Abstract
Den foreliggende oppfinnelsen tilveiebringer en prosess for fremstilling av et probiotisk havrebasert flytende ernæringsprodukt, der prosessen omfatter: A) et første fermenteringstrinn som omfatter fermentering av havremateriale; B) mekanisk behandling av en eller flere ikke-fermenterte havrebaserte substanser i nærvær av vann for å danne en vandig suspensjon som inneholder 1,3-1,4 ß D-glukan i oppløst og/eller suspendert tilstand, hvori den gjennomsnittlige molekylvekten til 1,3-1,4 ß D-glukan i suspensjonen er på minst 1 500 000 Dalton, og å kombinere produktene fra det første fermenteringstrinnet med det en eller flere havrebaserte substansene og vann, før, i løpet av eller etter danningen av den vandige suspensjonen; og C) et andre fermenteringstrinn som omfatter fermentering av den vandige suspensjonen i nærvær av Lactobacteria og/eller Bifidobacteria, til mengden Lactobacteria er på minst 10E7 CFU/g og/eller mengden Bifidobacteria er på minst 10E7 CFU/g. Den foreliggende oppfinnelsen tilveiebringer også produkter som kan oppnås ved denne prosessen.
