Abstract

Egg dishes are made with known ingredients, using a powder made from fresh eggs and at least one ingredient, which is subsequently introduced into water and heated to prepare the dish. The powder can be kept for long periods and is easy to store and transport. The powder can be used to make scrambled egg, omelette, fried egg dishes, etc. The egg powder is made e.g. by spray drying fresh egg contg. an additive (I) at temps. below the coagulation temp. of the egg, e.g. at 65 degrees C. (I) may be e.g. starch, flour, cooking fat, antioxidants, skimmed milk, etc. In an example a mixt. of fresh egg and flour was spray dried at 65 degrees C to give a powder contg. 98% egg and 2% flour. The egg dish was made up by mixing with seasoned boiling water in a ratio 1:3.
