LA INVENCION PRESENTA UN PROCESO PARA PREPARAR UN HIDROLIZADO DE PROTEINAS DE PRODUCTOS ANIMALES QUE CONTIENEN PROTEINAS, EN EL QUE LOS PRODUCTOS ANIMALES SE HIDROLIZAN CON ENDOPEPTIDASAS Y EXOPEPTIDASAS. EL PROCESO SE CARACTERIZA POR EL EMPLEO DE PRODUCTOS ANIMALES CON PROTEINAS Y AHUMADOS COMO PRODUCTOS ANIMALES CON PROTEINAS. SE DESCUBRIO QUE UTILIZANDO PRODUCTOS ANIMALES CON PROTEINAS AHUMADOS PUEDE PRODUCIRSE UN HIDROLIZADO DE PROTEINAS SIN EL SABOR AMARGO QUE SE FORMA DURANTE LA HIDROLISIS HABITUAL DE PRODUCTOS ANIMALES CON PROTEINAS.
