Description
本発明は、スムーズな水分補給等を目的にした飲料に関する。特に、K+、Ca2+、Mg2+、Cl-などの電解質に由来するぬめりや苦味、口腔粘膜の刺激感、クセのある後味が改善された飲料に関する。
運動や激しい活動によって失われた水分や電解質を補給するために、浸透圧や電解質濃度、糖濃度が調節された容器詰め電解質飲料(スポーツ飲料)が数多く市場に提供されている。
例えば、特許文献1は、特に激しい疲労をともなうスポーツまたは活動に参加する人がスポーツ・ドリンクとして飲用する非アルコール飲料として、ガラクトースと、ガラクトースを含む二糖類と、ガラクトースを含むオリゴ糖と、前記糖類の混合物とのうちのいずれか1つの糖類と、25~45mmol/Lのナトリウムと、任意にて2.5%(w/v)を越えない量のグルコースとを含む水溶液を有し、単糖類の濃度は0.5~5.0%(w/v)であり、溶液全体の重量モル濃度は150~240mOsm/kgであるスポーツ・ドリンクを提供する。
また、特許文献2は、経口補液およびスポーツ飲料として使用するにあたり、速やかな水分補給・電解質補給と、十分なエネルギー補給を同時に効率よく行える電解質飲料組成物として、糖質としてクラスターシクロデキストリンを40~100g/L含有し、電解質としてナトリウムイオン30~65mEq/L、カリウムイオン15~25mEq/L、塩化物イオン25~55mEq/L、マグネシウムイオン1~5mEq/Lを含有し、浸透圧が250mOsm/L以下である製剤を提供する。
さらに、特許文献3は、経口補液として使用するにあたり、速やかな水分補給・電解質補給を効率よく行える水分電解質補給飲料として、電解質成分として、ナトリウムイオン30~40mEq/L、カリウムイオン15~25mEq/L、塩化物イオン25~35mEq/L、カルシウムイオン3~7mEq/L、マグネシウムイオン2~5mEq/Lを含有し、pHが4.2~6.0、滴定酸度が30未満であり、その浸透圧が160~190mOsm/kgであることを特徴とする水分電解質補給飲料であり、さらに、スクロース、クエン酸イオン15~79mEq/L、リン酸イオン2~10mEq/L含有する水分電解質補給飲料を提供する。
そして、特許文献4は、必要な電解質及びエネルギー源を供給し、一般のスポーツ・ドリンクとほぼ同等もしくはこれよりも優れた感覚刺激性を有するとともに、水分保持力や自発的水分摂取性といった水分補給に関わる幾つかの機構に着目することにより優れた水分補給性能を発揮する水分補給飲料が求められるという要請に応えるものとして、また脱水症状を緩和し、水分補給を促す方法であって、水分保持や尿による水分損失といった機構に着目した方法が求められているという要請に応えるものとして、(a)該組成物の全質量に対して約4~約10質量%の炭水化物と、(b)少なくとも約30mEq/Lのナトリウムと、(c)少なくとも約10mEq/Lの塩化物と、(d)少なくとも約3mEq/Lのカリウムと、(e)水と、を含有し、溶液での該組成物の浸透圧は約250~350mOsm/Kgであることを特徴とする組成物を提供する。
一般的にこれら飲料にK+、Ca2+、Mg2+、Cl-を配合する場合は指定添加物として知られているものが用いられるが、これら指定添加物は高度に精製されたものである。
体内への水分補給のために様々な組成が検討される一方で、電解質の体内への移動(管腔内から細胞内へ)や胃・小腸における水分吸収の速度などについては依然として検討が続けられている。
そして従来のスポーツ飲料は、運動や激しい活動に伴う発汗により失われた水分や電解質を補給するとともに、生体機能を維持するためのエネルギー源を補給する目的から、塩分(電解質)や糖分が豊富に含まれており、飲用時に電解質によるぬめりや苦味を感じたり、口腔粘膜が刺激されたり、後味にクセがあるという問題があった。また、これらの摂取時の違和感は、比較的軽い運動や日常生活における発汗後の飲用に際しては異なって感じられるため、場合により、あらかじめ希釈しなければ快適に摂取できないという問題も生じていた。さらに、運動時における塩味の受容性について検討した例はあるが、日常生活的に飲用することを想定した配合の設計は行われてこなかった。
本発明は、水分や、発汗で失われる電解質の補給が速やかに行えるだけでなく、比較的軽い運動時や日常生活において快適に飲用できる飲料を提供することを目的とする。
本発明者は、従来のスポーツ・ドリンクに配合されている成分について種々の検討を行った結果、塩化ナトリウム以外の電解質を指定添加物として配合した場合に電解質によるぬめりや苦味、口腔粘膜への刺激、後味にクセが生じることを見出した。さらに鋭意検討の結果、塩化ナトリウム以外の電解質を指定添加物として配合するのではなく、食経験の長い身近な天然素材として配合することにより、日常生活において継続して繰り返し飲用するにあたり安心感や健康志向に合致するのみならず、電解質によるぬめりや苦味、口腔粘膜へ刺激味、クセのある後味等が低減されることを見出し、本発明を完成した。
さらに本発明者は電解質を天然素材として配合した飲料組成物において、さらに電解質を補う必要がある場合は、緩衝作用を有する指定添加物であれば好適に飲用できることも見出した。
また、天然素材のみによって電解質を配合する場合においてもCa2+,Mg2+の量を一定量未満に留めることにより電解質特有の味を抑制できることも見出した。
これに限定されるものではないが、本発明は以下を提供する。
(1) Na+濃度20~80mg/100ml、浸透圧100~400mOsm/kg、Na+:ぶどう糖(モル比)1:0.1~10、及びNa+:K+(モル比)1:0.05~1であり、実質的に緩衝作用を示さない指定添加物の電解質が添加されていない飲料組成物。
(2) 前記電解質が、塩化K、塩化Ca、塩化Mgまたはそれらの混合物である、(1)に記載の飲料組成物。
(3) Ca2+濃度が、2mg/100ml未満である、(1)または(2)に記載の飲料組成物。
(4) Mg2+濃度が、2mg/100ml未満である、(1)~(3)のいずれか1項に記載の飲料組成物。
(5) 以下の成分を含む、(1)~(4)のいずれか1項に記載の飲料組成物:
(1)0.01~30%の果汁;
(2)0.01~10%の天然甘味料;
(3)0.005~0.2%の食塩;
(4)0.005~1%の下記からなる群より選択される天然旨味・コク味源:
藻類エキス、節類エキス、きのこ類エキス、穀類エキス、茶エキス、野菜エキス、果実エキス、ハーブエキス、葉肉エキス、豆類エキス、種実類エキス、酵母エキス、樹液類、サトウキビ搾汁液(黒糖蜜)及び砂糖(三温糖、黒糖)。
(6) 容器詰めされ、殺菌されている、(1)~(5)のいずれか1項に記載の飲料組成物。
(7) 果汁に、柑橘類果実由来の果汁を含む、(5)に記載の飲料組成物。
(8) 指定添加物および/または既存添加物が無添加である、(1)~(7)のいずれか1項に記載の飲料組成物。
(9) Na+濃度20~80mg/100ml、浸透圧100~400mOsm/kg、Na+:ぶどう糖(モル比)1:0.1~10、及びNa+:K+(モル比)1:0.05~1である、飲料組成物の製造方法であって、以下の成分を配合する工程を含む、上記方法:
(1)0.01~30%の果汁;
(2)0.01~10%の天然甘味料;
(3)0.005~0.2%の食塩;
(4)0.005~1%の下記からなる群より選択される天然旨味・コク味源:

(13) 飲料組成物のおいしさを高める方法であって、下記の成分を配合して、Na+濃度20~80mg/100ml、浸透圧100~400 mOsm/kg、Na+:ぶどう糖(モル比)1:0.1~10、及びNa+:K+(モル比)1:0.05~1である飲料組成物を構成することを含む方法:
(1)0.01~30%の果汁;
(2)0.01~10%の天然甘味料;

(3) Ca2+濃度が、2mg/100ml未満である、(1)または(2)に記載の飲料組成物。
(4) Mg2+濃度が、2mg/100ml未満である、(1)~(3)のいずれか1項に記載の飲料組成物。
(5) 以下の成分を含む、(1)~(4)のいずれか1項に記載の飲料組成物:
(1)0.01~30%の果汁;

(13) 飲料組成物のおいしさを高める方法であって、下記の成分を配合して、Na+濃度20~80mg/100ml、浸透圧100~400 mOsm/kg、Na+:ぶどう糖(モル比)1:0.1~10、及びNa+:K+(モル比)1:0.05~1である飲料組成物を構成することを含む方法:
(1)0.01~30%の果汁;
(2)0.01~10%の天然甘味料;
(3)0.005~0.2%の食塩;
(4)0.005~1%の下記からなる群より選択される天然旨味・コク味源:

本発明の飲料組成物においては、天然素材が用いられているので、素材を天然のままに近い形で利用しており、素材本来のおいしさがある。
本願発明により、比較的軽い運動や日常生活における発汗時に水分や電解質を補給する際、電解質によるぬめりや苦味、口腔粘膜へ刺激味、クセのある後味等を感じないため快適に飲用できる。
[飲料組成物の組成]
本発明の飲料組成物は、Na+、K+、ぶどう糖を含み、水分補給上有効な浸透圧を有する。

本発明の飲料組成物においては、Na+濃度は、20~80mg/100ml、好ましくは25~60mg/100ml、より好ましくは30~50mg/100mlである。Na+濃度がこれより低い場合は、発汗で失われる水分及び電解質を補給するためには不十分であり、また、これより高い場合は、その味わいが日常的な飲用に適さない場合がある。
なお、本明細書において、飲料組成物の成分の濃度の値を提示するとき(例えば、mg/100ml、%等)は、特に記載した場合を除き、飲料の単位容積あたりの成分の重量に基づく値である。
本発明の飲料組成物においては、浸透圧は、等張圧程度に設計される。具体的には、本発明の飲料組成物の浸透圧は、100~400mOsm/kgであり、好ましくは200~380mOsm/kgであり、より好ましくは200~350mOsm/kgであり、より一層好ましくは220~350mOsm/kgであり、さらに好ましくは240~330mOsm/kgであり、さらに一層好ましくは270~320mOsm/kgであり、最も好ましくは270~310mOsm/kgである。浸透圧は胃内容排出速度や、小腸での水分の移動に影響を与えうる。正常な体液浸透圧は約280~290mOsm/kgであるが、水を効率良く消化管から吸収させるためには、体液と浸透圧が同等程度であることが望ましいことが知られている。経口補水塩(Oral Rehydration Salt:ORS)においては、浸透圧は200~310mOsm/kgであることが推奨されている(a new reduced osmolarity formulation. Geneve, Switzerland: World Health Organization, 2002)。また、医療において、細胞外液欠乏時やNa+欠乏時の輸液用電解質溶液のベースに使用される日本薬局方・処方せん医薬品である生理食塩水(0.9W/V%塩化Na水溶液)の浸透圧は約310mOsm/kgである。
本発明の飲料組成物においてぶどう糖というときは、特に記載した場合を除き、一糖類としてのぶどう糖以外に、体内での消化により二糖類、オリゴ糖及び多糖類から生成されうるぶどう糖も考慮している。すなわち、本発明において、飲料組成物におけるぶどう糖の量(ぶどう糖と他の成分との比等の、ぶどう糖の量に関するすべての値を含む。)を示すときは、特に記載した場合を除き、ぶどう糖自体と、体内での消化により二糖類、オリゴ糖及び多糖類から生成されうるぶどう糖とを合わせた、ぶどう糖全量(小腸において想定されるぶどう糖量、ということもできる。)として、示している。
本発明の飲料組成物においては、Na+とぶどう糖との比は、Na+の吸収経路、及びNa+の吸収に適するように設計される。具体的には、本発明の飲料組成物のNa+:ぶどう糖(モル比)は、1:0.1~10であり、好ましくは1:0.3~3であり、より好ましくは1:0.5~1.5である。Na+とぶどう糖との比は、小腸でのNa+の吸収の速さ(小腸での水分の吸収の速さにほぼ匹敵する。)に影響を与えうる。小腸では、Na+はぶどう糖と共に、Na+とぶどう糖との共輸送系を介して細胞内に吸収される。Na+の腸からの吸収と共に、水分も腸から吸収される。したがって、飲料にはぶどう糖が含まれていた方が、Na+及び水分の吸収が速くなる。ぶどう糖とNa+は、1:1の比率である場合にもっとも吸収されやすく、WHOとunicefが推奨するORSにおいてはこの比は1:1に設計されている。
なお、本明細書において、飲料組成物の成分の比の値を提示するときは、特に記載した場合を除き、モル数に基づく比である。
本発明の飲料組成物においては、日常の発汗で失われる電解質の補給に適しているように、Na+とK+との比が構成されている。具体的には、本発明の飲料組成物のNa+:K+(モル比)は、1:0.05~1であり、好ましくは1:0.05~0.5であり、より好ましくは1:0.1~0.25であり、より一層好ましくは1:0.15~0.2である。一般に、発汗速度が速いと、汗腺でのNa+の再吸収が汗の分泌に追い付かず、Na+の排出量が多くなる。一方、日常的な発汗では、排出Na+に対する排出K+の比率が高くなる。Na+:K+(モル比)は、典型的には、運動時の汗においては、1:0.09~0.14、日常的な汗においては、1:0.17である。
本発明の飲料組成物の特徴の一つは、上述の飲料組成物に関する電解質の成分設計を、食品衛生法第10条に基づき、厚生労働大臣が定めたもので、食品衛生法施行規則別表1に収載されている「指定添加物」を使用せずに達成していることである。次に説明するように、本発明の飲料組成物においては、おいしさを高めること、特に、電解質に由来するぬめり、苦味、口腔内刺激感、及び後味の悪さを改善することができる。
[天然素材]
本発明の飲料組成物は、電解質供給源として、及び/又はぶどう糖の供給源として、さらに浸透圧を調節するために、0.01~30%、好ましくは0.01~20%、より好ましくは0.01~10%の果汁を含む。本発明に用いることのできる果汁は、下記からなる群より選択される果物から得ることができる。
本発明の飲料組成物は、電解質供給源として、及び/又はぶどう糖の供給源として、さらに浸透圧を調節するために、0.01~30%、好ましくは0.01~20%、より好ましくは0.01~10%の果汁を含む。本発明に用いることのできる果汁は、下記からなる群より選択される果物から得ることができる。

本発明の飲料組成物においては、果汁は一種類のみ用いてもよく、また複数種類を用いてもよい。また、一般的に果汁に使用される果実であれば、上記のものに限定されない。
本発明の飲料においては、すっきりさ、飲みやすさ、後味のよさに加えて、Na+やK+の呈味との相性のよい果実由来の果汁をとりわけ好適に用いることができる。このような観点からは、本発明の飲料組成物には、柑橘類、特に、グレープフルーツ(ホワイト種、ルビー種)、レモン、ライム、オレンジ類(ネーブルオレンジ、バレンシアオレンジ)、なつみかん、甘夏、はっさく、ひゅうがなつ、シイクワシャー、すだち、ゆず、かぼす)を用いることが好ましい。
本発明の飲料組成物は、甘味を付与するために、及び/又はぶどう糖の供給源として、さらに浸透圧を調節するために、0.01~10%、好ましくは0.1~10%、より好ましくは1~10%の天然甘味料を含む。本発明の飲料組成物には、下記からなる群より選択されるいずれかを用いることができる。
天然甘味料:果糖、ぶどう糖、麦芽糖、ショ糖、高果糖液糖、果糖ぶどう糖液糖、ぶどう糖果糖液糖、糖アルコール、オリゴ糖、はちみつ、サトウキビ搾汁液(黒糖蜜)、砂糖(白糖、三温糖、黒糖、和三盆、等)、メープルシロップ、モラセス(糖蜜)、水飴、ステビア末、ステビア抽出物、羅漢果末、羅漢果抽出物、甘草末、甘草抽出物、ソーマトコッカスダニエリ種子末、ソーマトコッカスダニエリ種子抽出物。
本発明の飲料組成物においては、天然甘味料は一種類のみ用いてもよく、また複数種類を用いてもよい。また、一般的に使用される天然甘味料であれば、上記のものに限定されない。なお、甘味の調整のために天然甘味料の一部をスクラロース、アセスルファムK、ネオテーム、アスパルテーム、サッカリンなどの人工甘味料で置き換えてよい。
本発明の飲料組成物においては、特にぶどう糖を供給し、又は質のよい甘味を付与しつつ浸透圧を調節するとの観点からは、果糖、ぶどう糖、麦芽糖、ショ糖、はちみつを好適に用いることができ、ぶどう糖を供給し、電解質のクセを軽減する作用が強いとの観点からは、サトウキビ搾汁液(黒糖蜜)、砂糖(好ましくは、三温糖、黒糖)、メープルシロップを好適に用いることができる。電解質の違和感をマスキングするとの観点からは、サトウキビ搾汁液(黒糖蜜)、砂糖(好ましくは、三温糖、黒糖)、メープルシロップを用いることが好ましい。天然甘味料のみの使用により、電解質の違和感がマスキングされるので、飲料として使用する甘味料の総量を抑えることができる。その結果、甘味が適度な、すっきりさ、飲みやすさ、自然な味わいを有する飲料組成物が調製できる。本発明の飲料組成物においては、果糖、ぶどう糖、麦芽糖、ショ糖、はちみつ、砂糖(好ましくは、白糖、三温糖、黒糖)、サトウキビ搾汁液(黒糖蜜)及びメープルシロップを用いることが特に好ましい。
本発明の飲料組成物においては、旨味・コクを付与し、及び/又は電解質供給源として、天然旨味・コク味源を、0.005~1%、好ましくは0.01~0.2%、より好ましくは0.02~0.1%含む。本発明の飲料組成物には、天然旨味・コク味源として、下記からなる群より選択されるいずれかを用いることができる。
天然旨味・コク味源:藻類(褐藻類、紅藻類、緑藻類、具体的にはコンブ、あおのり、いわのり、わかめ、てんぐさ、ひじきまつも、もずく、ダルス、イボノリ、ヒバマタ、ツノマタ、トサカモドキ、ダービリア等)エキス、節類(かつお節、さば節、むろあじ節、ウルメ節、サンマ節、マグロ節)エキス、きのこ類(しいたけ、えのきだけ、きくらげ、しめじ、たもぎたけ、なめこ、ひらたけ、えりんぎ、まいたけ、マッシュルーム、まつたけ等)エキス、穀類(米(玄米、胚芽精米、三分づき米、五分づき米、七分づき米、白米を含む。)、とうもろこし、麦類、ハトムギ、きび、あわ、ひえ、ソバ等)エキス、茶(不発酵茶、半発酵茶、発酵茶等を含む。)エキス、野菜エキス、果実エキス、ハーブエキス、葉肉エキス、豆類エキス、種実類エキス、酵母エキス、樹液類、サトウキビ搾汁液(黒糖蜜)、砂糖(三温糖、黒糖)。
本発明の飲料組成物においては、天然旨味・コク味源は、一種のみ用いてもよく、また複数種を用いてもよい。また、一般的に使用される天然旨味・コク味源であれば、上記のものに限定されない。
本発明の飲料組成物においては、特に質のよい旨味を付与しつつ、Na+、K+、Ca2+、Mg2+、Cl-等の電解質源となりうるとの観点からは、藻類エキス、穀類エキス、野菜エキス、種実類エキスを好適に用いることができる。
本発明で藻類エキスというときは、特に記載した場合を除き、藻類を必要に応じ、裁断、乾燥、粉砕し、極性溶媒(例えば水、エタノール又はこれらの混合物)で抽出して得られる抽出物をいう。例えば、成分としてNa+を0.5~2.0%、K+を1.0~3.5%、Ca2+を0.01~0.03%、Mg2+を0.08%以下、Cl-を約3%含むものが好適に用いられる。
本発明で野菜エキスというときは、特に記載した場合を除き、野菜を必要に応じ、粉砕、乾燥、粉砕し、極性溶媒(例えば水、エタノール又はこれらの混合物)で抽出して得られる抽出物をいう。
また本発明の飲料組成物においては、天然甘味料として好適であるばかりでなく、Na+、K+、Ca2+、Mg2+等の電解質源となりうる上、質のよいコク味を呈するという観点からサトウキビ搾汁液(黒糖蜜)、砂糖(黒糖、三温糖)、メープルシロップを好適に用いることができる。
本発明の飲料組成物において、天然旨味・コク味源として、サトウキビ搾汁液(黒糖蜜)、砂糖(三温糖、黒糖)、メープルシロップ等のような天然甘味料としても用いることができる糖質を用いる場合、その糖質も含めた天然甘味料の総量として、上述した天然甘味料としての範囲(すなわち0.01~10%、好ましくは0.1~10%、より好ましくは1~10%)を満たすようにするとよい。
本発明の飲料組成物の特に好ましい態様においては、天然旨味・コク味源として、コンブエキス、わかめエキス、ゴマエキス、トマトエキス、キダチアロエエキス、サトウキビ搾汁液(黒糖蜜)、砂糖(黒糖、三温糖)、メープルシロップを用いることができる。
本発明の飲料組成物関してさらに鋭意検討した結果、本発明者はCa2+、Mg2+に関しては、天然に由来する素材から持ち込まれた場合でも、これらが飲料組成物中に大量に含まれると電解質特有の味を感じてしまうことを見出した。そのため、本発明の飲料組成物においては、含まれるCa2+、Mg2+の量を一定量未満に留めることが好ましく、Ca2+の含有量は、2mg/100ml未満が好ましく、1.5mg/100ml未満がより好ましく、1.2mg/100ml未満がさらに好ましく、Mg2+の含有量は、2mg/100ml未満が好ましく、1.5mg/100ml未満がより好ましく、1.2mg/100ml未満であることがさらに望ましい。
本発明の飲料組成物には、天然香料を用いてもよい。本発明者の検討によると、天然香料を使用した飲料は、合成香料(天然香料をガスクロマトグラフにより分析した結果に基づき、種々の合成香料を用いて再構築したもの)を用いた点でのみ異なる飲料と比較して、継続的に飲用した場合に嗜好性が増すことが分かっている。
本発明の飲料組成物へは、天然香料のうち、水への分散性が悪く、劣化しやすい炭化水素テルペン類を除くための再蒸留精製処理を経ていないもの(未蒸留品)を使用していることが特に好ましい。再蒸留等の精製操作により、一部の香気成分や難揮発性成分が除かれてしまうことがあるからである。未蒸留品である天然香料の使用は、天然素材のそのままの香り(成分及び比率)が飲料組成物において活かされ、飲料組成物の嗜好度の高さに資すると考えられる。
本発明の飲料組成物において用いられる天然香料には、例えば、香料起原物質から得られた香気成分や、水蒸気蒸留することにより調整した香気成分を利用することができる。香気起源物質の例として、果物、具体的には、レモン、グレープフルーツ、ライム、ネーブルオレンジ、バレンシアオレンジ、うんしゅうみかん、タンゴール、なつみかん、甘夏、はっさく、ひゅうがなつ、シイクワシャー、すだち、ゆず、かぼす、だいだい、いよかん、ぽんかん、きんかん、さんぼうかん、オロブランコ、ぶんたん、あんず(別名アプリコット)、さくらんぼ、うめ、すもも類(にほんすもも、プルーン)、もも類(もも、ネクタリン、黄桃)、ふどう(マスカット、リースリング、デラウエア、巨峰、ピオーネ)、いちご、ブラックベリー、ブルーベリー、ラズベリー、グズベリー(別名西洋すぐり)、クランベリー、ざくろ、りんご、なし類(にほんなし、中国なし、西洋なし)、かりん、キウイフルーツ、パインアップル、パッションフルーツ、アセロラ、ライチー、メロン、すいか、あけび、アテモヤ、アボカド、いちじく、オリーブ、かき、キワノ、グァバ、ぐみ、ココナッツ、ごれんし(別名スターフルーツ)、タンゼロ、チェリモヤ、ドリアン、なつめ、なつめやし、ハスカップ、パパイヤ、ピタヤ、びわ、りゅうがん、ホワイトサポテ、まくわうり、マルメロ、マンゴー、マンゴスチン、やまもも、キダチアロエ、アロエベラを挙げることができる。果皮のみを香料起源物質としてもよい。香料起源物質の他の例として、コーヒー、ココア、カカオ、バニラ、茶(不発酵茶、半発酵茶、発酵茶などを含む)、ハーブ類を挙げることができる。
本発明の飲料組成物には、実質的に緩衝作用を示さない指定添加物の電解質は添加されない。本発明の飲料組成物に添加されない、実質的に緩衝作用を示さない指定添加物の例として、塩化K、塩化Ca、塩化Mgおよびそれらの混合物などが挙げられる。
本発明の飲料組成物には、緩衝作用を示す指定添加物の電解質を使用することができる。ここでいう緩衝作用を示す指定添加物とは、水に溶解した際のpHが中性から弱アルカリ性を示す指定添加物を指す。本発明の飲料組成物に添加してもよい、緩衝作用を示す指定添加物の例として、アスコルビン酸Na、アスパラギン酸Na、クエン酸Na、グルコン酸Na、グルタミン酸Na、コハク酸Na、酢酸Na、酒石酸Na、水酸化Na、炭酸水素Na、乳酸Na、フマル酸Na、リンゴ酸Na、リン酸Na、クエン酸K、グルコン酸K、リンゴ酸K、酒石酸K、グルタミン酸K、アスコルビン酸K、コハク酸K、フマル酸K、リン酸K、硫酸K、クエン酸Ca、グルコン酸Ca、コハク酸Ca、酢酸Ca、酒石酸Ca、乳酸Ca、リンゴ酸Ca、リン酸Ca、乳酸Ca、クエン酸Mg、グルコン酸Mg、グルタミン酸Mg、コハク酸Mg、酢酸Mg、酸化Mg、酒石酸Mg、炭酸Mg、硫酸Mg、リン酸Mgなどが挙げられる。
また、本発明の飲料組成物には、既存添加物を添加してもよいが、添加しないことが好ましい。既存添加物とは、食品衛生法に規定されている食品添加物名簿記載のものを意味し、その具体例として、L-アスパラギン、L-アスパラギン酸、L-アラニン、L-アラビノース、L-アルギニン、アルギン酸、イタコン酸、イノシトール、γ-オリザノール、カテキン、カフェイン、カラメル、D-キシロース、クエルセチン、L-グルタミン、シアノコバラミン、シクロデキストリン、L-セリン、タウリン、テオブロミン、デキストラン、トコフェロール、トレハロース、ナリンジン、L-ヒスチジン、フィチン酸、フィチン、フェルラ酸、L-プロリン、ペクチン、ヘスペリジン、没食子酸、L-ラムノース、L-リシン、D-リボース、L-ロイシンなどが挙げられる。
[飲料組成物の製造方法等]
本発明の飲料組成物の製造は、従来技術の方法を用いて製造することができる。当業者であれば、配合方法、必要に応じ殺菌方法、容器詰めのための条件を、適宜設計することができる。

本発明の飲料組成物は、殺菌された容器詰め飲料製品とすることができ、この場合、飲料組成物を容器に充填した後に加熱殺菌(レトルト殺菌等)を行うか、又は飲料組成物を殺菌して容器に充填することにより、製造することができる。例えば、缶飲料とする場合には、上記飲料組成物を缶に所定量充填し、レトルト殺菌(例えば、1.2mmHg、121℃、7分)を行うことができ、ペットボトルや紙パック、瓶飲料、缶飲料、パウチ飲料とする場合には、例えば90~130℃で1~数十秒保持するFP又はUHT殺菌を行い、所定量を充填する。本発明の飲料組成物を容器詰め飲料とする場合は、ホットパック充填法又は無菌充填法のいずれも用いることができる。
なお、容器としては、ペットボトルや紙パック、ガラス瓶、アルミ缶、スチール缶、アルミパウチ、紙容器など、通常、飲料組成物に用いられる容器であればいずれも用いることができる。
[飲料組成物の作用・効果、用途]
本発明の飲料組成物は比較的軽い運動や日常生活における発汗時に水分や電解質を補給する際に、好適に飲用することができる。より詳細には、本発明の飲料組成物は、(1)安静時、(2)低代謝率(3.5km/h未満の速度での歩行、又はそれと同等の負荷)時、(3)中程度代謝率(3.5~5.5km/hの速度での歩行、又はそれと同等の負荷)時、(4)高代謝率(5.5~7km/hの速度での歩行、又はそれと同等の負荷)時、(5)極高代謝率(7km/h以上の速度で歩行又は走る、又はそれと同等の負荷)時の、前若しくは後、又は途中に、水分や電解質を補給するために飲用するのに適するが、特に、(1)~(3)に該当するときの水分や電解質を補給するために飲用するのに適している。

本発明の飲料組成物を摂取させる対象は、特に限定されないが、好ましくはヒトであり、より好ましくは健常なヒトである。
これまで述べてきたように、Na+濃度20~80mg/100ml、浸透圧100~400mOsm/kg、Na+:ぶどう糖(モル比)1:0.1~10、及びNa+:K+(モル比)1:0.05~1である、飲料組成物において、指定添加物を使用せずに、(1) 0.01~30%の果汁;(2) 0.01~10%の天然甘味料;(3) 0.005~0.2%の食塩;(4) 0.005~1%の特定の天然旨味・コク味源を用いることは、飲料組成物において、おいしさを高めることができる。本明細書で飲料に関し、おいしさの向上というときは、特に記載した場合を除き、電解質に由来するぬめりや苦味の改善、電解質に由来する口腔粘膜への刺激感の改善、及び電解質に由来する後味の悪さの改善を含む。
本発明により製造された飲料組成物は、天然素材を用いることで、指定添加物を用いた飲料に比べて、電解質に由来するぬめり、苦味、後味の悪さ、口腔粘膜への刺激感、後味の悪さが改善されている。対象となる飲料についてのおいしさの評価は、当業者であれば適宜行うことができる。例えば、訓練されたパネラー1名以上か、又は一般人(好ましくは、従来のスポーツ飲料を継続して摂取している人)に、必要であれば比較対照として市販のスポーツ飲料を準備し、実際に喫飲させ、スポーツ飲料に特有の項目(例えば、飲みやすさ、ゴクゴク飲める、すっきりさ、うまみ、自然な味わい、後味のキレ、まろやかさ、香りのよさ、果実感、味の濃さ、甘さ、酸っぱさ、塩っぽさ、後味、及びくせからなる群から選択されるいずれか一以上)について、7段階程度(感じる~どちらともいえない~感じない)で採点させることにより、評価することができる。より詳しい評価のための手法及び基準は、本明細書の実施例を参考にすることができる。
本発明の飲料はまた、天然素材を用いることで、従来のスポーツ・ドリンクに比べて、好ましさが向上している。本発明者の検討によると、上記のスポーツ・ドリンクに特有の項目のうち、特に「飲みやすさ」及び「ゴクゴク飲める」が、好ましさと相関があることが分かっている。対象となる飲料がスポーツ飲料として好ましいモノであるか否かは、例えば、訓練されたパネラー1名以上か、又は一般人(好ましくは、従来のスポーツ飲料を継続して摂取している人)に、必要であれば比較対照として市販のスポーツ飲料を準備し、実際に喫飲させ、「飲みやすさ」及び/又は「ゴクゴク飲める」について、7段階程度(感じる~どちらともいえない~感じない)で採点させることにより、評価することができる。より詳しい評価のための手法及び基準は、本明細書の実施例を参考にすることができる。
実験1:電解質として指定添加物を使用せずに調製した飲料組成物

飲料組成物の調製方法は、上記表に示した割合で各原材料を適宜配合したのち、95℃で30秒殺菌し、500mlのPETボトルに充填することにより実施した。調製された飲料組成物においては、Na+濃度:40mg/100ml、浸透圧:310mOsm/kg、Na+:ぶどう糖=1:1、Na+:K+=1:0.17であることを確認した。
また、市販のスポーツ飲料(Na+濃度49mg/ml、浸透圧370mOsm/kg、Na+:ぶどう糖=1:8.5、Na+:K+=1:0.24、原材料:砂糖、ぶどう糖果糖液糖、果汁、ぶどう糖、食塩、酸味料、塩化K、乳酸Ca、調味料(アミノ酸)、塩化Mg、香料、酸化防止剤(ビタミンC))を同時に以下の官能評価に供した。市販品には、実質的に緩衝作用を示さない指定添加物の電解質として塩化カリウムと塩化マグネシウムが添加されており、その他にも、指定添加物である乳酸カルシウムとビタミンCが添加されている。

実質的に緩衝作用を示さない指定添加物である電解質として塩化カリウムと塩化マグネシウムが添加されている市販品と比較して、試作品は、酸っぱさ、塩っぽさ、後味、くせが抑えられていることが分かった。
3.好ましさとの相関評価
表2で得られた結果をもとに、各評価項目と摂取した飲料の好ましさとの相関係数を算出した。具体的には各被験者が試作品及び市販のスポーツ飲料を摂取したときの好ましさを7段階(7:好ましい、4:どちらでもない、1:好ましくない)で評価してもらい、実施例1の各項目に関する評価点との相関関係を、CORREL関数を用いて算出した。相関係数が1に近いほど各項目は好ましさの要因となっていることが示される。
表2で得られた結果をもとに、各評価項目と摂取した飲料の好ましさとの相関係数を算出した。具体的には各被験者が試作品及び市販のスポーツ飲料を摂取したときの好ましさを7段階(7:好ましい、4:どちらでもない、1:好ましくない)で評価してもらい、実施例1の各項目に関する評価点との相関関係を、CORREL関数を用いて算出した。相関係数が1に近いほど各項目は好ましさの要因となっていることが示される。

表4に、緩衝作用を示す指定添加物を用いた飲料組成物の配合例を示す。実施例2-2では、実施例2-1と比較してグレープフルーツ果汁、及びコンブエキスの添加量を減らす一方、緩衝作用のある指定添加物としてクエン酸カリウムを添加し、グレープフルーツ果汁とコンブエキスに含まれるカリウム量の一部を置換する量添加した。比較例2-1では、クエン酸カリウムの代わりに塩化カリウムを使用した。調製された飲料組成物はいずれも、Na+濃度:40mg/100ml、浸透圧:310mOsm/kg、Na+:ぶどう糖=1:1、Na+:K+=1:0.17であることを確認した。

試作品3-1は、実施例1と同様にして調製した。試作品3-2は、さらに高硬度飲料水を配合して調製した。調製された飲料組成物においては、試作品3-1(Ca2+、Mg2+低濃度)はCa2+濃度:0.5mg/100ml、Mg2+濃度:0.5mg/100ml、試作品3-2(Ca2+、Mg2+高濃度)はCa2+濃度:1.2mg/100ml、Mg2+濃度:1.2mg/100mlであることを確認した。
上記の配合にしたがって得られた飲料について、電解質特有の味の観点から官能評価を行った。官能評価は訓練された5名のパネラーによって行い、5点法にて採点を行った。

- Na+濃度20~80mg/100ml、浸透圧100~400mOsm/kg、Na+:ぶどう糖(モル比)1:0.1~10、及びNa+:K+(モル比)1:0.05~1であり、実質的に緩衝作用を示さない指定添加物の電解質が添加されていない飲料組成物。
- 前記電解質が、塩化K、塩化Ca、塩化Mgまたはそれらの混合物である、請求項1に記載の飲料組成物。

- 以下の成分を含む、請求項1~4のいずれか1項に記載の飲料組成物:
(1)0.01~30%の果汁;
(2)0.01~10%の天然甘味料;
(3)0.005~0.2%の食塩;
(4)0.005~1%の下記からなる群より選択される天然旨味・コク味源;
藻類エキス、節類エキス、きのこ類エキス、穀類エキス、茶エキス、野菜エキス、果実エキス、ハーブエキス、葉肉エキス、豆類エキス、種実類エキス、酵母エキス、樹液類、サトウキビ搾汁液(黒糖蜜)及び砂糖(三温糖、黒糖)。 - 容器詰めされ、殺菌されている、請求項1~5のいずれか1項に記載の飲料組成物。
- 果汁に、柑橘類果実由来の果汁を含む、請求項5に記載の飲料組成物。
- 指定添加物および/または既存添加物が無添加である、請求項1~7のいずれか1項に記載の飲料組成物。
- Na+濃度20~80mg/100ml、浸透圧100~400mOsm/kg、Na+:ぶどう糖(モル比)1:0.1~10、及びNa+:K+(モル比)1:0.05~1である、飲料組成物の製造方法であって、
以下の成分を配合する工程を含む、上記方法:
(1)0.01~30%の果汁;
(2)0.01~10%の天然甘味料;
(3)0.005~0.2%の食塩;
(4)0.005~1%の下記からなる群より選択される天然旨味・コク味源;
藻類エキス、節類エキス、きのこ類エキス、穀類エキス、茶エキス、野菜エキス、果実エキス、ハーブエキス、葉肉エキス、豆類エキス、種実類エキス、酵母エキス、樹液類、サトウキビ搾汁液(黒糖蜜)及び砂糖(三温糖、黒糖)。 - 実質的に緩衝作用を示さない指定添加物の電解質を添加しない、請求項9に記載の方法。
- 請求項1~8のいずれか1項に記載された飲料組成物を経口投与する工程を含む、人に水分及び/又は電解質を補給する方法。
- 飲料組成物を100ml~1000ml/day投与する、請求項11に記載の方法。
- 飲料組成物のおいしさを高める方法であって、
下記の成分を配合して、Na+濃度20~80mg/100ml、浸透圧100~400 mOsm/kg、Na+:ぶどう糖(モル比)1:0.1~10、及びNa+:K+(モル比)1:0.05~1である飲料組成物を構成することを含む方法:
(1)0.01~30%の果汁;
(2)0.01~10%の天然甘味料;
(3)0.005~0.2%の食塩;
(4)0.005~1%の下記からなる群より選択される天然旨味・コク味源;
藻類エキス、節類エキス、きのこ類エキス、穀類エキス、茶エキス、野菜エキス、果実エキス、ハーブエキス、葉肉エキス、豆類エキス、種実類エキス、酵母エキス、樹液類、サトウキビ搾汁液(黒糖蜜)及び砂糖(三温糖、黒糖)。 - 実質的に緩衝作用を示さない指定添加物の電解質を添加しない、請求項13に記載の方法。
