Abstract
Det beskrives en fremgangsmåte for fremstilling av et proteinhydrolysat ut fra proteinholdige dyreprodukter, hvor dyreproduktene hydrolyseres ved anvendelse av endopeptidaser og exopeptidaser. Ved fremgangsmåten anvendes røkte, proteinholdige dyreprodukter som proteinholdige dyreprodukter. Det ble funnet at ved å anvende røkte, proteinholdige dyreprodukter kan det produseres et proteinhydrolysat som ikke har den bitre aroma som oppstår under den vanlige hydrolyse av proteinholdige dyreprodukter. Fortrinnsvis anvendes røkt fleskesvor for hydrolysen.
