Abstract
본 발명은 쌀국수용 생면을 제조하는데 바람직한 쌀가루 혼합믹스와 상기 쌀가루 혼합믹스를 이용하여 제조한 쌀국수용 생면에 대한 것으로, 구체적으로 물에 불린 후 분쇄한 수분 함량 약 13% 내외의 쌀가루 93 - 95중량%, 강알칼리제로서의 면미소 0.08-0.20중량%, 증점제로서의 알긴산나트륨 0.32 - 0.55 중량% 및 변성전분 2 - 6 중량%을 주성분으로 하는 생 쌀국수 제조용 쌀가루 혼합믹스에 대한 것이다. 본 발명의 쌀생면으로 조리된 쌀국수는 면의 끊어짐이 거의 없고 면의 탄력이 강화되어 쫄깃하고 부드러운 식감을 가지며 육수의 간이 잘 배어들어 육수와 면의 맛의 조화도가 높아지는 장점이 있다.
