  • Application of ferric sodium EDTA showed several advantages. When ferric sodium EDTA was used for fortification of a bouillon cube, the colouring effect in the food product resulting from the bouillon cube was not observed or at least very limited compared to a control food product resulting from a bouillon cube without any added iron compound. This is the more surprising, as it is known in the field of food fortification that ferric sodium EDTA may provide an off colour to foods. Additionally, when ferric sodium EDTA was used, the taste was best preserved compared to the other fortificants and did not diminish by the fortification, moreover, the taste appeared to be most stable over time.

  • the 4g bouillon mixture was dissolved in 200 ml water in a beaker and mixed to provide a respective bouillon solution. This resulted in a concentration of 0.016 wt% of the iron compound.
  • a bouillon mixture which was coloured with caramel and as a second control a bouillon mixture which did contain neither any iron compound nor caramel was used.
  • the bouillon mixture samples were presented in randomly coded beakers to a test panel of 6 persons. Dissolved bouillon mixtures were assessed for colour. Results are indicated in table 3.
  • the bouillon mixtures comprising iron compounds were evaluated for organoleptic properties. Samples were tasted every 2 weeks during 24 weeks. Results have been indicated in table 3, on a scale of 1-5. Ferric sodium EDTA proved to be the most organoleptically stable compound, and tasted comparable to the control sample without any iron compound, during the complete 24 week test period. No diminishing of flavour was observed and a surprisingly nice beef flavour was present. No flavour maskants were added to the samples.
  • Ferric ammonium citrate brown and ferric pyrophosphate showed some diminishing of taste, which became milder as the 24 week trial progressed.
  • the comparison sample fortified with ferrous fumarate ca. 5 micron had a strong affected taste upon formulation which became milder as the 24 week trial progressed and was considered unacceptable.
  • the taste of the non-fortified controls was not, as expected, diminished during the 24 week trial.

Abstract

L'invention porte sur un bouillon cube comportant, en fonction du poids du bouillon cube : 30 à 70 % en poids de NaCl, 10 à 45 % en poids de glutamate de sodium, comportant en outre au moins un composé de fer, du groupe comprenant l'acide éthylènediaminetétracétique (EDTA) de sodium ferrique, le fer réduit, le lactate ferreux, le citrate ferrique, le pyrophosphate ferrique, le monohydrate de sulfate ferreux, le citrate d'ammonium ferrique brun, en une quantité telle que le bouillon cube comporte une quantité de Fe2+ et/ou de Fe3+, considérée ensemble, d'au moins 0,01 % en poids et de moins de 2 % en poids, de préférence d'au moins 0,025 % en poids et de moins de 1,6 % en poids, mieux encore, d'au moins 0,05 % en poids et de moins de 1 % en poids, en fonction du poids du bouillon cube.
