焼成、油ちょう、蒸し、ボイル等の加熱処理を伴う調理が含まれる。加熱温度及び加熱時間等の各条件は、食肉その他の原料の種類、加熱方法等に応じて適宜調整し得るが、加熱温度は通常70~200℃であり、加熱時間は通常30秒間~2時間である。
また、加熱調理した後、冷凍してもよい。本発明の製造方法において、食肉加工食品を冷凍する場合、冷凍条件(例えば、冷凍温度等)は、適宜調整すればよいが、-30℃以下で急速に冷凍することが好ましい。その後、冷凍食品として通常-10℃以下、好ましくは-15℃以下で保存する。また、得られる冷凍食品の解凍方法は特に制限されず、冷凍食品分野における公知の解凍方法(例えば、電子レンジ加熱、オーブン加熱、過熱水蒸気加熱、フライパン焼成、ボイル、自然解凍等)にて行えばよい。
以下、実施例及び比較例によって本発明を更に具体的に説明するが、これらの内容は本発明を限定するものでない。
後記の各表中、リン酸塩は商品名「リン酸塩NO.3」(第一化成社製)、香辛料(ナツメグ)は商品名「純ナツメグ末SA」(カネカサンスパイス社製)、香辛料(黒コショウ)は商品名「黒コショウ末S60」(カネカサンスパイス社製)、澱粉は商品名「スタビローズ1000」(松谷化学社製)、植物性蛋白は商品名「アペックス650」(不二製油社製)、生パン粉は商品名「共栄焙焼白生パン粉6M」(共栄食品社製)、ジェランガムは脱アシル型ジェランガム製剤:商品名「ゲルアップK-S」(三栄源エフ・エス・アイ社製)、ゼラチンは商品名「ゼラチンAPH100」(新田ゼラチン社製)、乳酸カルシウムは商品名「乳酸カルシウム」(太平化学社製)、カードランは商品名「カードラン」(MCフードスペシャリティーズ社製)、寒天は商品名「カリコリカン」(伊那食品工業社製)を用いた。
(試験例1)ゲル状物の作製とハンバーグへの充填方法の検討(実施例1~4、比較例1~5)
(1)中種の作製
表1に示す配合で原料を混合し中種を作製した。原料の混合は以下の手順にて行った。まず、ケンミックス(型番KMM77)に、牛挽肉、豚挽肉、水溶きした食塩及びリン酸塩を投入し、5分間混練した後、香辛料及び澱粉を加えて混合した。次に、卵、グルタミン酸ソーダ、水に浸漬した植物性蛋白、生玉葱を加えて混合した後、最後に生パン粉を加えて混合し、中種を得た。
(1)中種の作製
表1に示す配合で原料を混合し中種を作製した。原料の混合は以下の手順にて行った。まず、ケンミックス(型番KMM77)に、牛挽肉、豚挽肉、水溶きした食塩及びリン酸塩を投入し、5分間混練した後、香辛料及び澱粉を加えて混合した。次に、卵、グルタミン酸ソーダ、水に浸漬した植物性蛋白、生玉葱を加えて混合した後、最後に生パン粉を加えて混合し、中種を得た。
(2)ゲル状物の作製
(2-1)ゲルA(脱アシル型ジェランガム/ゼラチン/乳酸カルシウム)の作製
表2に示すゲル配合A(重量%)で、脱アシル型ジェランガム、ゼラチン、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液に、乳酸カルシウムを加えて混合し、ホイッパーで撹拌しながら20℃まで冷却し、ゲルAを得た。
(2-1)ゲルA(脱アシル型ジェランガム/ゼラチン/乳酸カルシウム)の作製
表2に示すゲル配合A(重量%)で、脱アシル型ジェランガム、ゼラチン、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液に、乳酸カルシウムを加えて混合し、ホイッパーで撹拌しながら20℃まで冷却し、ゲルAを得た。
表2に示すゲル配合A(重量%)で、脱アシル型ジェランガム、ゼラチン、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液に、乳酸カルシウムを加えて混合し、20℃まで静置冷却後、ジューサーミキサー(ラッセルホブス パワーブレンダー14072P)で細断し、ゲルA(クラッシュ)を得た。
(2-2)ゲルB(脱アシル型ジェランガム/ゼラチン/乳酸カルシウム)の作製
表3に示すゲル配合B(重量%)で、脱アシル型ジェランガム、ゼラチン、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液に、乳酸カルシウムを加えて混合し、約20℃まで静置冷却し、ゲルBを得た。
表3に示すゲル配合B(重量%)で、脱アシル型ジェランガム、ゼラチン、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液に、乳酸カルシウムを加えて混合し、約20℃まで静置冷却し、ゲルBを得た。
(2-3)ゲルC(カードラン/ジェランガム/乳酸カルシウム)の作製
表4に示すゲル配合C(重量%)で、カードラン、ジェランガム、上白糖、乳酸カルシウムを水に加えて混合し、ゲルC-1を得た。また、表4に示すゲル配合C(重量%)で、カードラン、ジェランガム、上白糖、乳酸カルシウムを水に加えて混合し、85℃まで加熱し、約20℃まで静置冷却し、ゲルC-2を得た。
表4に示すゲル配合C(重量%)で、カードラン、ジェランガム、上白糖、乳酸カルシウムを水に加えて混合し、ゲルC-1を得た。また、表4に示すゲル配合C(重量%)で、カードラン、ジェランガム、上白糖、乳酸カルシウムを水に加えて混合し、85℃まで加熱し、約20℃まで静置冷却し、ゲルC-2を得た。
(2-4)ゲルD(脱アシル型ジェランガム/乳酸カルシウム)の作製
表5に示すゲル配合D(重量%)で、脱アシル型ジェランガム、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液に、乳酸カルシウムを加えて混合し、ホイッパーで撹拌しながら20℃まで冷却し、ゲルDを得た。
表5に示すゲル配合D(重量%)で、脱アシル型ジェランガム、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液に、乳酸カルシウムを加えて混合し、ホイッパーで撹拌しながら20℃まで冷却し、ゲルDを得た。
(2-5)ゲルE(寒天/ゼラチン)の作製
表6に示すゲル配合E(重量%)で、寒天、ゼラチン、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液をホイッパーで撹拌しながら20℃まで冷却し、ゲルEを得た。
表6に示すゲル配合E(重量%)で、寒天、ゼラチン、上白糖を水に加えて混合し、85℃まで加熱してゲル化剤溶液を調製した。このゲル化剤溶液をホイッパーで撹拌しながら20℃まで冷却し、ゲルEを得た。
(3)中種へのゲルの充填
(3-1)ゲルAを用いた試験品の調製(実施例1、2)
(1)で作製した中種(以下、単に「中種」という)を114g/個の楕円形に成形し、(2-1)で作製したゲルA、ゲルA(クラッシュ)をそれぞれシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、120g/個の試験品のハンバーグ(実施例1、2)を調製した。
(3-1)ゲルAを用いた試験品の調製(実施例1、2)
(1)で作製した中種(以下、単に「中種」という)を114g/個の楕円形に成形し、(2-1)で作製したゲルA、ゲルA(クラッシュ)をそれぞれシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、120g/個の試験品のハンバーグ(実施例1、2)を調製した。
(3-2)ゲルDを用いた試験品の調製(実施例3)
中種を114g/個の楕円形に成形し、(2-4)で作製したゲルDをシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、120g/個の試験品のハンバーグ(実施例3)を調製した。
中種を114g/個の楕円形に成形し、(2-4)で作製したゲルDをシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、120g/個の試験品のハンバーグ(実施例3)を調製した。
(3-3)ゲルEを用いた試験品の調製(実施例4)
中種を114g/個の楕円形に成形し、(2-5)で作製したゲルEをシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、120g/個の試験品のハンバーグ(実施例4)を調製した。
中種を114g/個の楕円形に成形し、(2-5)で作製したゲルEをシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、120g/個の試験品のハンバーグ(実施例4)を調製した。
(3-4)ゲルを用いない試験品の調製(比較例1)
中種を120g/個の楕円形に成形し、ゲルを充填しない試験品のハンバーグ(比較例1、ブランク)を調製した。。

(3-5)ゲルBを用いた試験品の調製(比較例2、3)
(2-2)で作製したゲルBをチョッパーで3mmに挽き、これを中種に対して5重量%になるように混合し、120g/個の楕円形に成形し、試験品のハンバーグ(比較例2)を調製した。
(2-2)で作製したゲルBをチョッパーで3mmに挽き、これを中種に対して5重量%になるように混合し、120g/個の楕円形に成形し、試験品のハンバーグ(比較例2)を調製した。
中種を114g/個の楕円形に成形し、(2-2)で作製したゲルBを1g/個のダイス状にカットしたダイスゲルを、成形した中種の内部及び表面に6個入れ(表面にダイルゲルが露出する)、120g/個の試験品のハンバーグ(比較例3)を調製した。
(3-6)ゲルCを用いた試験品の調製(比較例4、5)
中種を114g/個の楕円形に成形し、(2-3)で作製したゲルC-1、ゲルC-2をそれぞれシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、120g/個の試験品のハンバーグ(比較例4、比較例5)を調製した。
中種を114g/個の楕円形に成形し、(2-3)で作製したゲルC-1、ゲルC-2をそれぞれシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、120g/個の試験品のハンバーグ(比較例4、比較例5)を調製した。
(4)ゲル状物の物性及びハンバーグへの充填方法の評価
表7に、各試験品のハンバーグについて、充填に用いたゲル配合とゲル物性、ゲル状物の作製方法、ゲル状物の中種への充填方法、及びハンバーグ内のゲル状物の状態をまとめて示す。
表7に、各試験品のハンバーグについて、充填に用いたゲル配合とゲル物性、ゲル状物の作製方法、ゲル状物の中種への充填方法、及びハンバーグ内のゲル状物の状態をまとめて示す。
表7に示すように、脱アシル型ジェランガム又は寒天を主ゲルとしたゲルA、D、Eは流動状で、中種の内部に注入可能で、所定箇所に局在させることができた。ゲルBは、ゲル化補助成分であるゼラチンの量が多いために固形状となり、流動状ゲルの形態で中種の内部の所定箇所に局在させることができなかった。カードランを主ゲルとしたゲルC-1は液状で、中種の内部に注入可能であったが、中種に滲み込み、所定箇所に局在させることができず、同じくカードランを主ゲルとしたゲルC-2は固形状となり、流動性がなく中種の内部への注入は不可能であった。
(試験例2)官能評価
試験例1で調製した各試験品のハンバーグを、230℃の鉄板に油をひき、両面1分ずつ焼成した後、スチーム100℃で8分間蒸煮し、約-35℃の凍結庫で冷凍した。次に、約-18℃の冷凍ハンバーグを天板に並べ、180℃のコンベクションオーブンで14分間加熱し、喫食用のサンプルを調製した。
試験例1で調製した各試験品のハンバーグを、230℃の鉄板に油をひき、両面1分ずつ焼成した後、スチーム100℃で8分間蒸煮し、約-35℃の凍結庫で冷凍した。次に、約-18℃の冷凍ハンバーグを天板に並べ、180℃のコンベクションオーブンで14分間加熱し、喫食用のサンプルを調製した。
調製したサンプルについて、喫食時の「ジューシー感」の官能評価を行った。官能評価は、専門パネル4名にて実施し、下記の評価基準により-2点(ジューシー感がない)~+2点(ジューシー感がある)の間で点数を付け、平均値を算出した。
<ジューシー感評価基準>
-2.0点:ジューシー感がまったくない
-1.0点:ジューシー感がほとんどない
0点:どちらともいえない
1.0点:ジューシー感がややある
2.0点:ジューシー感が非常にある
-2.0点:ジューシー感がまったくない
-1.0点:ジューシー感がほとんどない
0点:どちらともいえない
1.0点:ジューシー感がややある
2.0点:ジューシー感が非常にある
表8に示すように、流動状ゲル(ゲルA、D、E)を中種の内部の所定の複数箇所に局在させた実施例1~4のハンバーグは、ジューシー感があった。これに対し、固形状ゲル(ゲルB)を中種の内部に全体的に分散させた比較例2のハンバーグは全体的に柔らかでジューシー感もなく、中種の内部及び表面に入れた比較例3のハンバーグは、表面にゲルが露出して外観が悪かった。また、カードランを主ゲルとしたゲルC-1(液状)を使用した比較例4のハンバーグは、ジューシー感はまったくなかった。同じくカードランを主ゲルとしたゲル状物C-2(固形状)は、ゲルの注入が不可能であった。
(試験例3)ゲル状物の粘度測定及び粘度による充填適性の評価
前記表2に示すゲル配合Aにおいて、ジェランガムと乳酸カルシウムの配合量(重量%)を下記表9に示すように変更する以外は、試験例1のゲルAの作製方法に従って、ゲル状物を作製した(試験No.1~No.6) 。

作製したゲル状物の粘度の測定を行った。200mlビーカーに200gのゲル状物を注ぎ、東機産業製粘度計TVC-7を用いて粘度を測定した。ローターは粘度に応じて適当なものを選択し、測定開始より30秒後を測定値として採用した。
また、中種を114g/個の楕円形に成形し、上記のゲル状物(試験No.1~No.6)をそれぞれシリンジ(テルモシリンジ50ml、スリップチップ白、SS-50ESZ)に入れ、成形した中種の内部6箇所に1gずつ注入し、充填適性を下記の基準により評価した。

◎:シリンジによる注入がし易く、所定の箇所に充填可能。
〇:シリンジによる注入が可能な粘性を有し、所定の箇所に充填可能。
×:シリンジによる注入が不可能。
◎:シリンジによる注入がし易く、所定の箇所に充填可能。
〇:シリンジによる注入が可能な粘性を有し、所定の箇所に充填可能。
×:シリンジによる注入が不可能。
粘度測定結果及び充填適性の評価結果を表9に示す。
表9に示すように、ゲル状物の粘度が1.0~17.0Pa・sの範囲である場合(試験品No.2、3、4、5)は、充填適性があった。また、ゲル化剤の適正濃度は、脱アシル型ジェランガムを使用した場合、0.21~0.84重量%(使用製剤「ゲルアップK-S」の42%より換算)であった。
本発明の方法によれば、充填適性に優れ、充填機械への負荷がないゲル状物を食肉加工食品に局在的かつ定量的に充填することができ、ジューシー感のある食肉加工食品を安定的に製造することできる。従って、本発明は、食肉加工品の製造において有用である。

Claims (14)
- ゲル化剤を水に加えて加熱溶解したゲル化剤溶液を冷却して流動性のあるゲル状物を作製する工程と、該ゲル状物を食肉含有原料の内部の所定の複数箇所に充填する工程を含む、食肉加工食品の製造方法。
- 前記ゲル状物の粘度が、1.0~17.0Pa・sである、請求項1に記載の食肉加工食品の製造方法。
- 前記ゲル状物の充填が、インジェクション法により行われる、請求項1又は2に記載の食肉加工食品の製造方法。
- 前記ゲル化剤が、脱アシル型ジェランガムである、請求項1~3のいずれか1項に記載の食肉加工食品の製造方法。
- 前記ゲル化剤に、ゼラチンを併用する、請求項1~4のいずれか1項に記載の食肉加工食品の製造方法。
- 前記ゲル化剤に、金属塩を併用する、請求項1~5のいずれか1項に記載の食肉加工食品の製造方法。
- 前記ゲル化剤溶液中のゲル化剤の濃度が、0.01~2.00重量%である、請求項1~6のいずれか1項に記載の食肉加工食品の製造方法。
- 前記工程の後、ゲル状物が充填された食肉含有原料を加熱調理する工程をさらに含む、請求項1~7のいずれか1項に記載の食肉加工食品の製造方法。
- 前記加熱調理する工程の後、冷凍する工程をさらに含む、請求項8に記載の食肉加工食品の製造方法。
- 前記食肉加工食品がハンバーグ、ミートボール、メンチカツ、又はつくねである、請求項1~9のいずれか1項に記載の食肉加工食品の製造方法。
- 食肉含有原料の内部の所定の複数箇所に流動性のあるゲル状物が充填されてなる、食肉加工食品。
- 前記ゲル状物の粘度が、1.0~17.0Pa・sである、請求項11に記載の食肉加工食品。
- 加熱調理されている、請求項12に記載の食肉加工食品。
- 冷凍されている、請求項13に記載の食肉加工食品。
