Abstract
يعالج بياض البيض بشكل خارجي ، وبعد مجموعة طبيعية من ذلك ، بجزء ناقل للإشارة واحد على الأقل بارزة يوجد بشكل طبيعي في خلية البيضة، على سبيل المثال ببروكسيد الهيدروجين و/أو كلوريد الكالسيوم . وبهذه الطريقة ، يتم تنشيط ovoperoxidase ، مسببا تشكيل وتصلب غشاء البيضة خارج خلية . إن معالجة بياض البيض من قبل جزئ والذي يوجد بشكل طبيعي في خلية البيض ما لم يكن مشكل في ابيض الخلية الطبيعية لكي تمنع polyspermia تسمح بإمكانية معالجة غير ضارة تماما والمعترف بها عامة كأمان لتصلب بياض البيض. يمكن أن تعدل درجة التصلب بمدة المعالجة . البيض المتصلب، التصلب الاصطناعي الذي منه يمكن الفحص من قبل تركيب معين تحت مجهر إلكترون، يمكن أن يحفظ ويخزن بشكل أفضل لان الطريقة لها أيضا عمل مبيد الجراثيم ، ومنع بلورة التييروسين.
