SE REFIERE A UN PROCESO PARA PREPARAR UN HIDROLIZADO DE PROTEINA DE SUERO MEJORADO QUE CONTIENE PEPTIDOS BIOACTIVOS QUE COMPRENDEN UN AISLADO DE PROTEINA DE SUERO CON UNA O MAS ENZIMAS CARACTERIZADO: i) LA ENZIMA ES UNA PROTEASA LABIL AL CALOR; ii) SE CONDUCE LA HIDROLISIS A UNA TEMPERATURA ENTRE 30°C Y 65°C A UN pH DE 3.5 A 9.0 CUANDO ES UNA PROTEASA NEUTRA, A UN pH DE 2.5 A 6.0 CUANDO LA ENZIMA ES UNA PROTEASA ACIDA Y A UN pH 5.0 A 10.0 CUANDO LA ENZIMA ES UNA PROTEASA ALCALINA; iii) LA HIDROLISIS SE TERMINA CUANDO SE ALCANZA UN GRADO DE HIDROLISI Y NO MAYOR DE UN 10%; iv) SE TERMINA LA HIDROLISIS AL DESACTIVAR UNA O MAS ENZIMAS; v) LAS CONDICIONES PARA EL PASO iv) SON SUFICIENTEMENTE LIGERAS PARA EVITAR MANIFIESTA DESNATURALIZACION DE PEPTIDOS O PROTEINAS RESIDUALES EN DICHO HIDROLIZADO. LA ENZIMA SE SELECCIONA DE PROTEASA P6, PROTEASA A, PROTEASA M, PEPTIDASA, NEUTRASE, VALIDASE, AFP 2000.
