Description
本発明は、飲料組成物に関する。
コラーゲンは、ゼラチンとして食品分野で従来から用いられている動物性蛋白質である。コラーゲンは、真皮、結合組織等の主成分であることから、医療分野や美容分野において、注目を集めている。特に、コラーゲンを配合した飲料は、その美容効果により、女性に広く支持されている。
コラーゲンを配合した飲料としては、例えば、コラーゲンペプチドとクマザサとを含有する飲料(例えば、特開2000-093121号公報参照)、コラーゲン、コンドロイチン、グルコサミン、有機酸等を含有する美容飲料(例えば、特開2000-139408号公報参照)、コラーゲン、コンドロイチン、ヒアルロン酸、水溶性核蛋白等を含有する健康ドリンク(例えば、特開2003-325149号公報参照)などが報告されている。
近年では、独特の臭気が少ないこと、ハラルに対応すること等の観点から、魚類を由来とするコラーゲンの使用が増えている。また、高い美容効果を得るために、魚類を由来とするコラーゲンを一本当たり10000mg配合した飲料が主流になりつつある。しかしながら、コラーゲンを高濃度で配合した飲料は、高い効果が感じられるものの、風味の点で満足のいくものとは言えなかった。
コラーゲンを高濃度で配合した飲料の風味を改善する技術として、特許第5283743号公報には、平均分子量500~3000の低分子コラーゲンペプチドを含有するpHが4.0以下の飲料において、酸味料として、特定量のリン酸と、クエン酸、酒石酸、リンゴ酸等とを用いることで、適度な酸味と良好な風味とを有するコラーゲンペプチド飲料組成物を実現する技術が開示されている。また、特許第5283676号公報には、平均分子量1200以下のコラーゲンペプチドと、水と、コラーゲンペプチド中のアミノ基とメイラード反応を生じうる特定量の糖類と、を特定条件で反応させるマスキング処理を行なうことで、コラーゲンペプチドの末端アミノ酸に起因する苦味を低減させる技術が開示されている。
本発明者は、コラーゲンを高濃度で配合した飲料が呈する苦味の原因の1つとして、カリウム及びマグネシウムといったコラーゲンの原料由来のミネラルがあることを見出した。そして、このようなミネラル由来の苦味は、特許第5283743号公報及び特許第5283676号公報に開示された技術では、抑制効果が充分でないことがある。
本発明の一実施形態は、上記のような事情に鑑みてなされたものであり、従来のコラーゲンを含有する飲料組成物に比して、苦味等の不快な風味が抑制され、且つ、コラーゲンの含有に期待される効果感の高い飲料組成物を提供することを課題とする。
上記課題を解決するための具体的な手段は、以下の態様を含む。
[1] 平均分子量が1000~3000のコラーゲンペプチドと、還元糖とを含む飲料組成物であって、飲料組成物中における、コラーゲンペプチドの濃度が2000mg/10mL~4000mg/10mLであり、カリウムの濃度が3mg/10mL以下であり、マグネシウムの濃度が0.1mg/10mL以下であり、且つ、還元糖の含有量がコラーゲンペプチド100質量部に対して0.5質量部~3質量部である飲料組成物。
[2] 還元糖が、フルクトース、マルトース、グルコース及びラクトースからなる群より選択される少なくとも1種である[1]に記載の飲料組成物。

本明細書において、成分の濃度を、飲料の単位体積当たりの含有量(例えば、質量)で示すことがある。例えば、2000mg/10mLとは、飲料10mL当たり、成分を2000mg含むことを意味する。

<コラーゲンペプチド>
本開示の飲料組成物は、平均分子量が1000~3000のコラーゲンペプチドを含む。
コラーゲンペプチドの平均分子量が1000未満であると、飲料組成物に対して、十分なコクと適度なとろみを付与することができない。また、飲料組成物の苦味が強くなる。コラーゲンペプチドの平均分子量が3000を超えると、飲料組成物のとろみが強すぎて、飲み難くなる。
コラーゲンペプチドの平均分子量は、1500~2700であることが好ましく、1800~2500であることがより好ましい。飲料組成物が含むコラーゲンペプチドの平均分子量を1800~2500とすることで、飲料組成物の苦味が少なくなり、飲料組成物に対して、最適な効果感につながるとろみを付与することができるため、より好ましい。
本開示の飲料組成物は、平均分子量が1000~3000のコラーゲンペプチドを含む。

本開示におけるコラーゲンペプチドは、ゼラチンを酵素や酸で加水分解して得られる、グリシンを多く含むタンパク質であり、市販品としても入手可能である。

本開示の飲料組成物におけるカリウム濃度については、例えば、原子吸光光度装置(バリアン テクノロジーズジャパンリミテッド社製)により測定することができ、マグネシウム濃度については、例えば、ICP発光分析装置(型番:SPS1200、セイコー電子社製)により測定することができる。
本開示の飲料組成物は、カリウムの濃度が3mg/10mL以下であり、且つ、マグネシウムの濃度が0.1mg/10mL以下である。

本開示の飲料組成物におけるカリウム濃度については、例えば、原子吸光光度装置(バリアン テクノロジーズジャパンリミテッド社製)により測定することができ、マグネシウム濃度については、例えば、ICP発光分析装置(型番:SPS1200、セイコー電子社製)により測定することができる。
飲料組成物中におけるカリウムの濃度を3mg/10mL以下とし、且つ、マグネシウムの濃度を0.1mg/10mL以下とする方法としては、例えば、コラーゲンの原料由来のカリウム及びマグネシウムを低減したコラーゲンペプチドを使用する方法等が挙げられる。
コラーゲンペプチド中に含まれるコラーゲンの原料由来のカリウム及びマグネシウムを低減する方法としては、例えば、コラーゲンペプチドを再イオン交換処理する方法等が挙げられる。
「再イオン交換処理」とは、例えば、イオン交換体を用いた処理を意味する。イオン交換体を用いた処理の方法は、特に限定されるものではなく、公知の方法を採用することができる。イオン交換体としては、イオン交換樹脂が好ましく用いられる。
コラーゲンペプチド中に含まれるコラーゲンの原料由来のカリウム及びマグネシウムを低減する方法としては、例えば、コラーゲンペプチドを再イオン交換処理する方法等が挙げられる。
「再イオン交換処理」とは、例えば、イオン交換体を用いた処理を意味する。イオン交換体を用いた処理の方法は、特に限定されるものではなく、公知の方法を採用することができる。イオン交換体としては、イオン交換樹脂が好ましく用いられる。
<酸味料>
本開示の飲料組成物は、更に酸味料を含んでもよい。
酸味料としては、飲料に対して使用可能な酸味料であれば、特に限定されない。酸味料の例としては、リン酸、クエン酸、酒石酸、フィチン酸、リンゴ酸、アスコルビン酸、乳酸、コハク酸、フマル酸等が挙げられる。これらの中でも、酸味料としては、飲料に適した爽やかな酸味を付与するという観点から、リン酸、クエン酸、酒石酸、フィチン酸、リンゴ酸、及びアスコルビン酸からなる群より選択される少なくとも1種であることが好ましく、リン酸、クエン酸、酒石酸、フィチン酸及びアスコルビン酸からなる群より選択される少なくとも1種であることがより好ましい。

これらのアミノ酸は、コラーゲンの構成成分又はコラーゲンの合成促進成分として知られており、摂取することで、体内におけるコラーゲンの生成効率及び利用効率がいっそう高まることが期待される。特に、コラーゲンペプチドとして、魚由来のコラーゲンペプチドを用いる場合には、体内でのコラーゲンの利用効率をより高めるために、これらのアミノ酸を含むことが好ましい。
これらのアミノ酸は、塩酸塩、リン酸塩等の無機酸塩の形態であってもよく、クエン酸塩、リンゴ酸塩、α-ケトグルタル酸、アスパラギン酸等の有機酸塩の形態であってもよい。
本開示の飲料組成物がアミノ酸を含む場合、アミノ酸の濃度は、上記コラーゲンペプチドの種類、含有量等に応じて、適宜設定することができる。

本開示における水の含有量は、飲料組成物の全質量に対して80質量%以下であることが好ましく、75質量%以下であることがより好ましく、70質量%以下であることが更に好ましい。
本開示の飲料組成物は、水を含むことが好ましい。
水としては、飲料に使用可能な水であれば、特に限定されるものではない。

他の成分としては、セラミド、各種ビタミン、ミネラル、着色料、酸化防止剤、安定剤、保存料、乳化剤、消泡剤等を挙げることができる。
本開示の飲料組成物は、必須成分である上記コラーゲンペプチド及び還元糖、任意成分である酸味料、甘味料(上記還元糖を除く)、香料、アミノ酸等の他に、飲料に対して使用可能な他の成分を、本発明の一実施形態の目的を損なわない範囲内で、必要に応じて含んでもよい。

<飲料組成物のpH>
本開示の飲料組成物のpHは、4.0以下であることが好ましい。
本開示の飲料組成物のpHが4.0を超えると、防腐性の効果が低下する傾向がある。pH4.0を超える飲料組成物の場合、食品衛生法により製造工程においてより強い加熱処理が必要となるため、風味が損なわれたり、成分が劣化したりする傾向がある。
本開示の飲料組成物のpHは、3.0~4.0であることが好ましく、3.2~4.0であることがより好ましく、3.5~4.0であることが更に好ましい。
本開示の飲料組成物のpHが3.0以上であると、pH調整の際に使用するクエン酸等の酸味料の量を低減することができる。
なお、本開示の飲料組成物のpHは、市販のpHメーターを用いて測定することができる。
本開示の飲料組成物のpHは、4.0以下であることが好ましい。

本開示の飲料組成物は、コラーゲンの原料由来のカリウム及びマグネシウムが低減された、平均分子量が1000~3000のコラーゲンペプチドと、還元糖と、必要に応じて他の成分(上述した任意成分を含む)とを混合すること(以下、「混合工程」と称することがある。)を含む方法により、製造することができる。
混合方法は、特に限定されものではなく、例えば、全ての成分を一度に混合する混合方法でもよいし、水を攪拌しながら、上記コラーゲンペプチドと、還元糖と、他の成分とを徐々に添加し、混合する混合方法でもよい。
好ましい混合方法としては、水に、上記コラーゲンペプチドを添加し、混合して溶解させた後、還元糖を添加し、混合して溶解させ、次いで、他の成分を添加し、混合して溶解させる混合方法、水に、上記コラーゲンペプチドと還元糖とを添加し、混合して溶解させた後、他の成分を添加し、混合して溶解させる混合方法等が挙げられる。

本開示の飲料組成物に含まれる各成分を混合する際の温度は、特に限定されるものではなく、各成分が十分に溶解する温度であればよく、通常、20℃~70℃の範囲内に設定する。
飲料組成物のコク感をより向上させる観点からは、コラーゲンペプチドと還元糖とを混合する際の温度は、75℃~95℃であることが好ましく、80℃~95℃であることがより好ましく、85℃~95℃であることが更に好ましい。
コラーゲンペプチドと還元糖とを混合する際の温度を75℃以上に設定すると、コラーゲンペプチド中のアミノ基と、還元糖が有するケトン又はアルデヒドとの間でメイラード反応が進み易くなる。その結果、コラーゲンペプチドと還元糖とのメイラード反応物の生成が促進され、飲料組成物のコク感がより向上する。
コラーゲンペプチドと還元糖とを混合する際の温度を95℃以下に設定すると、メイラード反応が進行し過ぎず、メイラード反応に起因する苦味が生じ難い。
飲料組成物のコク感をより向上させる観点からは、コラーゲンペプチドと還元糖とを混合する際の温度は、75℃~95℃であることが好ましく、80℃~95℃であることがより好ましく、85℃~95℃であることが更に好ましい。
コラーゲンペプチドと還元糖とを混合する際の温度を75℃以上に設定すると、コラーゲンペプチド中のアミノ基と、還元糖が有するケトン又はアルデヒドとの間でメイラード反応が進み易くなる。その結果、コラーゲンペプチドと還元糖とのメイラード反応物の生成が促進され、飲料組成物のコク感がより向上する。
コラーゲンペプチドと還元糖とを混合する際の温度を95℃以下に設定すると、メイラード反応が進行し過ぎず、メイラード反応に起因する苦味が生じ難い。
本開示の飲料組成物の製造方法は、必要に応じて、上記混合工程以外の他の工程を含むことができる。他の工程としては、例えば、pH調整工程、粘度調整工程、濾過工程等を挙げることができる。pH調整工程、粘度調整工程、濾過工程等は、当業界で公知の方法を適用すればよい。
また、本開示の飲料組成物の製造方法は、本開示の飲料組成物を容器に封入して容器詰飲料とする工程、容器詰飲料を滅菌処理する工程等を含んでもよい。本開示の飲料組成物を封入する容器は、飲料用の容器として通常使用される容器であればよく、例えば、ガラス容器、アルミ缶、スチール缶、パウチ缶、ペットボトル等が挙げられる。
また、本開示の飲料組成物の製造方法は、本開示の飲料組成物を容器に封入して容器詰飲料とする工程、容器詰飲料を滅菌処理する工程等を含んでもよい。本開示の飲料組成物を封入する容器は、飲料用の容器として通常使用される容器であればよく、例えば、ガラス容器、アルミ缶、スチール缶、パウチ缶、ペットボトル等が挙げられる。
以下、本発明を実施例により更に具体的に説明するが、本発明はその主旨を越えない限り、以下の実施例に限定されるものではない。なお、特に断りのない限り、「部」は質量基準である。
[飲料組成物の調製]
〔実施例1〕
水10000mgに、再イオン交換処理した平均分子量2000の魚由来のコラーゲンペプチド10000mgを添加し、60℃で十分攪拌し溶解させた。コラーゲンペプチドの溶解後、得られた液の液温を85℃に上げ、温度を上げた液にフルクトース50mg及びマルトース50mgを添加し溶解させた。フルクトース及びマルトースの溶解後、得られた液の液温が40℃に下がるまで冷却した。冷却後の液に、オルニチン塩酸塩520mg、セラミド含有エキス0.2mg、クエン酸230mg、酒石酸350mg、フィチン酸180mg、リン酸100mg、エリスリトール1000mg、アセスルファムカリウム11.2mg、スクラロース10.8mg、及び香料135μLを添加し、十分に溶解させた後、得られた液にアスコルビン酸425mgを添加し溶解させた。アスコルビン酸の溶解後、得られた液に水を添加し、全体の容量を30mLに調整することで、実施例1の飲料組成物を得た。得られた実施例1の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
〔実施例1〕
水10000mgに、再イオン交換処理した平均分子量2000の魚由来のコラーゲンペプチド10000mgを添加し、60℃で十分攪拌し溶解させた。コラーゲンペプチドの溶解後、得られた液の液温を85℃に上げ、温度を上げた液にフルクトース50mg及びマルトース50mgを添加し溶解させた。フルクトース及びマルトースの溶解後、得られた液の液温が40℃に下がるまで冷却した。冷却後の液に、オルニチン塩酸塩520mg、セラミド含有エキス0.2mg、クエン酸230mg、酒石酸350mg、フィチン酸180mg、リン酸100mg、エリスリトール1000mg、アセスルファムカリウム11.2mg、スクラロース10.8mg、及び香料135μLを添加し、十分に溶解させた後、得られた液にアスコルビン酸425mgを添加し溶解させた。アスコルビン酸の溶解後、得られた液に水を添加し、全体の容量を30mLに調整することで、実施例1の飲料組成物を得た。得られた実施例1の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
〔実施例2〕
実施例1において、コラーゲンペプチドの溶解後、得られた液の液温を85℃に上げ、温度を上げた液にフルクトース50mgを添加し溶解させたこと以外は、実施例1と同様にして、実施例2の飲料組成物を得た。得られた実施例2の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
実施例1において、コラーゲンペプチドの溶解後、得られた液の液温を85℃に上げ、温度を上げた液にフルクトース50mgを添加し溶解させたこと以外は、実施例1と同様にして、実施例2の飲料組成物を得た。得られた実施例2の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
〔実施例3〕
水10000mgに、再イオン交換処理した平均分子量2000の魚由来のコラーゲンペプチド10000mgを添加し、60℃で十分攪拌し溶解させた後、得られた液にフルクトース100mgを添加し溶解させた。フルクトースの溶解後、得られた液に、オルニチン塩酸塩520mg、セラミド含有エキス0.2mg、クエン酸230mg、酒石酸350mg、フィチン酸180mg、リン酸100mg、エリスリトール1000mg、アセスルファムカリウム11.2mg、スクラロース10.8mg、及び香料135μLを添加し、十分に溶解させた後、得られた液にアスコルビン酸425mgを添加し溶解させた。アスコルビン酸の溶解後、得られた液に水を添加し、全体の容量を30mLに調整することで、実施例3の飲料組成物を得た。得られた実施例3の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。

〔実施例4〕
実施例3において、水10000mgに、再イオン交換処理した平均分子量2000の魚由来のコラーゲンペプチド10000mgを添加し、60℃で十分攪拌し溶解させた後、得られた液にフルクトース300mgを添加し溶解させたこと以外は、実施例3と同様にして、実施例4の飲料組成物を得た。得られた実施例4の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
実施例3において、水10000mgに、再イオン交換処理した平均分子量2000の魚由来のコラーゲンペプチド10000mgを添加し、60℃で十分攪拌し溶解させた後、得られた液にフルクトース300mgを添加し溶解させたこと以外は、実施例3と同様にして、実施例4の飲料組成物を得た。得られた実施例4の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
〔実施例5〕
実施例1において、コラーゲンペプチドの溶解後、得られた液の液温を70℃に上げ、温度を上げた液にフルクトース50mg及びマルトース50mgを添加し溶解させたこと以外は、実施例1と同様にして、実施例5の飲料組成物を得た。得られた実施例5の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
実施例1において、コラーゲンペプチドの溶解後、得られた液の液温を70℃に上げ、温度を上げた液にフルクトース50mg及びマルトース50mgを添加し溶解させたこと以外は、実施例1と同様にして、実施例5の飲料組成物を得た。得られた実施例5の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
〔実施例6〕
実施例1において、コラーゲンペプチドの溶解後、得られた液の液温を85℃に上げ、温度を上げた液にマルトース50mgを添加し溶解させたこと以外は、実施例1と同様にして、実施例6の飲料組成物を得た。得られた実施例6の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
実施例1において、コラーゲンペプチドの溶解後、得られた液の液温を85℃に上げ、温度を上げた液にマルトース50mgを添加し溶解させたこと以外は、実施例1と同様にして、実施例6の飲料組成物を得た。得られた実施例6の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。
〔実施例7〕
実施例1において、コラーゲンペプチドの溶解後、得られた液の液温を85℃に上げ、温度を上げた液にグルコース50mgを添加し溶解させたこと以外は、実施例1と同様にして、実施例7の飲料組成物を得た。得られた実施例7の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。

〔比較例1〕
水10000mgに、平均分子量900の魚由来のコラーゲンペプチド10000mgを添加し、60℃で十分攪拌し溶解させた。コラーゲンペプチドの溶解後、得られた液に、オルニチン塩酸塩520mg、セラミド含有エキス0.2mg、クエン酸230mg、酒石酸350mg、フィチン酸180mg、リン酸100mg、エリスリトール1000mg、アセスルファムカリウム11.2mg、スクラロース10.8mg、及び香料135μLを添加し、十分に溶解させた後、得られた液にアスコルビン酸425mgを添加し溶解させた。アスコルビン酸の溶解後、得られた液に水を添加し、全体の容量を30mLに調整することで、比較例1の飲料組成物を得た。得られた比較例1の飲料組成物の25℃におけるpHを測定したところ、3.90~3.99の範囲内であった。

[カリウム濃度及びマグネシウム濃度の測定]
実施例1~実施例14及び比較例1~比較例9の各飲料組成物におけるカリウムの濃度については、原子吸光光度装置(バリアン テクノロジーズジャパンリミテッド社製)を用いて測定し、マグネシウムの濃度については、ICP発光分析装置(型番:SPS1200、セイコー電子社製)を用いて測定した。結果を表1及び表2に示す。
実施例1~実施例14及び比較例1~比較例9の各飲料組成物におけるカリウムの濃度については、原子吸光光度装置(バリアン テクノロジーズジャパンリミテッド社製)を用いて測定し、マグネシウムの濃度については、ICP発光分析装置(型番:SPS1200、セイコー電子社製)を用いて測定した。結果を表1及び表2に示す。
[評価]
実施例1~実施例14及び比較例1~比較例9の各飲料組成物について、コク感、とろみ、苦味、及びこれらのバランスの評価を行なった。
評価は、10名のパネラーが実施例及び比較例の各飲料組成物を試飲し、官能評価により行なった。評価は1~5の5段階評価とした。
実施例1~実施例14及び比較例1~比較例9の各飲料組成物について、コク感、とろみ、苦味、及びこれらのバランスの評価を行なった。
評価は、10名のパネラーが実施例及び比較例の各飲料組成物を試飲し、官能評価により行なった。評価は1~5の5段階評価とした。
コク感については、コラーゲンペプチドの含有に期待される効果感の観点から、採点を行なった。パネラーは、コラーゲンペプチドに由来するコクが深く、濃厚であると感じられる場合には「5」と採点し、コラーゲンペプチドに由来するコクに深みが無く、あっさりしていると感じられる場合には「1」と採点することとし、1~5の5段階のどのレベルに該当するか判断した。
とろみについては、コラーゲンペプチドの含有に期待される効果感及び飲み易さの観点から、採点を行なった。パネラーは、飲用感を損なわない範囲でとろみが強いと感じられる場合には「5」と採点し、とろみが弱すぎてコラーゲンペプチドの含有に期待される効果がほとんど感じられないか、或いは、とろみが強すぎて飲用感が悪いと感じられる場合には「1」と採点することとし、1~5の5段階のどのレベルに該当するか判断した。
とろみについては、コラーゲンペプチドの含有に期待される効果感及び飲み易さの観点から、採点を行なった。パネラーは、飲用感を損なわない範囲でとろみが強いと感じられる場合には「5」と採点し、とろみが弱すぎてコラーゲンペプチドの含有に期待される効果がほとんど感じられないか、或いは、とろみが強すぎて飲用感が悪いと感じられる場合には「1」と採点することとし、1~5の5段階のどのレベルに該当するか判断した。
苦味については、苦味の強弱に基づき、採点を行なった。パネラーは、苦味が非常に弱いと感じられるか、或いは、苦味が感じられない場合には「5」と採点し、苦味が非常に強いと感じられる場合には「1」と採点することとし、1~5の5段階のどのレベルに該当するか判断した。
バランスは、コク感、とろみ、甘味及び苦味のバランスに基づいて、採点を行なった。コク感、とろみ、甘味及び苦味のバランスが良いほど「5」に近い採点となり、コク感、とろみ、甘味及び苦味のいずれか1つの評価結果が突出している等、全体のバランスが悪いほど「1」に近い採点となる。なお、コク感、とろみ、甘味及び苦味のうち、苦味については、他と比較して、バランスの評価に与える比重が大きい。
評価結果を表1及び表2に示す。表1及び表2に示す評価結果は、採点結果を平均し、小数点以下を四捨五入したものである。
バランスは、コク感、とろみ、甘味及び苦味のバランスに基づいて、採点を行なった。コク感、とろみ、甘味及び苦味のバランスが良いほど「5」に近い採点となり、コク感、とろみ、甘味及び苦味のいずれか1つの評価結果が突出している等、全体のバランスが悪いほど「1」に近い採点となる。なお、コク感、とろみ、甘味及び苦味のうち、苦味については、他と比較して、バランスの評価に与える比重が大きい。
評価結果を表1及び表2に示す。表1及び表2に示す評価結果は、採点結果を平均し、小数点以下を四捨五入したものである。
表1及び表2中では、「平均分子量900の魚由来のコラーゲンペプチド」を「コラーゲンペプチドA」と表記し、「平均分子量2000の魚由来のコラーゲンペプチド」を「コラーゲンペプチドB」と表記し、「再イオン交換処理した平均分子量2000の魚由来のコラーゲンペプチド」を「コラーゲンペプチドC」と表記し、「平均分子量4000の魚由来のコラーゲンペプチド」を「コラーゲンペプチドD」と表記する。
表1及び表2において、「-」は、該当成分を配合していないことを意味する。

表1に示すように、実施例1~実施例14の各飲料組成物は、いずれも苦味が抑制され、適度なとろみを有し、コク感が高く、コラーゲンペプチドの含有に期待される効果感の高い飲料組成物であった。
これに対して、比較例1~比較例9の各飲料組成物は、表2に示すように、苦味が強いか、苦味が抑制されても、とろみが強く、飲用感に劣る飲料組成物であった。
これに対して、比較例1~比較例9の各飲料組成物は、表2に示すように、苦味が強いか、苦味が抑制されても、とろみが強く、飲用感に劣る飲料組成物であった。
還元糖としてフルクトースを含む実施例2の飲料組成物は、還元糖としてマルトースを含む実施例6の飲料組成物及びラクトースを含む実施例8の飲料組成物と比較して、高いコク感を示した。還元糖としてグルコースを含む実施例7の飲料組成物は、還元糖としてフルクトースを含む実施例2の飲料組成物と同等のコク感を示したが、苦味の抑制が実施例2の飲料組成物と比較して、わずかに低かった。
還元糖としてフルクトース及びマルトースを併用した実施例1の飲料組成物は、還元糖としてフルクトースのみを含む実施例2の飲料組成物及び還元糖としてマルトースのみを含む実施例6の飲料組成物と比較して、高いコク感を示した。
還元糖としてフルクトース及びマルトースを併用した実施例1の飲料組成物は、還元糖としてフルクトースのみを含む実施例2の飲料組成物及び還元糖としてマルトースのみを含む実施例6の飲料組成物と比較して、高いコク感を示した。
還元糖を含まない比較例1~比較例3の飲料組成物は、いずれも十分なコク感が得られなかった。還元糖を含まない比較例4の飲料組成物は、平均分子量が4000のコラーゲンペプチドを含むことで、コク感は得られたが、とろみが強くなりすぎて、全体のバランスが悪かった。
コラーゲンペプチドに対して還元糖の量が多すぎる比較例5及び比較例6の飲料組成物は、甘味が強かった。また、比較例5及び比較例6の飲料組成物では、コラーゲンペプチドと過剰量の還元糖とを85℃の温度条件で混合したので、メイラード反応の進み過ぎによるものと思われる苦味が強くなった。
コラーゲンペプチドに対して還元糖の量が多すぎる比較例5及び比較例6の飲料組成物は、甘味が強かった。また、比較例5及び比較例6の飲料組成物では、コラーゲンペプチドと過剰量の還元糖とを85℃の温度条件で混合したので、メイラード反応の進み過ぎによるものと思われる苦味が強くなった。
平均分子量が900のコラーゲンペプチドを含む比較例7の飲料組成物は、コク及びとろみが非常に低く、苦味が強いものであった。再イオン交換処理しなかった平均分子量が2000のコラーゲンペプチドを含む比較例8の飲料組成物は、カリウム及びマグネシウムの濃度が高く、苦味が強かった。
コラーゲンペプチドと還元糖とを混合する際の加熱温度が高いほど、飲料組成物のコク感が向上する傾向が認められた。但し、加熱温度が高くなるにつれて、メイラード反応の進行に起因すると思われる苦味が生じる傾向も認められた(実施例1、実施例5、及び実施例9~実施例11)。
コラーゲンペプチドと還元糖とを混合する際の加熱温度が高いほど、飲料組成物のコク感が向上する傾向が認められた。但し、加熱温度が高くなるにつれて、メイラード反応の進行に起因すると思われる苦味が生じる傾向も認められた(実施例1、実施例5、及び実施例9~実施例11)。

Claims (6)
- 平均分子量が1000~3000のコラーゲンペプチドと、還元糖とを含む飲料組成物であって、
飲料組成物中における、コラーゲンペプチドの濃度が2000mg/10mL~4000mg/10mLであり、カリウムの濃度が3mg/10mL以下であり、マグネシウムの濃度が0.1mg/10mL以下であり、且つ、還元糖の含有量がコラーゲンペプチド100質量部に対して0.5質量部~3質量部である飲料組成物。 - 還元糖が、フルクトース、マルトース、グルコース及びラクトースからなる群より選択される少なくとも1種である請求項1に記載の飲料組成物。
- 還元糖が、フルクトースを含む請求項1又は請求項2に記載の飲料組成物。
- 還元糖が、フルクトース及びマルトースである請求項1~請求項3のいずれか1項に記載の飲料組成物。
- コラーゲンペプチドと還元糖とのメイラード反応物を含む請求項1~請求項4のいずれか1項に記載の飲料組成物。
- コラーゲンペプチドと還元糖とを75℃~95℃の反応温度で反応させたメイラード反応物を含む請求項1~請求項5のいずれか1項に記載の飲料組成物。
