Abstract
본 출원은 곡물가루, 베이킹파우더 및 알룰로스를 포함하는 배터믹스 제조용 조성물; 상기 배터믹스 제조용 조성물을 포함하는 배터믹스, 배터 및 조리식품; 상기 배터믹스 제조용 조성물을 이용한 조리식품 및 조리냉동식품의 제조방법; 배터의 점도 안정성을 개선하는 방법, 조리식품의 과흡유율을 감소시키는 방법 및 조리냉동식품의 냉해동 안정성을 증가시키는 방법에 관한 것이다. 본 출원의 배터믹스 제조용 조성물은 알룰로스를 사용함으로써, 배터의 점도 안정성을 증가시키고, 상기 배터로 제조한 조리식품에 적절한 색상을 부여하며, 과흡유율을 감소시킬 수 있다. 또한, 상기 배터로 제조한 조리냉동식품의 냉해동 안정성 및 경도를 증가시켜 품질이 개선된 조리냉동식품을 제공할 수 있다.
