Definitions

  • composition F sorbitan monostearate was dispersed in water (10% wt/v) after which dry calcium stearate was added. This mixture was subsequently heated to 80°C and stirred to give the emulsion. After cooling the emulsion was added to compressed yeast, mixed and dried. The gassing power of the dry yeast compositions thus obtained was measured by tests a and b (see Materials and Methods).
